For years and years , Id used this gluten free pie crust recipe almost exclusively for single and double crust pies alike. And its still one of my favorites. But this extra flaky gluten free pie crust?

This perfect pie crust is giving my regular, go-to gluten free pie crust a run for its money. It rolls out so beautifully and is just effortlessly flaky. Like all pastry-baking, you just have to be sure to keep everything cold cold cold while youre working with it.

How Much Xanthan Gum Do You Need

The amount of xanthan gum you need to use depends on two things: what youre making and whether or not your gluten free flour blend already contains xanthan gum. In my own gluten free recipes, I use blends that dont contain xanthan gum this allows me to tailor the amount of xanthan gum very precisely to each individual recipe .

However, many people prefer gluten free flour mixes that have xanthan gum already added. Generally speaking, commercial gluten free flour mixes contain about 1/4 teaspoon of xanthan gum per 120g . So, if youre using a gluten free flour mix that already contains xanthan gum, youll need to decrease the amount of xanthan gum in my recipes by 1/4 teaspoon per 120g of gluten free flour blend.

    Wrigley manufactures the following brands which are all gluten free.

    • Trident

    Hersheys manufactures Bubble Yum chewing gum in six flavors. While they do not maintain a list of gluten free products, they do not use gluten in any of their artificial flavors and will call out any gluten ingredients or gluten-derived ingredients right on the label.

    The Role Of Xanthan Gum In Gluten Free Baking

    In gluten free baking, xanthan gum acts as a binder a gluten substitute that holds the bakes together, prevents them from being too crumbly and greatly improves their texture. It gives them elasticity, extensibility and flexibility, and its all down to its hydrocolloid properties and its ability to form a sticky gel.

    Note that xanthan gum isnt a 1:1 gluten substitute and it most certainly doesnt give the same degree of elasticity as gluten. However, in the case of cakes, muffins, cookies, brownies and similar, thats not a problem at all. After all, you dont need much elasticity in your average sponge cake. You just need enough binding power to prevent it from being too delicate or crumbly. And thats exactly what xanthan gum provides.

    All that said: xanthan gum isnt the best binder for gluten free bread. There, its psyllium husk thats the star of the show its the ingredient that allows gluten free bread to be kneaded and that gives gluten free dough enough extensibility to be able to proof properly. Xanthan gum still has its uses in gluten free bread , but its more of a helping hand rather than the heavy-lifter.

    Finally, xanthan gum also helps with moisture retention in gluten free baking: it basically helps to make your bakes moist and keeps them that way for longer.

    So, they are in no way related and have no direct interaction or effect on each other. Just because, for example, your gluten free flour blend contains xanthan gum, that doesnt mean that you need to change the amount of baking powder or baking soda in the recipe in any way. Okay? Okay.

    Why This Gluten Free Pie Crust Is Different

    My basic principles of flaky pastry-making remain the same. Begin with relatively large chunks of butter , coat them in dry ingredients and then flatten them between your thumb and forefinger.

    That way, when the butter melts a bit as youre working with the pastry, it will firm back up when you chill the shaped pastry. This time, though, rather than using ice water to bring the dough together, its sour cream. Sour cream adds a tenderness to the dough that is like nothing else.

    Be sure to lift the pie crust up and into the bottom and sides of the pie plate rather than attempting to stretch it. Thatll keep it from shrinking during baking.
