As I said, theres a little xanthan gum in self-raising flour already that will help to replace the gluten in regular flour. So in a sense, yes you can skip adding more xanthan gum, though I always make mine with it just to be safe. It really helps the texture!

But if you wanted to make this with gluten free plain flour and no xanthan gum, then youre on your own I wouldnt recommend it!

Gluten Free Mini Pizzas Ingredients

There’s a full printable recipe card below, but for the shopping list you’ll need:

  • 200ml milk
  • 1 heaped tsp sugar
  • ½ tsp salt
  • 2 tbsp olive oil

I always use the FREEE gluten free white bread flour, but if you can’t find this you want a gluten free flour blend which includes rice, potato and tapioca flour.

The recipe will work with a plain gluten free flour blend or all purpose mix but it will be a thousand times better with the bread flour!

The xanthan gum is important as this helps to provide some of the stretchy texture you’d normally get from the gluten.

If you want to make this recipe dairy free or vegan, then you can replace the milk with water or a dairy free milk.

I do find you get a better result using milk – and the pizza tends to keep and reheat better.

But it does still achieve a delicious result with water, it’s pretty similar to my gluten free focaccia bread recipe.

Making And Baking The Real

Making the actual pizza dough is as easy as anything. Well mix together the lukewarm water, olive oil, sugar and yeast, and then add it to a mixture of gluten free flour, xanthan gum, salt and baking powder. Then well mix mix mix. The resulting dough is sticky and thats okay. Gluten free doughs require more moisture, both in order to rise and to prevent drying out too much during baking.

I usually transfer the sticky dough onto a flat surface and do this weird thing with the bench scraper where I essentially spread the dough onto the surface, scrape it off, and repeat for about 2 minutes. Theres two reasons for this: its a dough and therefore in my mind it needs kneading, no matter how unnecessary that is with a gluten free dough, but more importantly it ensures that the dough is super smooth.

The proofing time depends on how warm your kitchen is 2 hours if warm and cozy, 3 hours if its miserable and cold. The dough wont double in volume, so dont waste time waiting for it to happen. It will increase a bit, but nowhere near as much as a wheat-containing dough. Thats alright. Dont stress. Mmkay?

Then comes the fun bit. Shaping the pizza and ALL THE TOPPINGS!!! I went simple with my pizza but you can go as crazy as you want.

Also, theres no need to pre-bake the crust or any silly things like that. Basically, treat this gluten free pizza dough as you would any ol pizza dough. Its cool like that.

Can I Make This Recipe Using Other Gluten Free Flours Like Buckwheat Flour Or Coconut Flour

Gluten Free Stuffed Crust Pizza  a real family favourite

Theres a big difference between gluten free self-raising flour and a *singular* type gluten free flour. When I say gluten free self-raising flour in a recipe, I mean a BLEND of gluten free flours, not just one, singular flour.

Most gluten free flour you buy in the supermarket typically contains a blend of rice flour, potato flour, maize flour, tapioca flour AND buckwheat flour. Thats a lot of different flours!

So to replace it with just one specific type of flour thats not going to cut it at all. Definitely go for a gluten free flour blend.

Can I Make This A Vegan Stuffed Crust Pizza

Yes! The base is already vegan, for the pizza in the photos I added pepperoni as this was going to be eaten by myself and my daughter Bethany. Remember, I am not vegan, but I am dairy and egg free, whilst Beth is the Coeliac.

Which Yeast Is Gluten Free

I am based in the UK and there are several yeast products here which are gluten free and readily available.

I always use either the Allinson’s Easy Bake Yeast or the Dove’s Farm Quick Yeast.

You can also use the Allinson’s Time Saver Yeast, though be aware that you may not need to prove the dough for as long if you use this.

All of these yeasts are gluten free in the UK.

The Dove’s Farm one is certified gluten free and found in the free from aisle.

The Allinson’s yeasts are free from gluten and can be found with the ‘regular’ baking goods.

This is the BEST gluten free pizza dough recipe! Its so easy to make, perfectly chewy and requires no kneading. Plus, this crust can be frozen for easy dinners throughout the week!

My go-to gluten free pizza dough! This crust recipe requires no kneading, is totally freezer friendly and can be made into a thick or thin crust depending on what you like!

It only requires about 15 minutes of prep time, plus an hour to let the dough rise and then youre good to go! Pizza was one of those foods I missed most when I was diagnosed with Celiac, and while I love a cauliflower crust every now and then, sometimes you just need something that more closely replicates the real deal.

This crust is thick and chewy and will definitely become a regular in your meal rotation!

You can keep it in the freezer in an airtight container for up to 2-3 months with or without toppings.

When you want to eat it, you can cook it straight from frozen by placing it into the oven on a baking tray at 200C for 10-12 minutes. Again, when its got back its crisp exterior, its ready to eat!

How Long Can I Keep Your Gluten Free Pizza Base For

Theyre best eaten fresh as they will start to lose their crisp, freshly baked exterior unless eaten a few hours after baking. However, you can keep them in an airtight container in the fridge for up to 3-5 days before topping them.

Then when you want to enjoy one again, simply reheat in the oven at 200C for 5 minutes. When theyve got back its slightly crisp exterior, theyre ready to top!

So Whats The Deal With Gluten

A gluten-free diet is a diet that excludes gluten, a protein composite found in wheat, barley, rye, and all their species and hybrids. The inclusion of oats in a gluten-free diet remains controversial.

Gluten causes health problems for those with gluten-related disorders, including celiac disease , non-celiac gluten sensitivity , gluten ataxia, dermatitis herpetiformis and wheat allergy. In these patients, the gluten-free diet is demonstrated as an effective treatment. In addition, at least in some cases, the gluten-free diet may improve gastrointestinal and/or systemic symptoms in diseases like irritable bowel syndrome, rheumatoid arthritis, multiple sclerosis or HIV enteropathy, among others. Several studies show that about 79% of the people with coeliac disease have an incomplete recovery of the small bowel, despite a strict gluten-free diet. This is mainly caused by inadvertent ingestion of gluten. People with poor basic education and understanding of gluten-free diet often believe that they are strictly following the diet, but are making regular errors.

Ive also used a portable pizza oven when I offer samples at gluten free shows. My favorite so far is the Presto Pizazz® Pizza Oven. This handy gadget is fun to watch in action and takes any guess-work out of rising and baking a pizza.

Another option is to simply cover a baking sheet with parchment paper sprayed with cooking oil and bake the pizza in a round or rectangular shape on that. Whichever pan or method, this recipe can make a thin or thick crust and will make your whole family happy.

Particularly when using a regular baking sheet though, dont make the center of the crust too thick or use a very watery pizza sauce, as it will be harder to get that part of the pizza nice and crispy on the bottom.

The cheese in the crust must be grated cheese. I tried using everything from cheese sticks to chopped and matchstick-style cheese before finally realizing that grated cheese was best.

The bits of grated cheese have built-in air pockets which prevent it from building up too much steam in the oven, and the steam build-up is what causes the cheese to exit the crust.

Rolling the crust thicker in the center and thinner at the edge. That way, the stuffed crust isnt too thick and the center holds. Take that, Pizza Hut!

Yep, this is a nut-free recipe as far as ingredients go, BUT make sure you check the ingredients label on ALL the products you use just to be safe.

Even if the products dont contain nuts, they may have a may contain nuts warning due to being produced in a factory that handles nuts.

You can never be too careful so always read the labels on everything first.

This recipe makes 1 gluten free stuffed crust pizza. Dave and I have very good appetites, but find one of these between us fills us up, as with the thick crust its quite filling. But, leftovers from the pizza do keep nicely , so you can always double the recipe to be on the safe side :D.

One piece of simple kit I would recommend, is a silicone baking mat. You can use non-stick baking paper to assemble your pizza, but the baking mats are much sturdier and are reusable too.

How To Make Detroit Style Gluten Free Pizza Crust

Begin with making your dough. This dough is slightly different from other gluten free pizza crusts out there in that it is a wetter dough, almost batter like in consistency. Dont panic! We want it to be that way.

Start by proofing your yeast and sugar in warm water, somewhere between 100-110F. Let it rest for 10 minutes to activate.

Now add the rest of the water, olive oil, and the egg. Give it a gentle mix.

Pour the gluten free flour directly into the middle of the bowl and dont mix. Add the baking powder to one corner of your flour mountain, the salt to another corner, and the apple cider vinegar to the third corner. We dont want these ingredients to directly come in contact with the yeast mixture as it is too powerful. By using the flour as a medium, everyone is gently incorporated.

Mix all the ingredients together well and dont be afraid if it looks too wet! Cover with a towel and set aside in a warm spot of your house for about an hour.

After an hour, the dough should have risen to double in size.

Preheat your oven to 425F.

Prepare your square or rectangle 8×10 or 9×13 pan with a generous amount of olive oil. Dont forget to go all the way up the sides of the pan.

Place your dough in the prepared pan and gently press to the edges.

Now you begin to top your pizza, remembering to go inside out for authentic Detroit Style Pizza!

Pop it back in the oven for another 12-15 minutes to let the cheese melt.

Remove from the oven and cut into 8 large square slices and enjoy!

Here are the places in Florence that are 100% gluten free. There are several great options, and you could spend your time ONLY eating at dedicated gluten free restaurants in Florence, where you can order ANYTHING on the menu .

Sgrano

We enjoyed Sgrano so much that we actually ended up going back twice. Once for lunch to try their fantastic Schiaccate which are similar to a panini or focaccia sandwich. Once for dinner to try their gluten free pizza, which I think was the best we had in Florence.

The street that its on Via dei Neri is home to a couple of the most famous restaurants in Florence, which all serve up some version of Fiorentian street food . If you have Celiac Disease and want to partake in the phenomenon of hundreds of people plopped on the curb, huge sandwich in hand, this is the place for you.

They have a range of different fillings, though most of them involve some sort of cured meat, which meant Alysha wasnt super excited about them. We tried two, and much preferred the Bomba, which was filled with pancetta , peppers , and gorgonzola with a honey drizzle.

Its worth noting that they only serve the sandwiches at lunch no pizza available.

Their pizza was really good, with a bubbly crust that had a very wood-fired taste. Their base flour blend is a mix of corn, buckwheat, rice, and multigrain flour. And again, everything in the restaurant is gluten free, so the risk of cross-contamination is low .
