So for these double chocolate chip cookies, well be using the pan-banging method, but slightly modified.
Essentially, once the cookies have fully baked, remove the pan from the oven and tap the pan onto the countertop a few times to flatten the cookies.
This will help create that brownie-look to these chocolate cookies. You dont have to do this step, as these cookies will spread enough on their own, but this is just if you want the look of a brownie appearance as well!

Well, honestly Im really going to try harder. For months youve probably noticed in every recipe I mention protein and this is not because Ive suddenly decided its what I want to talk about, rather its just what is incessantly on my mind.
Endurance athletes have higher protein needs and while I always thought I was doing a pretty good job, I never really tracked it . I knew I was eating plenty of veggies and not over doing it on calories, so what more was there really to consider.
Once we started examining my protein intake it was less than half of what was recommended for someone doing the distances Ive been doing for years. Which could explain why I was turning a bit skinny fat, losing muscle and feeling fatigued.

Nut Butter Replacer For Allergy
Peanut butter is an awesome base in cookies, however, it can be troublesome if you have a peanut allergy and many schools now have a global nut-free policy.
To make these cookies nut-free I used tahini. I used an unhulled tahini as it has a bit more nutrition but it is more strongly flavoured than hulled tahini. If you are new to cooking with tahini I would go with hulled as it is a lot milder in flavour.
If you don’t need your cookies to be nut-free, you can definitely substitute the tahini for any nut butter. Sunflower butter also works if you have that on hand, and is milder than tahini.
Ok, I think that is most of my notes for these cookies. I have 3 kiddos, 2 happily eat these in their complete allergy friendly state. . All 3 are happy campers if I swap the coconut flour for oat flour. I have the luxury of being able to do that though, as none of my kids are allergy kids.

Using rounded tablespoons or a 1 ½-inch cookie scoop, scoop the cookie dough out onto your prepared cookie sheet.
The smaller you scoop the cookies, the more cookies youll have and the faster theyll bake.
You will have at least 12 cookies, maybe more depending on the size of your scoop. I get about 16 from my batch using a 1 1/2 -inch cookie scoop.
What Equipment Do You Need To Make These Chewy Cookies
I use my trusty Sage mixer for almost all my baking. It makes mixing, beating and whipping ingredients so easy. I make cookie dough like this in it along with cake mixture, bread dough and almost everything else.
Before I had it I used a hand held mixer much like this one. However, if you do a lot of baking investing in a good mixer is so worth while.
Then you need a couple of baking trays to bake the cookies on. These ones get good views and with three different sizes youll have the perfect size for any cooking or baking you do.
Finally I find it really useful to line my baking tray with re-usable liners. You can cut them to size and then keep them with the trays. It makes washing up so much easier and the cookies wont get stuck to the tray.

To make sugar cookies gluten-free, Ive opted to use almond flour. Like some of my other cookie recipes, I feel good about giving my family treats that have *some* form of nutrition.
We get enough sugar and carbs in our diets, Id rather try to find some small ways to bump up the nutritional value in every area I can.
Almond flour is full of healthy fats, fiber, and protein, so even when my son wants a second cookie, I can feel good that he is filling up on more than just sugar thats going to make him crash after 30 minutes.

I have found the best way to measure gluten-free flour is the spoon & level method. I use a spoon to scoop the flour into the measuring cup. Then I use the back of a knife to level off the top of the measuring cup.
Please do not scoop the flour out of the bag with your measuring cup. If you do, you could end up with more flour than is called for in the recipe because the flour often gets compacted in the bags.
