With La Tortilla Factory corn tortillas, we begin talking about our category. Like most of the others in this category, these are thicker, and not flexible until heated.

They do smell and taste heavenly, just like masa. In fact, La Tortilla Factory does have the most flavor of all of them. They’re expensive, though, and not widely available.

I do think that these corn tortillas are truly the best substitute for freshly homemade corn tortillas. So they’re kind of hard to resist.

Here are the other details:

  • Size of tortilla and package: 5-inch diameter tortillas, 8 tortillas per package
  • Price you should expect to pay: $17.95 for 16 on Amazon .
  • Shelf-stable, but refrigerate once opened.
  • Availability: Poor. I can only seem to find them on Amazon.com, and the price is not good.
  • Ingredients: water, stoneground organic yellow corn masa flour, organic guar gum, lime.
  • Heating instructions: Microwave one at a time for 20 to 25 seconds or until warm. Heat one at a time in a medium-hot, ungreased skillet for 10 to 15 seconds per side until warm and soft.

Ol Mexican Foods Xtreme Wellness

Olé Mexican Foods developed The Xtreme Wellness product line to provide healthy options to those already fans of the Olé Mexican Foods’ products. Suppose you have dietary restrictions or are on the search for diabetic-friendly tortillas. In that case, these products are carb-lean, low-calorie, and offer a low GI load.

Similar to our previous healthier tortillas, these fell to the bottom list. The product offerings in this line are limited. Unlike the traditional flour and corn options, we often see with Tortilla brands, Olé’s Xtreme Wellness line does not offer either. The variety provided includes Spinach & Herbs, Sprouted Grain, Whole Wheat, and High Fiber. For your next burrito night, I would classify these more like a wrap than a tortilla. We found they tend to stick together too, so be extremely careful when prying them apart.

Overall, these healthy tortilla wraps do not lack flavor. If you are looking for a healthier alternative, better ingredients, and aren’t married to the traditional flour or corn options, these are pretty good options.

Form The Tortilla Dough:

  • In a bowl take the sourdough starter from the fridge, measure 3/4 cup and put the rest back. If yours is on the thinner side, add a bit of more flour , to thicken up. To that, add psyllium husk and the sweet potato mixture, mix well and let it rest covered for 10 minutes, to absorb the moisture.
  • Stick with gluten free sourdough starter for great flavor and texture. But if you dont have a starter, the second best options is mixing brown rice flour with warm water or plant based milk . The consistency will be similar to the starter.
  • When ready to cook, add the arrowroot starch , and baking powder your dough should look like a cookie dough. Be careful not to add too much flour or youll have a dough thats harder to roll and end up with dry tortillas.
  • Pre-heat your skillet on medium heat for 5-7 minutes.

Choosing The Right Corn Tortillas

Tortilla chips require no special ingredients to make, not even to make them gluten free. Gluten free tortilla chips are just corn tortilla chips made from you guessed it corn tortillas.

Your local grocery store sells corn tortillas next to the flour tortillas in the ethnic or Hispanic food aisle, and they are usually dirt cheap. Here in Chicago, yellow corn tortillas are locally made and go for about $0.75 per package. You cant beat that.

But dont just grab corn tortillas make sure you read the ingredients carefully to ensure they are gluten free. Some of the larger brands sell corn tortillas that are made from a mix of corn and wheat flour. Even if your tortillas dont contain gluten ingredients, depending on how severe your gluten sensitivity , you may need to stick to a certified gluten free tortilla to avoid the risk of cross contamination.

Working With The Gluten

All of my recipes have varying quantities of process photos included in their post. I do this because I hope to answer some of those questions that may pop into your head when you are creating a dish for the first time. Working with dough can often produce those questions! A slicing motion with the spoon will help to evenly incorporate both the flax mixture and the boiling water. Dough is ready to form into a ball when most of the dry ingredients are incorporated. If dough appears too dry, add more hot water one tablespoon at a time. If dough appears too moist, add more rice flour one tablespoon at a time.

Dough is ready to knead when it easily comes together in a ball. The outside will not stick to your hands, and the inside will be the very much the same texture as playdough. It will look moist but easily maintain its form.

La Banderita Corn Tortillas

La Banderita corn tortillas are absolutely the softest packaged corn tortillas I’ve ever seen . I honestly don’t think you really need to heat them at all before eating them unless you want to heat whatever you’re putting inside of them.

They do have a slightly unpleasant aftertaste, though. They’re my 4th choice of any tortillas in this category for that reason. But it’s truly amazing how pillow-soft they are!

If you’re strictly gluten free , you might hesitate before purchasing La Banderita corn tortillas. The package states that they are made in a facility that also processes wheat . We haven’t ever had a problem with them, but please make the choice that is best for your family.

  • Size of tortilla and package: 5-inch diameter tortillas, various package sizes
  • Price you should expect to pay: $3.30 for 20.
  • Shelf-stable when unopened, but only closes with a twist-tie. Refrigerate after opening.
  • Availability: Good. In my local area, La Banderita used to be more widely available, much like Guerrero. Lately, they’ve become a bit harder to find.
  • Ingredients: whole grain corn, water, gums, preservatives , lime.
  • Heating instructions: warm one tortilla at a time in a pre-heated skillet.

Are All Tortilla Chips Gluten Free
