How To Make A Gluten And Dairy Free Cheesecake

There are a couple of ways that I think could work for a nut-free version.

  • Omit the nuts and increase the coconut cream by ½ cup. It wont be quite as rich but should still taste delicious.
  • You could substitute the cashews for ¼ cup plant-based yogurt and ¼ cup melted plant-based margarine, vegan butter, or coconut oil for added richness.
  • Lastly, you could substitute the cashews for soaked sunflower seeds, though the cream wont be as creamy.

    So what does a gluten-free Baileys no-bake cheesecake taste like?

    The filling is sweet, creamy with that wonderful, unmistakable taste of Baileys running through it it just works so well against that whipped, fluffy cheesecake filling!

    The biscuit base is a chocolatey, buttery combo made from sweet digestive biscuits thats pure heaven alongside the filling.

    A little grated chocolate on top goes a long way as do Baileys truffles, which are not only gluten-free but theyre also absolutely divine!

    Can I Freeze My Gluten Free Lemon Cheesecake

    Yep! You can freeze it for up to 2-3 months without a problem just make sure you put it in an airtight plastic container. Its probably a good idea to slice it first so you can defrost a slice at a time.

    If you want to defrost the entire cheesecake, leave it at room temperature to thaw for around 12 hours. A single slice will probably only take about 5 hours to thaw, so get it out ahead of time!

    The Best Vegan New York Cheesecake

    Before going vegan, the only cheesecake I actually enjoyed was a New York style cheesecake. Its so much creamier than regular cheesecake, and has the most irresistible crust.

    I wanted to finally create a vegan baked cheesecake that tasted nearly identical to the classic New York cheesecake while being entirely dairy free, egg free, refined sugar free, lower in sugar, and gluten free.

    Well, we have it, folks.

    This is my all time favorite baked vegan New York style cheesecake thats ultra creamy and decadent yet doesnt weigh you down. Its slightly tangy with notes of vanilla, and is undetectably gluten free with the sweet oat crust.

    This cheesecake is baked to perfection, with that classic fluffy and soft texture, just perfect when topped with some amareno cherries and fresh coconut whipped cream!

    What Cream Cheese Should I Use For The Filling

    I often use Philadelphia cream cheese for my cheesecakes, but for this one, Ive chosen to use mascarpone cheese. You can easily find it in the cheese aisle of any supermarket.

    Both are fine, but I tend to use mascarpone for cheesecakes if I can because it makes my cheesecakes set to be a little firmer than when using Philadelphia. Why is that a good thing?!

    Mascarpone sets a little firmer than Philadelphia, which means it wont begin to soften nearly as quickly as regular cream cheese would. That can be particularly helpful if youre serving this up on a hot day.

    You can happily try this with Philadelphia, but I know from experience that it will be a much softer cheesecake which wont hold its shape out of the fridge for too long.

    What Is The Perfect Biscuit For A Cheesecake Biscuit Base

    This is a good question and the answer really depends on the end flavour result your aiming for. I also go for the good old fashioned digestive biscuit. The gluten free versions are often milk and egg free too .

    This said, I have used chocolate chip cookies in the past to add another chocolate dimension. Other options are

    • ginger biscuits (would go great with a ginger flavour chocolate
    • gluten free oreo-style cookies

    Double Chocolate Cheesecake Made Gluten Free With Vegan Option

    Do I Need Any Special Equipment To Make Your Gluten Free Lemon Cheesecake Recipe

    You wont need anything in particular apart from a deep, loose bottom tin heres the one I use. Its important to use a deep one as this is a tall cheesecake!

    Its 20cm in diameter, so remember if your tin is wider than mine, your cheesecake will end up looking a lot flatter!

    A springform tin is fine too heres the one I sometimes use. I dont use it all the time because its next to impossible to get the entire cheesecake off the base at once.

    And ideally, I dont want to be serving the cheesecake and slicing it on my springform base because itll get all scratched. So I much prefer to use a loose bottom tin.

    But definitely dont make this in a normal cake tin without a loose bottom/springform mechanism. You wont be able to get the cheesecake out or cut it!

    What Chocolate Should I Use For This Double Chocolate Cheesecake

    In the introduction I mention that this is a child-friendly flavour as I use white and milk chocolate to flavour the Double Chocolate Cheesecake layers. However, as stated above, I believe this to be a very versatile cheesecake when it comes to the chocolate flavours you use. I used chocolate drops/buttons as these melt quickly and evenly in the microwave.

    TOP TIP: only melt in the microwave in short blasts of 10 seconds at a time. Dairy free chocolate in particular has a tendency to burn easily.

    Other chocolate flavours you may wish to try are

    • orange chocolate
    • dark 70%+ chocolate
    • ginger chocolate

    What you CANT use is chocolate that has a fondant or caramel filling, it will argue with the cream and cream cheese.

    Can I Make This Recipe Gluten

    It is gluten-free, though nobody would know just by tasting it trust me!

    Bear in mind that minimising cross-contamination is hugely important if youre Coeliac or making this for someone who is. Heres some tips from Coeliac UK on minimising the risk of cross contamination.

    Also, make sure that all ingredients used dont have any gluten-containing ingredients. Then make that that they also dont have a may contain warning for gluten, wheat, rye, barley, oats , spelt and khorasan wheat .

    How Is This Cheesecake Made Dairy Free

    Cheesecake and dairy seem to go hand-in-hand right? Fortunately there are tasty alternatives to traditional dairy cream cheese!     Can I Use Other Sugar Apart From Icing Sugar In This Recipe

    Ive chosen to use icing sugar in this recipe because its nice and light, powdery and almost vanishes into the cheesecake filling. Other sugars just wouldnt work the same.

    Thats because this is a no-bake recipe. That means theres no heat to break the sugar down and dissolve it, so itll just be all grainy in the filling.

    So yeah, icing sugar is the only way to go!

    Notes On Ingredients For This Gluten

    • Cornstarch helps prevent the eggs from over-coagulating and is a great addition for cheesecakes made without a water bath. Theres only one tablespoon of cornstarch in this recipe but it really does make a big difference and helps prevent cracking. Dont skip this!
    • Cream Cheese: Its best to use softened cream cheese. Use the full-fat kind too!
    • Eggs: Use room temperature eggs. I do not recommend using an egg substitutes.
    • Graham crackers: You can use any brand of gluten-free graham crackers that you would like that you can find easily near you or order online.

    Kinnikinnick Smoreables Graham style gluten-free crackers were used in this recipe. You can also make homemade gluten-free graham crackers using this gfJules graham cracker mix.

    While making cheesecake takes some time, at least there arent a bunch of complicated ingredients to fuss with!

    You may notice that we didnt use a water bath for this cheesecake. If youre wondering what a water bath is and does for a cheesecake, it is essentially a pan filled with water with the springform pan in the center. It helps keep the cheesecake moist and prevents cracking. I tend to not use a water bath when I bake my gluten-free cheesecakes and instead use a few other precautions to bake a perfectly smooth cheesecake.

    Yes, I know it may not look it, but its completely dairy-free! Heres the products I used to make this recipe Id recommend sticking to them as much as possible:

    A few additional side notes too: aim for a dairy-free cream with at least 31% fat content. It must be high or it wont set in the fridge.

    The same goes for the cream cheese too ensure the fat content is at least 23%. If you use the products Ive recommended above youll be fine because thats exactly what Ive used to make this!
