If you only take away one piece of advice about baking with yeast, it should be the importance of patience. Of course, you dont want your rolls to overproof , as theyll break apart even before they bake in the oven. But yeast takes time to grow.
Baking with yeast is also very environment-dependent. If the environment is cooler, the yeast will continue to grow, albeit much slower.

Yes!! You can definitely prepare them ahead of time. You have two options, and both work really well:
- Prepare the dough and then keep it in the fridge overnight . You can then roll, shape, proof and bake the cinnamon rolls the next day.
- Alternatively, you can make the dough and shape the cinnamon rolls, and then keep the tightly covered baking tin in the fridge overnight. The next day, bring the rolls to room temperature. If they havent doubled in size by the time theyve reached room temperature, proof them for a while longer and then, bake according to the recipe.
Note that I dont recommend keeping the dough in the fridge for longer than one day.

Let me start by saying that I still cant believe that these are actually real. I never imagined that gluten free AND vegan cinnamon rolls could be this ridiculously soft and fluffy. I honestly had to pinch myself when they first came out of the oven, and then again when I had the first bite, because theyre just MIND BLOWING.
Theyre pillowy-soft, fluffy and wonderfully squishy just like any proper cinnamon rolls should be. The flavour is INCREDIBLE. Theyre rich and indulgent, and you really cant tell that they dont contain any gluten, eggs or dairy.
And theyre ridiculously easy to make!!! The dough is a joy to work with: you can roll and shape it without any problems whatsoever, and also without having to chill it in the fridge. You can go straight from kneading to shaping without any extra steps in between.
So, without further ado: heres how to make the most *spectacular* gluten free vegan cinnamon rolls.
Try To Maintain The Proper Temperature And For The Right Amount Of Time
Extremely high temperatures and extremely low temperatures can kill the yeast. But if the air temperature in your kitchen is either that high or that low, you probably arent spending time baking cinnamon rolls!
Once the dough is about 50% larger than when it started rising, its considered fully risen. Unlike my recipes that call for gluten free bread flour, this batter-style gluten free yeast dough wont usually double in size during the rising phase. Before it reaches a true doubling, it will start to get pock-marked and overly soft.
The bulk rise, which is the only necessary rise for this dough, should take about 1 hour. I typically turn on my oven to 300°F and set the covered and shaped dough on top. But if it takes longer than an hour, let it go longer.
Overproofing happens when the dough has proofed too much, not when its been left to rise for too long.There is no too long forproofing unless the dough has over-proofed. But if you dont let the dough rise for long enough before baking, it will be dense after baking.
Another note about rising temperature
This dough is easiest to work with when its cold. If you can, place the raw dough in a tightly sealed container and refrigerate it for at least 30 minutes before working with it.
When the dough is cold, youll be much less likely to incorporate a lot of extra flour into it during shaping. And that will help with our next tip

I am not sure if there is such thing as leftover cinnamon rolls, but here are a few ideas
- Turn any leftovers you may have into Cinnamon Roll French Toast. Cut the cinnamon rolls in half , dip them into an egg/milk mixture . Cook the cinnamon roll slices in a skillet over medium heat until browned on both sides. Serve with maple syrup and fresh fruit
- Cinnamon Roll Bread Pudding use your favorite bread pudding recipe and replace the bread you would normally use with chopped up cinnamon rolls. If you do not have a favorite bread pudding recipe, please feel free to leave a comment and I am happy to share one with you.
- Waffles I have not tried this but you can use the unbaked cinnamon rolls and turn them into waffles.
How To Make Cinnamon Rolls Ahead Of Time
To make this recipe ahead of time, I recommend making and shaping the cinnamon rolls and then placing them in your refrigerator, tightly wrapped, up to 24hrs. I do not recommend making them any further in advance since the baking powder will lose its oomph.
I have not tested freezing the unbaked cinnamon rolls but had great success freezing the fully baked, unfrosted cinnamon rolls. You can either defrost them at room temperature or use the defrost option on your microwave. You may also rewarm them in the oven at 325F for 10-15 minutes.

Make Sure You Follow The Recipe Precisely So Your Gluten Free Dough Has The Right Moisture Balance
Another key to successful baking with yeast is moisture content. If the dough isnt moist enough, the yeast simply wont grow. Yeast thrives in a wet environment.
Thats why we always cover the shaped dough with oiled plastic wrap as it rises. If it dries out during the rise, it will simply stop rising.
Since these batter-style doughs are pretty moist by nature, even if you live in a dry climate you should be fine with the exact amount of liquid specified in the recipe below.
If youre at all worried that your climate is very dry, try adding an extra tablespoonful of water to the dough initially. And be sure not to work very much additional flour into the dough during shaping.
Im concerned that my kitchen is a bit dry, especially in the middle of the winter, Ill spray the shaped rolls with a bit of water before covering them and allowing them to rise. It certainly doesnt hurt their rise.

This is a great recipe to keep on hand for quick breakfasts and you know what that means! Freeze em!
Prepare the dough as directed up to the rolling the dough into a log and slicing. Instead of baking, place the rolls in a zip bag and freeze for up to 3 months. Whenever youre ready for a warm, soft cinnamon fix, remove the desired amount from the freezer and bake as directed.
How To Make Gluten
The day before, combine 1 lb slightly melted butter , 2 C brown sugar and 4 T cinnamon in the large bowl of a stand mixer then shape into a block that can be grated and freeze it. If you cant get the butter frozen the day before, just make sure to freeze it at least 2 hours before you make them.
I like to line a square tupperware with plastic wrap before putting the mixture in so it pops out easily and the plastic can be peeled right off .
When you are ready to make your gluten-free cinnamon rolls, mix wet ingredients together in a stand mixer with a dough hook or paddle attachment then slowly add the dry ingredients a cup at a time to make the cinnamon roll dough making sure to scrap down the sides of the bowl and then place it on a large white rice floured piece of plastic wrap .
It will be sticky, thats how it is supposed to be. Otherwise, you will have overly dry dough once you bake it.
Pro Tip:Spray your hands with non-stick cooking spray before removing the dough from the stand mixer. This will help keep your hands from sticking to the dough.
Next, place plastic wrap on the counter in one large rectangle. Then add some flour to it and place the dough on top. Sprinkle with additional flour and roll it out into a rectangle shape about 18×24 inches . Next comes that ooey, gooey filling!
Remove your butter from the freezer and take off the plastic wrap if you used it. Begin grating the block over the rectangle rolled out top of though dough .

Note About Ovens And Oven Temperatures
All my recipes are tested and developed with a conventional oven. I always bake my baked goods on the rack placed in the MIDDLE of my oven. This way the heat coming from the bottom will not burn my baked goods. If you are baking with convection , please adjust the recipes accordingly. Be also prepared that the convection oven can cause your baked goods to dry out quickly and still be raw inside. Be aware that it takes at least 15-20 minutes for a standard American Oven to be fully preheated. I highly recommend investing in an Oven Thermometer.
