The process for making these savory scones is a bit different from my blueberryandcranberryrecipes. In those recipes the butter is grated right into the dry ingredients, but for this recipe, I found that using a food processor created a better texture. The food processor evenly distributes the butter, which is key because of the added weight of the shredded cheese. Heres how you do it:

  • In a measuring cup, whisk together milk and egg.
  • In a food processor, combine flour, cornmeal, sugar, baking powder, salt and granulated garlic. Process until combined.
  • Scatter cold cubed butter over the flour mixture and pulse until the butter is incorporated but you still see pea-sized pieces.
  • Sprinkle cheese and scallions over top, then pulse to incorporate.
  • Pour in the milk and egg mixture, and pulse again until the dough starts to come together – the dough will still look floury but should hold together when pinched.
  • Scrape the dough onto a parchment-lined baking sheet. Gently knead it with the palm of your hand to incorporate any floury bits. Using your hands, press the dough into a ½-inch thick round.
  • Cut the dough into 8 triangles.
  • Spread the scones out on the baking sheet and brush with milk.
  • Sprinkle cheese over the top.
  • Bake until golden brown.

Then, when you place the cold dough in a hot oven, the baking soda will be activated, but thats not all. The chunks of cold fat in the form of butter will expand quickly, pushing out the surrounding pastry dough and causing it to rise.

How To Make Gluten Free Scones

Theres a few simple ingredients in these gluten free blueberry scones.

Thats it, all classic baking ingredients you probably already have on hand, which is why scones are so perfect as a gluten free snack.

Start by mixing together all of your dry ingredients, including the lemon zest.

I love citrus zest, so I have a fancy zester that is my favorite thing ever. You can also use a grater, zester, or just very thinly slice the skin of the lemon.

Then, make sure your butter is cold and get out that grater. If you dont have an old school box grater, I encourage you to grab one, becuase believe it or not, they are super versatile.

You can also dice your butter fienly the firmer it is the better for working with it.

Then, combine the butter and dry ingrdeints, before adding the buttermilk, egg, and vanilla.

Mix until just combined, and add your blueberries mixing gently. Blueberries dont like to be mixed, so if some break and seem like they are bleeding, dont worry about it, it is par for the course.

Now scoop the dough into a center of a parchment lined pan, and shape it like a circle.

Now, were going to make indents for eight slices of scones, but not cut them all the way through, this will make them easier to seperate later.

You could cut them all the way and bake them indicvidually, but if you are new to gluten free baking, you may want to bake it as a whole, the dough is very delicate and takes some getting used to.

King Arthurs new pancake mixes feature three just-add-water recipes and one new gluten-free mix.

The Classic Buttermilk Pancake Mix is made with wheat flour, malted barley flour, buttermilk, brown sugar and cane sugar. Each two-pancake serving contains 160 calories, 5 grams of protein, 1 gram of fiber and 4 grams of sugar.

The Carb-Conscious Pancake Mix, designed for those following keto or low-carb diets, contains 4 grams of net carbs per serving. Copycat Gluten Free Flour Mixes

I have created the following copycat gluten free flour mixes to work as cup for cup substitutes in most regular baking recipes and in any recipes on this website. These mixes will also work in recipes calling for Bobs 1:1, King Arthur Measure for Measure, Better Batter, Doves Farm and Cup for cup. If you usually use a blend not mentioned here, check the ingredients list and pick the blend that is closest.

Gluten free baking doesnt have to be overly complicated to yield great results. Having one or two flour blends that will work for all of my recipes is a big part of this. I have had great success using Bobs Red Mill 1:1, King Arthur Measure for Measure, Cup4Cup and Better Batter blends. However, I know that many people prefer to blend their own flours in order to control the quality of the ingredients for example, using organic flours.

I have created the following copycat gluten free flour mixes to work as cup for cup substitutes in most baking recipes and in any recipes that the above mentioned flours are used in.

The only difference between the two blends is that one contains sorghum and one does not. Sorghum adds a touch of a wheat like flavor and is slightly heavier than the mix without it.

I generally uses Bobs Red Mill flours to create my blends because they are readily available in most supermarkets in the states and are not overpriced. You can find organic versions of all of these flours on Amazon.

Recipe Step By Step Directions:

Set the oven rack to the middle position. Preheat the oven to 350º F.

Step 1: Add the gluten free flour, sugar, and sea salt to a large mixing bowl and whisk to blend the dry ingredients together.

Step 2: Add cold butter chunks to the flour in the bowl.

Step 3: Use a pastry blender to cut the butter into the flour. The best way to do this is to keep cutting the butter chunks until they are small pebble-sized bits.

Cutting cold butter into the flour is a very important step in both making scones and biscuits. When the tiny chunks of butter melt, they make those popular little flaky layers.

Step 4: In a small bowl, add the egg, non-dairy milk, and vanilla extract. Whisk the wet ingredients to blend them together.

Step 5: Pour the wet ingredients into the dry ingredients and mix them into a soft dough.

You can also use a standing mixer with the paddle attachment to make the dough but do not add the blueberries to a stand mixer or they will get crushed.

Step 6: VERY carefully fold the blueberries into the gluten free scone batter. I use my hands for this step so the blueberries are not all smushed. I find blueberries can hold up to this, some fruits that are very soft, like raspberries, do not hold up.

Step 7: Roll out your dough to 1-inch thickness. You will need to add ¼ cup of additional flour to work the dough depending on what gluten free flour blend you use. I put some down on my wax paper, and dust it on top as I roll to work it in.
