Review of “Bob’s Red Mill Gluten Free Pancake Mix”

A mix of earthy, tart, refreshing and umami all in one. This flavour bomb is a combination of seaweed, Davidson plum, lemon myrtle and wattleseed.

Its a complex flavour but also delicious! Enhance your favourite meals flavour with a tiny sprinkling whether its rice, grilled fish or a steak.

How To Reheat Frozen Pancakes:

Toaster or Toaster Oven: Warm pancakes in the toaster/toaster oven for 3-4 minutes – use a medium level of heat.

Oven: Warm at 350° for 3-4 minutes. I like to just place them on the open rack so that they warm and get a little crispy on all of the surfaces.

Microwave: Place pancakes in a single layer on a paper towel lined plate. Warm pancakes for 15-20 seconds. Check and add an additional 5-10 seconds until pancakes are warmed through.

Frozen Pancakes in Air Fryer: Use the reheat setting to warm your pancakes for 1-3 minutes. Check after 1 minutes and add more time as needed.

Angelina packs her pancakes with Gluten Free Oat Flour, Chocolate Protein Powder Nutritional Booster and cocoa powder. The coconut oil and almond milk add a smooth texture and wonderful flavor. Keep in mind, to keep these pancakes vegan, youll want to use a flax egg or egg replacer. If the batter seems too thick, you can add more milk, 1 tablespoon at a time, until you reach your desired consistency. Top with strawberries and bananas and a drizzle of homemade chocolate syrup! If we didnt know any better, wed almost think this pancake recipe was a dessert in disguise.

How Long Can I Store Gluten

This mix can be stored in an airtight container for up to three months at room temperature.

It may stay fresh longer, but I wouldn’t know because we usually griddle our way through a triple batch of this gluten-free pancake recipe every other week.

How To Make Gluten Free Pancakes:

  • First, mix together the flour, baking powder, baking soda, salt and sugar.
  • Second, add the eggs, milk and vanilla extract. Make sure to mix everything until smooth.
  • Heat the skillet you plan to use and make sure it is lightly oiled. I normally use a frying pan or electric skillet.
  • Next, pour ¼ cup pancake batter on to the pan. Brown on both sides.

  • Combine your dry ingredients in a large mixing bowl. Whisk together the gluten free flour, sugar, baking powder and salt in your mixing bowl.
  • In a large measuring cup, melt 4 tablespoons of butter in the microwave. This takes about 45 seconds in my microwave. Once the butter is melted, youll add the milk to the butter and warm in the microwave for an additional 45 seconds. IMPORTANT: You want to be sure that the milk is warm enough that the butter is liquid and floating on the surface of the milk, but not so warm that it cooks the eggs when you combine them in the next step.
  • Add the vanilla extract to the milk and butter. Whisk the eggs into the milk and butter.
  • Add the wet ingredients with the dry ingredients and mix until just combined. The batter will be slightly lumpy which is good. If the batter feels too thick to you, add a splash of milk and mix again.
  • Warm your favorite frying pan or griddle over medium heat. Spray the pan with a little bit of canola oil or add a bit of butter to the pan. Make sure that the frying pan is nice and warm.
  • Once the pan is warm, use ¼ cup measuring cup to pour circles of batter onto the frying pan or griddle. When the middle of each pancake is bubbly and the edges look like they are beginning to cook, flip the pancakes and cook for an additional minute until cooked through.

    Yes, you can freeze gluten-free pancakes. Always bring your gluten-free pancakes to room temperature first.

    After they are at room temperature you can store them in an airtight container or a zip lock bag for up to three months.

    Remember when measuring out flours for this gluten-free pancake recipe spoon your flour into your measuring cup, then level it.

    Do not dip your measuring cup into the flour then level, it will be too much flour.

    How To Thicken Pancake Mix

    Bobs Red Mill Gluten Free Pancake Mix, 22 Oz

    If your pancake mix doesnt have the required consistency and youve already used up your batter mix, try not to worry, there are lots of things you can do to salvage it!

  • Add more flour. The easiest way to thicken your batter is to add flour. Of course, make sure that youre adding gluten-free flour. Flour is the perfect thickening agent but be careful not to add too much. You dont want your pancakes to have a grainy texture!
  • Add dry ingredients. Adding ingredients such as gluten-free oats or cornmeal is also a quick way to thicken your batter, however, the texture will definitely not be smooth! Although it does make for much healthier pancakes.
  • Buttermilk powder. Much like flour, buttermilk powder is great at thickening. You may need to add more baking powder to ensure you get enough rise from your pancakes
  • Eggs. Eggs are a great way to thicken the batter. Youll definitely not have dry pancakes if you add an egg to your batter mix. However, the taste of egg may become quite overpowering, so if youre not a lover of eggs, this may not be the best option
  • Pancake Mix. Thats right one of the easiest ways to thicken your mix is to add more of your dry pancake mix to the batter, like the Bobs Red Mill Gluten Free pancake mix.
