Gluten Free Chicken and Dumplings in the instant pot

A little prep beforehand will help speed up the process. Have your celery, onions, and carrots diced and your garlic minced and this recipe will be ready in time for dinner!

Step 1: Using a dutch oven or large pot, heat oil over medium heat. Cook chicken breasts in batches and set aside.

Step 2: Coat the veggies in flour until lightly browned. Then add the chicken stock and thyme and stir well to combine.

Step 3: Add the carrots, onions, and celery and sauté over medium-high heat for 5 minutes before adding the garlic to cook for a few minutes more.

Step 4: Bring to a boil and add the shredded chicken meat back into the pot and let simmer to thicken the soup. Once it has thickened nicely, add in the peas and stir to combine.

Step 5: Combine dumpling ingredients but do not overmix. Drop dough into the soup one scoop/spoonful at a time.

Step 6: Cover and cook for 15 minutes and allow the dumplings to steam completely. Garnish with fresh parsley if desired.

Step : Making The Chicken Soup

First, place the chicken and vegetables in a medium pot and pour in 6 cups of chicken broth. Let it come to a boil, then reduce the heat until the soup is just simmering.

Next, season the soup with your salt, black pepper, and turmeric.

Let everything simmer until the chicken is completely cooked – usually about 40-50 minutes. Also, while the chicken is cooking, you can start making the dumpling dough – we’ll get into this more in a minute.

Anyway, once your chicken is cooked, take it out of the pot, and shred it off the bone with two forks. Then, once that’s taken care of, place the chicken back in the pot.

Now, let the soup simmer and add any additional salt, pepper, or spices to your taste.

    Holy mother of all things comforting and cozy, this soup is everything I need in life right now. And the best part, this recipe is super easy and can actually be made on a busy weeknight. Like even in December.

    Oh and everything about this is from scratch even the gluten free dumplings, which, by the way, do not let the sound of them scare you. They are hella easy to mix together and then just plop into your soup.

    And this recipe is also dairy free and, you guessed it, uses cauliflower to add a creaminess to the base that really cant be beat. Based off my popular Chicken Pot Pie Soup recipe, this Healthy Chicken and Dumplings recipe also uses the Instant Pot to make dinner a cinch. So lets get into it!

    About Gluten Free Chicken And Dumplings

    This recipe is a huge improvement from my first attempt at chicken and dumplings in college when I dumped chicken breast in a crock pot with water and dropped biscuits on top before serving. This recipe does take a little bit of work, but the end result is so worth it. I love making these gluten free chicken and dumplings on a cold, rainy day and cozying up on the couch with a warm bowl while watching a rom com.

    This recipe builds flavor at every step by creating the stock with a classic mirepoix of diced celery, carrots, and onions. Chicken and spices are added and simmered until the chicken is so tender it just falls apart. While the chicken is simmering, the dumpling dough is mixed, rolled, cut, and tossed with flour before dropping individually in the simmering stock. Milk and cornstarch are added at the end to thicken and add some creamy goodness to this wonderfully comforting meal. The end result isnt glamorous, but its so delicious. I like to top it with tons of fresh black pepper at the end! And if Im feeling healthy I may add some fresh parsley as well

    You can use any kind of chicken you like, breasts, thighs, tenderloins, you can even use frozen chicken if you dont have time to defrost any. Just adjust the cook time from 15 to 20 minutes to allow for that. I like to use a combination of tenderloins and thighs because the flavor the thighs give to the dish cant be beat!

    The PERFECT Gluten Free Chicken and Dumplings

    Start by stewing a whole chicken in water with bouillon and seasonings.

    Stew chicken for 45 minutes

    Add carrots, onions, and celery, then stew for 15 more minutes.

    Remove chicken, let cool and separate meat from the bones.

    Also remove veggies from broth, set aside.

    Next, make the gluten free dumplings following the recipe below.

    Drop dumplings into simmering chicken broth.

    Let cook for about 15 minutes.

    Add the chicken and vegetables to the dumpling/broth mixture. It’s ready to serve!

  • In a large soup pot, add the olive oil, onion, and garlic. Saute on low heat for 5 to 6 minutes until the veggies become translucent. Add the carrots and celery and saute for an additional 3 minutes.
  • Add the potatoes, chicken breast, chicken stock, salt, and thyme and bring to a boil. Reduce to a simmer and cook on low for 30 minutes until veggies are soft. Add the corn and peas and stir well.
  • Mix all the dumpling ingredients in a bowl, and knead a few times with your hands until the dough is well combined.
  • With a small scoop scoop 1 teaspoon of dough into the soup at a time. The dumplings should be roughly the same size. Add each dumpling to the soup until all the dough is gone. Then add the fresh parsley. Cover the soup and simmer for an additional 15 minutes. Dumplings should be cooked all the way through.
  • Serve with a fresh side salad, a slice of thick crusty bread, and enjoy!

    Its interesting that when I thought of making one of my favorite childhood dishes I thought of my Grandmother Ammie McGees chicken and dumplings.     Granddaddy would ring the chickens neck, pull its feathers out and deliver it to Ammies kitchen sink to wash thoroughly before being added to the cooking pot. Both Grandparents had a barn, chickens, and a garden out back of their houses. Back then in small towns everybody had a barn.

    Since chicken pieces vary in size and weight, check the internal temperature. White meat should be 160ºF, while dark meat is 165ºF.

    • Chicken Breasts Cook at HIGH pressure for 15 minutes. You could decrease time by 3 minutes, but I prefer the fall apart tenderness.
    • Frozen Chicken Make sure the chicken is separated and not frozen in one big clump. It will take longer for the pot to come to pressure, plus add 2 minutes to cook time.
    • Chicken Thighs Boneless 12 minutes, Bone-In 15 minutes
    • Split Bone In Chicken Breasts 20 minutes, for frozen split chicken breasts add an additional 5 minutes to cooking time
    • Rotisserie Chicken Cook veggies with broth for 8 minutes. Release pressure and add shredded or cut up rotisserie chicken pieces.
