How They Are Ranked:
Alright, ladys and gents heres the tea, this test was hard. There were a couple brands that I actually had to spit out they were that bad, and honestly, I kinda dont like cornbread as much as I use to .
I will give our rankings and comments for all contestants below each brand. Not all categories count towards the final score because it is based on preference . This will allow you to better identify a brand that may suit your individual cornbread needs, but will not affect ranking based on our judges personal preferences. I recommend reading through the comments and scores and finding one that sounds best to you . Below is an explanation of the scoring:
Overall Flavor: This is pretty self-explanatory, but is the overall flavor pleasant? This is scored out of 10 points, a full 10 points meaning very pleasant/tasty.
Texture:This measures the texture as a whole but not graininess . This is scored out of 10 points, a full 10 points meaning very good texture/enjoyable.
Corniness: This doesnt affect final score, but how much of a corn flavor is there? This is scored out of 10 points, a full 10 points meaning I am basically eating actual corn right now.
Sweetness: This doesnt affect the final score, but how sweet is it for cornbread? This is scored out of 10 points, a full 10 points meaning very sweet/overly so.
Moistness: How moist is it? This is scored out of 10 points, a full 10 points meaning very moist.

You definitely can make gluten-free cornbread muffins with this recipe. Make the batter as directed, but pour the batter into a regular-size muffin pan sprayed with non-stick cooking spray .
Then bake the muffins for 15-18 minutes, or until a knife inserted in the center comes out clean. Cool on a wire rack until the muffins are cool enough to turn out. Enjoy them when they have reached your desired temperature!
How To Make Gluten Free Dairy
I have successfully transformed this into a gluten free, dairy-free cornbread recipe by using Earth Balance buttery sticks in place of unsalted butter and dairy-free plain yogurt in place of yogurt.
You can also try a mix of half plain dairy-free yogurt and half unsweetened almond milk as a buttermilk replacement. Thats your best bet.

Best Overall Cornbread Mix: Fleischmanns Simply Homemade Cornbread
If youre a baker, you might know the company Fleischmanns for their yeasts. Thats what the company has focused on since the 1860s. But theres only one bread mix that rounds out their product line: Fleischmanns Simply Homemade Cornbread Baking Mix. The homemade title in the name of the product delivers it tastes like the best version of homemade because it doesnt have any artificial colors or preservatives. The mix only includes cornmeal, wheat flour, sugar, baking powder, salt, honey, and xantham gum as a thickener. This is our top choice of a cornmeal mix because its the perfect balance of savory and sweet and offers the perfect texture that isnt too wet or too dry.
If youre hankering for cornbread, theres no reason to buy the ingredients to make it from scratch, as cornmeal mixes are just as good, or even better. Any one of these cornbread mixes would make a tasty side or meal think of them as a blank canvas to put your own spin on. Each person has a unique diet and eating preferences, though, so we suggest a few taste tests to choose your favorite.

The Best Way To Store Gf Cornbread
Since this cornbread is made to be moist and soft, it’s best to store any leftovers airtight so it doesn’t dry out.
I store mine at room temperature:
⢠in the pan, wrapped well with plastic wrap.
⢠in a plastic bag at room temperature.
⢠in an airtight plastic or glass container.
If it is in the pan you can reheat it to serve leftovers warm. Simply cover the pan with foil and bake at 350ºF for about 10 minutes. Or place a square in the microwave for a few seconds.

Best Overall: Marie Callender’s Restaurant Style Cornbread Mix
There’s really no downsides that we can think of to this ridiculously simple cornbread mix. Besides only requiring water, it also cooks quickly, holds together well once allowed to cool, and it has the smoothest crumb of any of the brands we tried. Marie Callender’s cornbread might be a bit harder to find affordably online, but it came in under the cost of our most expensive pick when we found it in stores, so it’s not likely to break any budgets. If you want the best cornbread for the least amount of effort, Marie Callender’s has you covered.

How Do You Make Gluten
From what my very southern Aunt has told me. Gluten-Free Cornbread that uses bacon grease instead of oil, and buttermilk instead of milk or dairy-free milk is considered “southern”. You can swap those out in this recipe easily, if you’d like. Or you could try this recipe for Gluten-Free Southern Cornbread.
I’ve tried gluten-free cornbread recipes that have more of a cake texture. These don’t. These are hearty, thick, and corn-bread-like . Sure, I love gluten-free cornbread that is actually cake – fluffy and sweet, enough that you could lather on some buttercream frosting and devour with a fork.
These gluten-free cornbread muffins are the kind that you ladle chili over, the kind that you mop up the last of your stew with. It’s my tried and true gluten-free cornbread that we serve to our family. I hope you like it as much as we do.

Making Gluten Free Cornmeal Muffins
For flourless cornbread muffins, I didnt need a separate gluten free corn muffin recipe I used the same one.
I lined the wells of the tin with greaseproof paper liners so the muffins didnt stick, and distributed the batter evenly among the wells. In my muffin tin, the wells were nearly full of batter.
This isnt a high-rising cornbread, so I wasnt concerned that the gluten free corn muffins would overflow the pan. I made the variation with half coarsely ground yellow cornmeal and half corn flour, as discussed below.
The muffins rose evenly, and they baked perfectly at 350°F in 18 minutes flat.
I was considering adding another egg, since the batter is looser than an ideal muffin batter, but I wanted to see if it worked as written. And it did!
