How To Create Air Pockets In Almond Flour Bread

Recipes Using Low Carb, Gluten-Free Nut Flours

Some people ask why low carb bread doesnt rise like wheat bread. Unfortunately, almond flour just doesnt work the same way as wheat flour. But, you can still do everything you can to help this bread rise:

  • Create air in the batter before baking. Mix it very well, aiming to create air bubbles! You can even try a hand mixer if you want to, though its not required. But overall, the more you mix the batter, the better it will rise.
  • Use fresh baking powder in the low carb bread recipe. If its older, it wont work correctly.
  • Buying Guide For Best Gluten

Gluten is a catch-all name for the proteins found in wheat, rye, and barley. For those who choose to follow gluten-free diets, either by choice or for health reasons, it can be challenging to find a suitable alternative to wheat flour, which is present in many foods. Thankfully, gluten-free all-purpose flour reopens the door to home cooking and baking.

Gluten-free all-purpose flour is typically made from a creative mixture of ingredients, including tapioca, rice, or sorghum flour. While theres no official combination recipe for these flours as recipes vary widely among manufacturers they all aim not only to be gluten-free but also to be produced on gluten-free equipment.

Of course, cooking with gluten-free all-purpose flour comes with a different set of rules. Recipe balancing, substitution ratios, and trying out different combinations all come into play.

Does Gluten Free Pasta Have Carbs

If youre wondering if gluten free pasta is lower in carbs, the answer is no.

Generally, a gluten free penne pasta has around 44 grams of carbs per 56 gram serve. Regular wheat pasta has about 18 grams. Gluten free flours can be very high in overall carbohydrates so when they are made into products, the carbs will follow.

    Try The Cyclical Keto Diet

One type of ketogenic diet, the cyclical keto diet , allows for more wiggle room with carbs, adding in 24-48 hours of carb-loading every week or two. However, the CKD is only recommended for athletes who train at a high intensity and need their glycogen stores replenished. Thats probably not most of you reading this.

If too many carbs are eaten out of this carb-loading window, theres a good chance youll be kicked out of ketosis and your body will start looking for carbs as fuel again.

If your goal is to remain in ketosis, the best option would be to use low-carb flours such as coconut flour or almond flour. These options are perfect for baking your favorite sweets while keeping your carb intake low.

Try this low-carb pizza crust or these low-carb gingersnap cookies made with coconut flour and almond flour.

During ketosis, your metabolism is literally being altered, where your body then looks for fats for fuel instead of carbs.

So as you can imagine, getting back into ketosis can be a huge pain in the you-know-what for some people. This is why its better to simply avoid flour in your diet and save yourself the headache.

Low Carb Almond Flour Bread Ingredients

Low Carb Gluten Free Baking Flour

The pleasant surprise about this low carb bread recipe was that it worked out with only five ingredients :

    • Blanched almond flour The kind you use here is important. It needs to be super fine almond flour like this to achieve the right texture.
    • Psyllium husk powder Some brands can turn gray or purple when baking, so I recommend this one for consistent results.
    • Baking powder I always use gluten-free, but any kind will work.
    • Sea salt
    • Eggs Be sure you use large not medium, extra large, or jumbo.
    • Coconut oil You can also use butter instead, in the same amount.
    • Warm water This helps the psyllium husk bloom, since it absorbs moisture.

The combination of texture, taste and only a handful of ingredients all make this the best low carb bread in my book.

Keep In Mind That When You Use A Flour Alternative You May Need To Adjust Your Recipe

Sometimes this is because of the texture of the flour alternative. However, recipe adjustments are called for when a flour has no gluten in it.

If you have read my guide about how to bake with sugar alternatives, you probably remember that there are some adjustments that need to be made when we substitute for sugar.Sometimes when we use sugar alternatives we need to adjust the baking temperature or liquid volume in a recipe.Baking with flour alternatives is similar in that we may need to make adjustments when we use a gluten free flour. Usually the adjustments have to do with the lack of gluten in many flour alternatives.

There are some flour alternatives that are low carb/keto friendly and that are also gluten free. This means that we may need to make adjustments in the recipes that we are using them in.

Can I Eat Keto Bars And Low

You may ask yourself, why would you want to make homemade low-carb baking when you can just buy it instead? Because many low-carb products have been found to contain ingredients that are actually high-carb in disguise.

Despite these products being sold as low carb or keto, they often tend to be highly processed and may contain wheat, gluten, and corn. They often contain certain sugar alcohols that are not keto-friendly and will raise your blood sugar, despite being low-carb.

By making your own low-carb baked goods, you can control exactly what goes in . You can control the sweeteners and the carb value so that you ensure you stay within the daily carb limit of your keto diet.

Is There A No Carb Flour

Unfortunately, most low carb flours are made from nuts and seeds. And all nuts and seeds contain some carbs. Thats why the keto flours in this list are low carb rather than no-carb. Theres a full roundup of the net carbs in nuts and seeds here.

However, konjac flour or glucomannan is technically a no carb flour. Its essentially all fiber, which doesnt count towards your daily carb intake. In other words, it has no net carbs!

But it doesnt behave the same way as almond flour or regular flour. So when youre using it in your baking, youll have to combine it with other low carb flours to get the results you want.

How To Make Low Carb Bread With Almond Flour

Gluten free Coconut flour BREAD recipe | low carb and dairy free aswell

This almond bread recipe is super easy! Just a few easy steps:

    • Prep. Preheat the oven and line a loaf pan with parchment paper.
    • Stir dry ingredients. These would be almond flour, psyllium husk powder, baking powder, and sea salt.
    • Add wet ingredients. Add the eggs, melted coconut oil, and warm water.

TIP: Mix well here to create air bubbles! This will help your bread rise.

    • Bake. Transfer the batter to the baking pan, round out the top, and bake until the top is crusty and an inserted toothpick comes out clean.

TIP: It will pass the toothpick test before its completely done, so make sure the top is very crusty, too.

Let your keto almond bread cool completely before slicing it, which will allow it to set inside.

How To Make Sure Your Low Carb Bread Recipe Is Done

The only really challenging part about this low carb bread recipe is knowing when its done. It will look done before it actually is! And if you take it out too soon, it will fall and worse, it will be gummy inside.

Here are 2 ways to test for doneness:

  • The toothpick test. Insert a toothpick and check if it comes out clean. But, note that this bread will pass the toothpick test before its fully done. So, check with a toothpick and then continue baking for at least 10 more minutes.
  • The crust test. Another way to tell is that the top should get very hard and crusty. Yes, this low carb bread creates a hard crust! I actually love that, and its an important marker of the bread being done.
  • Oven temperatures vary, so it might take a little experimentation in yours if its not done the first time. But in general, err on the side of more time and not less. You can always cover the top if it starts to burn, though Ive never had to do that.

    Does Almond Flour Go Bad

Almond flour is not particularly sensitive to humidity, with only 10.6% of fiber, but it is sensitive to light and heat that can damage nut oil and flavor. It is better to keep almond flour in a sealed airtight container in the pantry, in a dry, cool, dark area for up to 1 year.

Otherwise, almond flour freezes well in sous-vide bags. If you do so, always defrost the flour 24 hours before using it in a recipe to prevent lumps.

Why Cant I Just Use Regular Flour On Keto

The short answer is its too high in carbohydrates!

You need to keep your carb intake under 25g per day on a Keto diet. Its vital for making sure your body stays in nutritional ketosis. And since regular flour contains lots of carbohydrates, youll just be making things harder for yourself.

Regular flour also contains gluten, which is problematic.

Buy In Bulk For Better Value

You can buy gluten-free all-purpose flour in an individual package, or in bulk quantities. Individual packages are anywhere from 8 to 32 ounces apiece. Its a good idea to stick with individual bags if you dont plan on using gluten-free flour often, especially since gluten-free flour is only shelf-stable for a few months.

If you expect to use a lot of it on a regular basis for daily cooking and baking, youll save big if you buy gluten-free all-purpose flour in bulk. This usually entails buying three to ten packages at a time from a store or seller. The initial cash outlay may make it seem costly, but in the long run, you can end up saving a few dollars per pound.

    How Much To Use

Coconut flour is very dry, and it absorbs large amounts of moisture from food, so it cannot replace wheat flour at a 1:1 ratio.

For every cup of wheat flour a recipe requires, use ¼ cup of coconut flour and one egg.

As an example, if a recipe calls for two cups of wheat flour, you will need to use ½ cup of coconut flour and two eggs.
