Strawberry Banana Granola Yogurt Parfaits

Again, with this one, be sure your oats are certified gluten-free and not processed with gluten-heavy products.

If you do that, then youll be able to have this sweet, tangy, and crunchy snack anytime you like.

Thanks to the yogurt, nuts, granola, berries, and other toppings, this one is also unbelievably filling.

You can adjust this parfait to suit your tastes, as well. If you prefer blueberries to strawberries, swap it up.

The possibilities for homemade soft granola bars are nearly endless! You could make a different batch every week for months without running out of flavor combinations! All you need is about 1/2 cup mix-ins for each batch. Some of our favorite combinations are:

  • Chocolate + Dried Cherries = 1/4 cup dried cherries + 1/4 cup chocolate chips
  • Coconut + Macadamia Nut = 1/4 cup unsweetened shredded or flaked coconut + 1/4 cup chopped macadamia nuts
  • Chocolate Strawberry = 1/4 cup chocolate chips + 1/4 cup chopped freeze-dried strawberries
  • Vanilla Almond & Sea Salt = Sub 2 Tbsp. honey for maple syrup + 1/3-1/2 cup sliced almonds + 1/4 tsp coarse sea salt
  • Coconut Chocolate = 1/4 cup unsweetened shredded or flaked coconut + 1/4 cup chocolate chips +1/4 tsp coconut or almond extract
  • Cherry Almond = 1/4 cup dried cherries + 1/4 cup dried almonds + 1/4-1/2tsp. almond extract.
  • Trail Mix = 1/4 cup mixed dried fruit + 1/4 cup mixed nuts & seeds
  • Monster Cookie = 1/4 cup peanuts + 1/4 cup M& M candies
  • Cranberry Almond = 1/4 cup dried cranberries + 1/4 cup sliced almond
  • Chocolate Hazelnut = 1/4 cup chocolate chips + 1/4 cup chopped hazelnuts
  • Cinnamon Raisin Cookie = 1/2 cup raisins + 1/2 tsp. cinnamon
  • Mixed Berries = 1/2 cup diced freeze dried berries, such as strawberries + raspberries + blueberries

Store these yummy bars in the fridge, covered for up to a week.

We like to freeze them in a single layer then store them in reusable silicone bags. I use parchment paper in between the layer.

  • Line an 8×8 baking pan with parchment paper.
  • In a small bowl, combine oats + salt. Set aside.
  • In a double boiler , gently melt together nut butter + sweetener of choice. Do not over heat. Remove from heat.
  • Add oats to wet mixture + mix until well incorporated. Fold in seeds + chopped dried fruit, adding in an extra add-ins. Mix again. For my salt lovers, adjust for salt.
  • Press mixture evenly + firmly into prepared baking pan. Place in fridge to set for at least 2 hours.
  • Cut into desired sized bars + enjoy. Store covered in fridge for up to a week or freeze for later.
  • Do I Have To Bake Them

    During the summer, not everyone wants to heat up their house to bake granola bars.

    As much as I love a good no bake recipe, popping the baking pan into the oven for just 15-20 minutes helps the granola bars hold together without crumbling apart at room temperature.

    But if youre trying to avoid turning on the oven, you can certainly choose some of the delicious no bake granola bar recipes. But be sure to store them in the fridge until youre ready to eat them so that they hold their shape and dont fall apart.

    Are you ready to make these homemade gluten free granola bars? Gather up your ingredients.

    Step 1: Add all of your dry ingredients to the bowl. This is the oats, seeds, nuts, dried fruits, etc.

    Step 2: In a microwave-safe dish, add the nut butter and honey. Microwave 15 seconds to soften.

    Step 3: Mix the warmed honey, peanut butter, coconut oil, and vanilla together.

    Step 4: Pour the wet ingredients into the dry ingredients.

    Step 5: Mix the ingredients well.

    Step 6: Line a cookie sheet with parchment paper. Pour the granola bar mixture onto the parchment paper.

    Step 7: Use a big flat spoon or glass and press the granola mixture down flat. Cover it with plastic wrap and put it into the refrigerator to chill for 1 hour.

    Step 8: Slice the bars and enjoy! Store the bars in an air-tight container in your refrigerator.

    Tropical Traditions sent me a jar of their gluten-free organic brown rice syrup to try. My first thought was either to use it in an ice cream or in a baked dessert. Brownies, I thought! Oh, I couldnt get them out of my mind! I already have a couple of gluten-free brownie recipes, however, I really was looking forward to making a healthier one, and one that was super gooey! I converted it to gluten-free brownie recipe and 1 1/2 timesed the recipe, as it originally made such small brownies. So, here it is my newest gluten-free brownie recipe. Its ooey, gooey, sticky and tastes almost like a chocolate caramel. I added a bit of flaxseed meal to make it a little more healthier, but using organic brown rice syrup was such a great start. Brown rice syrup may look like agave, but is barely sweet, and especially when this recipe is made with bittersweet chocolate. Definitely a decadent delight. Enjoy!     The result is my favorite homemade granola bar recipe, one of my favorite gluten free breakfasts and quick snacks. The combination of partially processed rolled oats and oat flour creates just the right texture and helps the bars hold together while maintaining their chewiness.

    The delicate balance of mini chocolate chips and dried fruit keeps things interesting. And a mix of honey, maple syrup and molasses, plus brown sugar, provides just the right sweetness without becoming cloying. And all of that moisture keeps them chewy even once youve browned them nicely in a moderate 325°F oven.

    I almost always double the recipe, and bake them in two separate square pans to ensure proper browning. You can also make a double recipe in a 9-inch x 12-inch baking pan. Try baking the bars for about 35 minutes, and then turning down the oven to 300°F and continuing to bake until the center is lightly browned and set. Before removing the bars from the pan and cool on the counter for 20 minutes and then chill in the refrigerator.

    Add all paleo snack bar dry ingredients, except chocolate, into a large bowl and stir. Add all wet ingredients into a medium bowl and whisk until well mixed. Combine the dry & wet ingredients, folding until well mixed. Pour into a prepared pan & bake. Cool & slice paleo snack bars. Drizzle with chocolate and enjoy!

    LEMON BARS | easy, healthy, gluten-free lemon bars
    • Line an 8-inch by an 8-inch baking pan with parchment paper.
    • In a large bowl, stir together the peanut butter, honey, pure vanilla extract, cinnamon, and salt, until smooth.
    • Add the gluten-free quick oats and mini chocolate chips. Stir until fully combined. The mixture will seem dry at first, but itll come together.
    • Press the mixture firmly into the pan with your hands or a spatula. Use the back of a ¼ measuring cup to help flatten the mixture.
    • Cover with plastic wrap and chill for at least 1 hour, then slice into bars.
    • Store the cut bars in an air-tight container and refrigerate.

    PACK THEM DOWN! My #1 tip for helping no-bake granola bars stick together and have great texture is to pack them down. Press down firmly with the back of a flexible spatula. Then do it again. Seriously. The more you pack them, the better theyll hold together!

Steel-cut oats wont work at all, since theyre too hard and chewy to eat raw.
