Homemade Lunchables:

Homemade lunchables are one of my sons favorite things to pack for his gluten dairy sugar free lunches. You cut lunch meat into circles using a cookie cutter or small cup or lid.

Then, put them on plantain chips with a little mayo and maybe a pickle or jalapeno for the adventurous kiddo.

Carrots and hummus make a great side to go with these lunchables. This lunch is simple enough where kids as young as 2nd or 3rd grade can make on their own.

Have The Kids Help Pack

My son has been helping pack his own lunch since kindergarten, and now that hes in 5th grade, he is completely in charge of packing his gluten dairy sugar free lunches.

Of course, I have to check it from time to time to make sure hes packing a good lunch, but its so helpful that he can be responsible for this.

If you have a younger kid, or one with special needs, maybe just have them next to you while you make lunch. They can help with easy tasks, and pick out which veggie they want that day.

This helps them know what to expect at lunch time, and when they know what to expect, theyre more likely to eat it up.

Dont Worry Too Much About Variety

Sometimes, we parents get worried theres not enough variety in our kids lunch, but really our kids dont care that much. When I was a kid, we had a sandwich and chips most days and that was just fine with me.

The system I am going to give you later will help make sure you have plenty of easy ideas, but if it seems like your kid is getting bored with a certain lunch, just take that one out of the rotation for awhile.

Healthier Egg Salad Sandwich

  • Avocado egg salad scrambled eggs mixed with avocado, Greek yogurt, Dijon mustard, salt and pepper with multigrain bread or wholewheat bread. cut into bite-sized portions

Our family has about a few different school lunches we rotate through, and Id thought I should share them with you. All of these ideas are also sugar free, grain free, & can easily be modified to fit a paleo diet too.

Bagels & Cinnamon Cream Cheese

Sometimes keeping things interesting is as simple as swapping out bread for bagels. Use them for a bagel sandwich, or schmear them with your favoritesnut or seed butter & honey, a bit of jam, or cream cheese. For a dairy-free version, we like Kite Hill almond cream cheese mixed with a tiny drizzle of pure maple syrup and a sprinkle of cinnamon. Its one of Sophies favorites!

On the side, a simple combo of fruits, veggies, and something crunchy makes for a delicious lunch.

    Why Follow A Dairy

    Well, let me explain.

    You see, we all have consumed grains, dairy, legumes, and meat in our lifetime, yes? Yes! I eat them all. Gluten-free grains of course.

    But heres the thing. As I sit here typing up this post, I can tell my brain and body need a little calming down. Its been on the crazy cycle for oh weeks now! YIKES! Yes, stress can really take a toll on ones health and deplete you of important key MINERALS.

    You know what else it can do? It can cause that oxidative stress to rise and if we are under chronic stress , the physical and mental kind, then our immune system is going to have a hard time responding. It will try to react and recover but doesnt have the necessary nutrients in order to do so. Hey, its pretty tired of trying to fight, ya know? Hence the continuous inflammation of the body and brain. Sad, but true.

    On the other hand, a little stress and a little inflammation can be good for the body. If you are healthy, managing stress, and moving the body daily, then your body will easily recover from that acute stress and build it up stronger.

    Unfortunately, for many of us, we get stuck in the chronic stress cycle. Am I right? Raising hand! Which is why I thought it was about time we make another anti-inflammatory meal plan. Our first anti-inflammatory meal plan focused on grain-free and gluten-free recipes. This plan focuses on gluten-free and dairy-free.

    Instant Pot Tomato Soup Paleo & Vegan

    This soup is so delicious, seriously. Perfect texture, nice and creamy, and all I added was salt. And what makes it even more amazing is that it really is as easy as throwing it all in the instant pot and letting it do its thing. It has officially hit the regular rotation list!! Katie
