How To Make Bobs Red Mill Gluten Free Biscuits

To keep your hands clean, use an ice cream scoop or two spoons when handling gluten-free biscuit dough. You can also use a spoon and spatula to scoop the dough and then drop it onto the baking pan. And if you have trouble getting the dough to release from the ice cream scoop, another good tip is to dip the scoop in ice water before dropping each portion.

How To Make Gluten Free Biscuits:

  • Preheat oven to 425 degrees
  • In a mixer or large bowl, beat the butter.
  • Add in the flour, salt, and baking powder. Mix well.
  • Add the egg and milk and blend together with the flour mixture.
  • Using a spoon and your hands, form the biscuit dough into inch thick biscuits onto a parchment-lined baking sheet.
  • Bake the biscuits in preheated oven for 10 to 15 minutes or until theyre a beautiful golden brown. You do not want them to be overcooked or wet on the inside. Mine normally takes about 12 minutes.
  • Allow to cool for a couple of minutes. Brush with melted butter if you like buttery biscuits.
  • These biscuits are so good right out of the oven! We like to add a little more butter and sometimes I like to add a small spoon of raw honey, too! So good!

    Ive noticed other gluten-free biscuit recipes calling to set your oven to 425 degrees or even 375 degrees. Ive found 450 degrees to be the perfect temperature for the texture I like. Feel free to play with it, but also note that you will probably have to also adjust your baking time.

    Gluten Free Biscuit Variations:

    • Use almond milk, coconut milk or other dairy free milk in place of regular milk.
    • For gluten free buttermilk biscuits, simply add 1 tablespoon vinegar or lemon juice to your measuring cup and top off with milk . Let this mixture sit for about 5 minutes before mixing into dry ingredients.
    • Make Gluten Free Cheddar Bay Biscuits by adding ½ cup shredded cheddar to the biscuit batter. Before baking brush the tops with 2 tablespoons melted butter, ½ tsp garlic powder and 1 tablespoon parsley before baking.

    A Word About Buttermilk

    Buttermilk is traditional for biscuits and it works well here, too, and imparts a bit of a tang. I start by mixing just a couple of tablespoons into the dry ingredients to hydrate and then add the rest. This helps everything mix evenly without forming clumps.

    I used a low-fat buttermilk for this recipe, but buttermilk sometimes varies in thickness and you may find yours is thinner or thicker. It will work with any kind of buttermilk, but you may find that the temperature in the room or the humidity level may dictate that you need a little more or less. The dough will look like it has no business coming togetheri.e., it may look a little crumblybut it will.

    If the dough is really and truly dry, add additional buttermilk a tablespoon at a time and incorporate before adding more. You dont want a wet dough.

    If you dont have buttermilk, you can always add a squeeze of lemon juice or a dash of apple cider vinegar to the same amount of milk. It will help acidify the milk Id recommend using whole milk if you can.

    One package Bobs Red Mill Gluten Free Cornbread Mix 1 stick unsalted butter 2 small or 1 large can creamed corn 1/2 c skim milk Directions Preheat oven to 375F Mix all the ingredients together in one bowl until blended. Mix for another minute or so if by hand, 30 seconds if using a mixer. Spoon into 20 individual cupcake liners in muffin tins.

    Directions: Preheat oven to 425 degrees F. In a large mixing bowl, combine dry ingredients. Use blender to mix flaxseed and water add to dry mixture along with maple syrup, agave or honey and milk. Stir until just blended. Add coconut oil to mixture .

    Pour cake mix into a mixing bowl. Make a well in the center and pour in eggs, milk and oil. Stir until well combined. Add boiling water and stir to mix, creating a very loose batter. Pour batter into prepared pans. Bake for 25-30 minutes, until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes.

    Tips For Making Gluten Free Biscuits

    Cold Ingredients: You are going to want to make sure your half and half and your butter are really cold.

    Incorporating the Butter: You can use a pastry blender to cut the butter into the flour or you can grate the cold butter with a hand grater. We prefer to use a hand grater.

    Using a Biscuit Cutter: When cutting the dough with a biscuit cutter, don’t twist the cutter. Press the cutter down into the dough firmly. This will help keep the air pockets open and help the biscuits rise.

    Folding method: Have you ever made a gluten-free puff pastry dough? This dough is similar in that you want to have layers of butter so the biscuits will be flaky. You only want to fold and turn the dough a total of three times.

    Bobs Red Mill Cornbread Recipes

    Preheat the oven to 375 degrees F. Grease a 9×9 baking dish. In a bowl, sift together the flour, cornmeal, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, melted butter, and eggs. Stir the flour mixture into the buttermilk mixture mixing only enough to combine the ingredients.

    Cake: 1 package Bobs Red Mill Gluten Free Chocolate Cake Mix 2/3 cup milk 1/3 cup oil 2 eggs, lightly beaten 2/3 cup boiling water. Preheat oven to 350 degrees F. Grease and flour two 8-inch round cake pans. Pour cake mix into a mixing bowl. Make a well in the center and pour in eggs, milk and oil. Stir until well combined.

    Great Cornbread Highly recommend Bobs Red Mill Medium Grind Cornmeal. Makes a delicious cornbread, moist and tender. I have been using Bobs for at least 15 years and they make wonderful products. 1 cups Bobs Cornmeal, 1 cup flour, 1 c buttermilk, 1/4 oil, 4 teaspoons baking powder and 1 egg. Bake at 425 degrees in an 8 or 9 inch pan.

    Gluten-free Flour Blend: This recipe has been tested with a few different gluten-free flour blends, each already containing xanthan gum or another binder.The blends tested include King Arthur Measure for Measure, Namaste Perfect Blend, Bobs Red Mill 1:1, and Cup4Cup multipurpose.The results showed minor differences between the flours, but all worked well!

    Gluten Free Flour Blend Notes:

    The Best Gluten Free Buttermilk Biscuits (Easy!)

    Most of the gluten free flours behaved similarly when mixed with the other ingredients. I did not measure the flour amount by weight as each blend needed tweaking Here are a few things that stood out:

    • King Arthur Measure for Measure – The gluten free biscuit dough was wetter than the other flour blends. It didn’t affect the amount of rise but the dough spread out a little more than others when baking. I didn’t add additional flour but used about two teaspoons of flour sprinkled on the top so I could press the dough down enough to use the biscuit cutter.
    • Better Batter Artisinal Gum Free – I had to add two tablespoons of additional milk, so the biscuit dough wasn’t too stiff.
    • Bob’s Red Mill 1 to 1 Gluten Free Blend – I felt the dough was workable without additional flour or milk.
    • Cup4Cup – The biscuit dough this flour made was fine without adding any extra flour or milk.
    • Pillsbury Gluten Free Flour Blend – This flour performed really well.
    • Target Good & Gather Gluten Free Blend – The biscuits tasted great, but they are a little more crumbly than other gluten free blends used.
    • Just About Food Whole Grain Gluten Free Blend – I had to add almost ½ cup additional flour because the biscuit dough was so wet with just 1 cup of milk. Again, this flour was terrible, and I don’t recommend using it.

    One of the easiest ways to make fresh gf biscuits without having to make them from scratch is to freeze some dough. The process is easy: all you need to do is to prepare the dough, drop the biscuits onto the baking sheet, and put the whole thing in the freezer instead of the oven.     How To Serve These Biscuits

    Okay, thats a funny idea, isnt it? You just eat them!

    Wait until they cool, so you dont burn your mouth! Then, split them open and top them with butter, jam, as is, whatever. I also like them drizzled with honey.

    Use them as a shortcake replacement in a berry shortcake recipe with strawberries, blackberries, or blueberries.

    You could also really easily remove the sugar and put them to use in a savory application, such as biscuits and gravy, or add a half teaspoon each of dried herbs such as rosemary, thyme, chives, or parsley.

    Lets Make Drop Biscuits:

  • Add the flour, baking powder and salt to the food processor and pulse 2-3 times to combine the dry ingredients.
  • Cut the cold butter into chunks and add to the dry ingredients in the processor. Pulse until butter is the size of small peas and transfer to a bowl.
  • Pour 3/4 cup of the milk into the mixture and use hands to combine. Add remaining milk as needed. Should be dough like and not too sticky.
  • Use 1/4 cup scoop to make 10 rolls of dough. Drop them into a well greased skillet
  • Bake at 450F for 18-20 minutes until golden brown on top.
  • Brush tops with butter as desired.
  • Recipe Step By Step Directions:

    Step 1: Add your dry ingredients to a bowl and whisk the ingredients to blend them. Add the 5 tablespoon of cold butter.

    Use a pastry blender to cut in the butter into the flour. Many wonders if they can use a food processor to cut the butter in. I find a food processor overmixes the butter in and you lose some of the flaky layers.

    Step 2: Your flour mix will look like it has crumbs like in this photo.

    Step 3: Add the milk and mix.

    Step 4: Your dough should look similar in consistency to this.

    Step 5: Put the dough on wax paper. You may want to dust it with a tiny bit of gluten free flour. It depends on which gluten free flour blend you use. Press to 1 ½ inch thickness. Use a biscuit cutter to cut out biscuit shapes from the dough. If you prefer, you can use a large ice cream scoop or cookie scoop to make drop-style biscuits.

    Step 6: Brush the top of each biscuit with milk. This will help your biscuits get that nice golden color on top.

    Step 7: Bake at 425º F for 15 minutes.

    Step 8: Here are the test batches. I baked one at a time, so each cooled on the wire rack and then transferred to another tray while the next set cooled.

    Do I Have To Let The Batter Rest

    Yes and no. You may bake them right away, but you also risk a grittier texture. For best results, cover the bowl and let it sit at room temperature for 30 minutes.

    This allows the starches to relax and moisten for softer, fluffy biscuits. If you would like to bake later, cover and store in the refrigerator up to several hours.
