I used to make pizzas quite often from scratch before I became gluten free. So I always tried to recreate the effects a pizza oven would give for the best possible outcome. Ive found a pizza steel to be the best option. Ive had other pizza steels that were cheaper, but they were never as good as this one so look at it as you get what you pay for. Theyre great for mimicking the effects of a pizza oven because they conduct heat 20 times better than a stone would. Id also be lost without my pizza peel for launching the pizza into the oven.

Put your pizza steel on the middle rack of your oven and preheat it to 500 degrees F. Allow it to preheat for at least 30 minutes. Heres are the basic step-by-step instructions on how to make this delicious gluten free, vegan pizza crust:

  • Stir together warm water, cane sugar or honey, and yeast and let it proof for 5 minutes.
  • While your yeast mixture is proofing, toss together gluten free flour, salt, and xanthan gum in a mixing bowl.
  • Pour yeast mixture into flour and add some oil. Mix it well .
  • Cover and let the dough rise for 10-25 minutes.
  • Divide the dough in half and spread it out with wet hands onto two pans .
  • Bake for 10 minutes at 400 degrees F and then add your toppings. Pop it back in the oven and bake until cheese is melty.

    Note however, that if you want leftovers you should definitely make double quantities, as this gluten free pizza is so good youll find it hard to not guzzle the entire thing in one sitting.

    What Other Flours Can I Use In This Pizza Crust Recipe

    I have tested this gluten-free pizza crust recipe with Bob’s Red Mill 1-to-1 Gluten Free Flour Blend. It works incredible in this recipe and it’s my other go-to flour blend.

    If you want to mix your own blend for this pizza combine 1 cup white rice flour, ¾ cup brown rice flour, ¼ cup tapioca starch.

    I haven’t tried this gluten-free pizza dough recipe with other flour blends. If you do, please come back and let me know which gluten-free flour blend you used.

    We’ve used this gluten-free pizza recipe several times just this month, and we’ve started passing the recipe on to friends and family member to show them how easy making your own pizza at home can be.

    The whole recipe for the pizza dough can be made up to 3 days ahead of time and stored in a tightly-sealed container in the refrigerator. Its best to work with the dough cold, so youll shape it right out of the refrigerator.

    Be careful not to allow the dough to dry out in the refrigerator, as it will do if your container is not well-sealed. I always use 2 liter plastic Cambro buckets for storing dough, since the seal is perfect. If your dough dries out, it wont rise.

    Ive also used a portable pizza oven when I offer samples at gluten free shows. My favorite so far is the Presto Pizazz® Pizza Oven. This handy gadget is fun to watch in action and takes any guess-work out of rising and baking a pizza.

    Another option is to simply cover a baking sheet with parchment paper sprayed with cooking oil and bake the pizza in a round or rectangular shape on that. Whichever pan or method, this recipe can make a thin or thick crust and will make your whole family happy.

    Particularly when using a regular baking sheet though, dont make the center of the crust too thick or use a very watery pizza sauce, as it will be harder to get that part of the pizza nice and crispy on the bottom.

    How To Make Gluten Free Pizza

    Okay, normally I try to avoid too much spiel before a recipe . However, for this one I want to have a bit of a chat about it before you crack on with the making.

    Firstly gluten free pizza dough does not behave like regular pizza dough. Dont expect to be spinning this dough round your head pizza chef style ! Its a much wetter dough and youll need to work with it slightly differently. So if youve made gluten free before, forget everything and approach this recipe with a blank mind.

    Wet gluten free dough yields a much lighter base and is worth the handling issues. This dough is quite sticky and not the easiest the work with, UNLESS you follow my tips and then it should be quite straightforward :). Youll see in the recipe that Ive included a tip about wetting your hands if you need to handle the dough. With wet hands, youll find the dough doesnt stick to you at all and its much easier to work with.

    Once youve transferred the dough to the baking sheet, a good dusting of flour with absorb the sticky-ness and you can push and spread the dough out with your fingers to form a nice pizza base shape.
