Does Going Gluten Free Help Diabetes
Its a common misconception that eating a gluten free diet is better for diabetes.
The major pitfall in this logic is that people go out and choose gluten free products. Essentially these are still processed foods and, sorry to say, many gluten free products have just as much, if not more carbs, sugar and calories, than gluten-containing foods. Therefore, a gluten free diet doesnt instantly mean a better diet.
Take this chart as an example.
When it comes to breads, pastas, crackers, and cookies, the thing to realize is that a processed food is still a processed food. The only difference with gluten free products is the type of flour that is used.
Instead of wheat flour, a gluten free product may use potato, cornstarch, tapioca or rice flour, and these flours are all high in carbs, more than many gluten-containing foods.
Even whole grain gluten free breads contain high carb flours and a long list of ingredients that makes these products denser. This often means youre getting more calories and carbs in a smaller volume of food.
Another negative aspect of gluten free foods is the lack of fiber they contain. Generally, gluten free breads only contain half- to-one gram of fiber per slice. Plus, they are not fortified with B-vitamins either.
To take it one step further though, dont just stop at gluten because eliminating all grains is a great practice to follow for type 2 diabetes and prediabetes treatment!

Does Gluten Free Pasta Have Carbs
If youre wondering if gluten free pasta is lower in carbs, the answer is no.
Generally, a gluten free penne pasta has around 44 grams of carbs per 56 gram serve. Regular wheat pasta has about 18 grams. Gluten free flours can be very high in overall carbohydrates so when they are made into products, the carbs will follow.
Dairy And Gluten Gone Bad
If I told my grandma 25 years ago: Grandma you need to do something about that arthritis and cut out dairy and gluten asap. Shed look at me as if Im crazy and then probably beat me with a stick forcing me to get out of her house. And shed be right.
Every day she had bread and cheese, then something we called porridge which was made out of milk, bread, sugar and butter. And then wed also have our traditional salad which was made out of cucumbers, tomatoes, onion, peppers and something similar to feta cheese that my grandma all grew and made herself. Going Low Carb For Diabetes
Carbohydrates are constantly debated in the world of diabetes. As a Registered Dietitian, Diabetes Educator, and a Type 1 Diabetic, I enjoy carbohydrates, but eating a diet that is constantly high in carbs can cause more of a roller coaster with blood sugar. How I explain this to my patients is although you may have a carb: insulin ratio you feel is working for you, the more carbs you eat, the more room for error you have with taking too much or too little insulin or medication for the carbs you ate.
For Example: Lets say your carb: insulin ratio is 1 unit of insulin for every 10 grams of carbs, but in reality 1 unit covers about 10.6 grams of carbs, and that ratio most likely changes depending on the time of day.
If you just ate 20 grams at a meal, the difference needed in insulin or medication isnt a big deal, but if you ate closer to 100 grams at a meal, you could have a much greater error in the actual amount of insulin or medication needed.
Also, the more insulin or medication in your body, the greater risk for your blood sugar to have a hypoglycemic episode from normal activity such as exercising, raking the leaves, or mopping the floor.

If Your Food Becomes Contaminated With Gluten
Even tiny amounts of gluten may cause people with coeliac disease to have symptoms in the short term and gut damage in the longer term. For this reason, its important that people with coeliac disease make sure that any gluten-free food they are preparing or eating doesnt become contaminated with gluten.
Although oats are safe to eat for most people with coeliac disease, its important that they arent produced in the same factory as wheat, barley and rye, as they can become contaminated with gluten by these grains. Only oats which are uncontaminated can be eaten by people with coeliac disease, who tolerate oats.
However, there are a small number of people with coeliac disease who may still be sensitive to gluten-free, uncontaminated oat products.
