Step 1: Rice the Cauliflower

  • Chop the cauliflower into chunks, and then put the florets into a food processor. Pulse the processor until the cauliflower is broken down into rice-sized pieces.
  • Be careful not to over process the cauliflower into too small of pieces. Similarly, too large of pieces wont stick together well in the cauliflower pizza crust.

Step 2: Cook the cauliflower

  • Place the cauliflower rice in a microwave safe bowl and microwave it for 4-5 minutes
  • OR put it in a steamer and steam it over medium high heat for 15 minutes on the stovetop.

Once the cauliflower is steamed, cool it for at least 15 minutes. Then, place the cooked cauliflower rice into a bowl that is lined with a thin towel or piece of cheese cloth. Twist the towel over the cauliflower, and squeeze the excess liquid out of the cauliflower. *Out of this amount of cauliflower, you should expect to get nearly a cup of water.

Step 3: Add the cauliflower and the rest of the crust ingredients into a mixing bowl.

Step 4: Stir until the eggs fully coat the cauliflower mixture.

Step 5: Form your pizza crust on your chosen pan.

Step 6: Bake the pizza crust at 425º F for 30 minutes. Allow the crust to start to brown and then continue cooking for a few more minutes. Dont worry about over-cooking this crust. It will get sturdier and more crunchy on the bottom the longer it bakes.

To Freeze A Cauliflower Crust Or Reheat Leftovers:

To freeze: Follow the directions through pre baking the crust, but do not top the crust with any sauce or toppings. Wrap the pizza up tightly in plastic wrap or if its small enough, in a gallon sized zip lock bag. Freeze the crust for up to 3 months. To use the crust, allow it to thaw, and then bake it for 5 minutes before topping it and returning it to the oven to melt the cheese.

Reheat Leftovers: Cauliflower pizza is actually delicious cold, but its more like a casserole than pizza when cold.

To reheat it and enjoy it like its fresh again, preheat the oven to 450º, and return the pizza to the oven for about 10 minutes to remelt the cheese and crisp up the bottom of the crust again.

The next step is crucial! Transfer the riced cauliflower into a large bowl. Microwave the cauliflower for 5 minutes. This helps seam the cauliflower and will later help in extracting the moisture. If you prefer, you can line a baking sheet with parchment paper and bake the cauliflower in the oven for about 10 minutes to steam.

Now, transfer the steamed rice cauliflower to a cheesecloth clean dish towel. I like to let the cauliflower rice sit in a bowl lined with a cheesecloth, lightly salt the cauliflower, and let the moisture begin to seep as I prepare the other ingredients . Then, take the cloth and squeeze as much moisture out of the cauliflower as possible. You should squeeze out at least 2/3 cups. Drain as much liquid as possible

Next, grab a clean, dry large bowl and add the cauliflower, gluten-free flour, baking powder, eggs, Italian seasoning, salt, and pepper. Mix the ingredients using a spatula. Form a ball with the dough and place it on the parchment-lined baking dish.

Place a sheet of parchment paper on top of the dough. Using your hands, gently press out the pizza dough into a circle. The dough should be about 1/2 inch to 1 inch thick . Remove the top layer of parchment paper and the dough is now ready for the oven! Place the dough in the oven and bake for 15 minutes, or until the edges become a golden brown.

I never thought to make pizza dough with vegetables, but I am now convinced that its possible to satisfy any crusty cravings with this recipe. With a little ingenuity, Ive achieved a chewy, tender, bread-like textureand it doesnt crumble to pieces when you pick it up.

I use a combination of raw cauliflower, corn flour , eggs, olive oil, salt, cornstarch, and Parmesan cheese. All of these ingredients are commonly found in grocery stores. Just make sure you look for the finer milled corn flour and not cornmeal. Otherwise, the dough wont hold together as well.

Once you have all the ingredients, this crust is really easy to pull it all together!

Tips For Baking This Pizza Deep Dish Style

There are a few steps to follow to make this crust.

  • Prepare the cauliflower dough, and press it into a hot cast iron pan to form a deep dish crust shape.
  • Continue cooking the crust on the stovetop for about 7-10 minutes, until you see the edges of the crust browning.
  • Slide the cast iron skillet and crust into the oven to bake for 25 more minutes. This leaves a mostly-cooked crust that is a little crunchy and brown on the bottom and around the edges .
  • Top the pizza any way youd like sauce, cheese, veggies, or even pepperoni and salami. Make it your own!
  • Slide the pizza back into the oven for 10-14 minutes, depending on how many toppings you added. A cheese pizza will bake in 10, one loaded with veggies will take about 14.

    While you can go the classic marinara and mozzarella cheese route, I highly recommend getting a little more creative with your toppings after all, this isnt a traditional pizza.

    My personal favorite combination is BBQ Chicken. Simply spread your favorite barbecue sauce over the crust, add diced grilled chicken thats also been tossed in barbecue sauce, sliced onion, and shredded mozzarella cheese. Garnish with sliced green onions.

    Besides the fact that barbecue sauce makes almost anything better, the balance between the savory cauliflower crust and the sweet barbecue sauce is addictingly good.

    I also made a vegetarian Mediterranean-style pizza by drizzling olive oil and garlic over the crust and topping with sun-dried tomatoes, chopped artichoke hearts, feta cheese, and mozzarella.

    As much as I loved all the cheese, it would have been even better with a drizzle of tzatziki sauce or even lemon juice for a little zing.
