The secret to getting round tortillas with a clean, round edge is to use a cake cutter. One of those big old metal collars that look like really, really large cookie cutters.

It isnt necessary at all, but it does make for a more evenly-cooked tortilla. Once the rolled-out dough is very smooth, I use a 6-inch or 10-inch cake cutter to cut out rounds.

You can also use the lid of a large pot if it has sharp edges. Then, cut out the round cleanly, and remove the scraps to reroll with any remaining dough.

Overall, these Mission brand are the best gluten free tortillas and my overall favorite for a number of reasons. Theyre relatively well-priced , are very flexible, widely available and have a mostly neutral flavor.

They do taste like potato , so my youngest child does not care for these tortillas. But all three of my children are snobbish about packaged foods. Theyd prefer that I make my own gluten free tortillas every. single. time.

Do I Have To Use The Tapioca Starch/flour

In addition to an all purpose gluten free flour blend, this recipe needs added tapioca starch. Tapioca starch is also sometimes referred to as tapioca flour.

Every all purpose gluten free flour blend I recommend already has tapioca starch in it as an ingredient. You still need to add the additional tapioca starch called for in the recipe.

You may already have Expandex modified tapioca starch, which is chemically modified tapioca starch, because you bake yeast bread with our gluten free bread flour. If so, you can use Expandex in place of the additional tapioca starch, but youll need less.

To use Expandex in place of the added tapioca starch, please use the following amounts in place of the all purpose gluten free flour blend and tapioca starch/flour in the recipe as written. Youll then use the remaining ingredients as written:

  • 1 3/4 cups all purpose gluten free flour
  • 35 grams Expandex modified tapioca starch

Rolling Out The Gluten Free Tortillas

To prepare the gluten free tortillas:

  • Place a dough ball onto a lightly floured surface and dust its top with more flour.
  • Use a rolling pin to roll it out into an approximately round tortilla. Make sure to rotate it frequently to prevent it from sticking to the surface and also to maintain the round shape . As necessary, dust the surface and the top of the tortilla with more flour.
  • The final tortilla should measure about 9 inches in diameter.
  • You want the tortillas to be very thin, about 1mm this will make them easy to use as wraps, while also ensuring that they will puff up while cooking in the pan.
  • I usually roll the tortillas while cooking them at the same time . However, you could roll out all the tortillas first and then cook them. In that case, stack them with pieces of baking/greaseproof paper between them to prevent sticking and cover with a dish towel to prevent them from drying out.

    Weve arrived at the Paleo portion of our list. This brand, Siete, and the following brand are actually really good Paleo tortillas. Siete is expensive and doesnt seem to have a ton of market penetration. But a number of you recommended them to me, which is great because that means that you can find themand of course, that you like them.

    Ive been buying both the almond flour variety and the cassava and coconut flour variety of the Siete wraps for a while now, and I really prefer the almond flour variety. It tastes like almonds, but not in an overpowering way, and theyre super thin and flexible.

    I think the cassava flour tortillas would be much better if they were made from a blend of cassava/coconut flours and almond flour. I assume they dont do that because they want to have a nut-free variety for people who cant or wont eat nuts. Pretty smart!

    The Flatout people are kind of famous for their low-calorie wraps. According to their website, their gluten free wraps are valued at 4 Weight Watchers SmartPoints each. I think thats higher than the regular wraps. Of course!

    I had been on the hunt for these babies the moment I saw a few gluten free bloggers starting to review them online, without any luck. You couldnt even seem to purchase them online, even from the manufacturer. Why would you have a marketing campaign if your product isnt readily available to consumers?

    When I finally found these wraps, anticipation was high. They really didnt disappoint. They have a great flavor thats mostly neutral but not invisible, arent too chewy and taste completely normal. My oldest selected them as her favorite, and she eats the most gluten-containing food outside the house so shes a good judge.

    The package insists that you heat them before rolling, but even if you defrost them and dont heat them first, they do still roll. One side of the wrap will flake a bit, but thats an Achilles heel of store-bought tortillas in general.

    These brown rice tortillas are not great, but theyre still worth a spot on the list. Theyre relatively thick and dont roll without splitting at all. They sort of taste like health food, but they still have a good, hearty chew and flavor.

    My children dont love these tortillas, but its good to know that you can grab a package at Trader Joes in a pinch. If I melted a bunch of cheese inside, theyd eat them. Theyre also less expensive than and very similar to the Food For Life brown rice tortillas, which are frozen and more costly.

    You can shape this gf flour tortilla dough with a simple tortilla press, if you prefer that to a rolling pin and a smooth, floured surface. Try slicing a quart-size zip-top bag in half and lining the top and bottom of your tortilla press with each half, to prevent the dough from sticking.

    I prefer to roll out the dough using a rolling pin, since a tortilla press wont press the dough thin enough, or make a larger round than about 7-inches. So youll still need to roll out the dough with some tapioca starch and a rolling pin after it comes out of the press.

    I still like using a tortilla press, but only for thicker tortillas. Its great to use when I make fresh gluten free corn tortillas, which are naturally thicker.
