Homemade Gluten Free Bread Recipe Made EASY! (in Bread Machine)

I had always wanted to try making it in a Pullman loaf pan. That was the only way to see if I could get those perfect, no-dome slices that are truly made for sandwiches.

Baking in a Pullman pan also tends to make softer bread. The moisture in the bread is trapped inside the pan during baking, and the bread absorbs it as it bakes.

The photo below is a loaf baked in a 2 pound Pullman loaf pan. The photo above is the bread rising in a 1-pound Pullman loaf pan.

You can make a 1-pound Pullman loaf, or a 2-pound Pullman loaf. The baking time is nearly the same, as the pans are much longer but also considerably more narrow.

Buttermilk Gluten Free Bread Machine Recipe

Wet Ingredients:

  • 1 1/4 cup + 1 tablespoon of milk with 4 tablespoons of dry buttermilk dissolved into it.
  • 3 large eggs, lightly beaten
  • 1/4 cup of canola oil

Slowly and carefully heat the milk so that the liquid texture overall reaches room temperature.

Dry Ingredients:3 1/2 teaspoons xanthan gum1/4 cup sugar1 1/2 teaspoons salt2 1/4 teaspoons active dry gluten-free yeast

  • After slightly raising the temperature of the liquid ingredients to room temp, pour them into the breadmaker.
  • Then mix together all the dry ingredients aside from the yeast and spoon the mixture over the top of the liquid ingredients already in the breadmaker.
  • Sprinkle the yeast over the dry ingredients keeping it away from the edges.
  • Set breakmaker to medium size and light bake.
  • After the bread is done, do not remove it from the pan until any kind of warm cycle has completed and the bread has completely cooled down.
  • Recipe Step By Step Directions:

    Step 1: Add the dry ingredients and whisk to blend in a large bowl.

    Step 2: Add your wet ingredients and blend in a smaller bowl.

    TIP: Many bread recipe directions say you can dump all ingredients in the bread maker. Do not do this! When mixing as many ingredients as is needed for gluten-free bread, you risk the ingredients not getting mixed thoroughly, which can affect how the bread turns out!

    Gluten Free bread cannot be knocked down. It wont rise again very much if you do. Rise for apx 50 minutes.

    Two Things You Must Buy To Make This Bread:

    1) A Bread Machine with a gluten-free setting and that bakes up to 2lb loaves.

    Gluten-free yeast breads do not handle two rises well at all. They need extra mixing time, and only one rise cycle. You need to make sure to get a bread machine with a gluten-free setting as it is programmed for this method. I know of three bread machines brands that have models with a gluten-free setting.

    Some have commented that this bread overflowed in their bread machine. This recipe is scaled for a bread machine that accomodates 2 lb. loaves. If youre is smaller, with room for 1 lb. loaves only, then this will overflow.

    The older bread machine that I have and have used for years in making this bread is . I have had mine for many years now, and for over a year I used it weekly. It has worked perfectly for me. Another, very similar model is available with free shipping with Amazon Prime, Cuisinart CBK-100 2-Pound Programmable Breadmaker.

    There are, Im sure, other models available, but hopefully this gives you a starting place. Just remember to make sure to get one that says it does 2 lb. loaves and has good reviews in regards to mixing well and not burning.

    Gluten-Free Bread in the Bread Machine with Healthy Flours

    This gluten-free bread recipe works best when baked for 60-65 minutes in the oven or on the gluten-free setting in a bread machine.

    Remember to cover your gluten-free bread with foil half-way through baking so it doesn’t over-brown.

    You might read that a loaf is done baking once it hits around 200 degrees F. Please bake this loaf 60-65 minutes even if your thermometer says otherwise.

    Ive been trying to figure out for YEARS how to make a yummy gluten free bread that isnt going to choke my family with its dryness. I tried so many different recipes and they were all flops. Sometimes I would succeed in making a recipe once and then could never make it work again.

    I pretty much gave up.

    And then I found a bread machine on Marketplace and decided that I would give it one more try. I still didnt know if the recipe I put together would work but I had to try. A loaf of gluten free bread in the store here costs about $6 and its such a tiny little loaf that doesnt even taste good. What a rockstar I would be if I could make fresh homemade bread for my family again.

    So I gave it a try and guess whatIT WORKED.

    Then I tried it again the next dayand it worked! A bit more tweaking and Im finally happy with what Ive come up with. Its simple and it makes a tasty bread. Please note that I have NOT tried this without a bread machine so Im not sure about it working in the oven. The recipe you will find below is exactly how I make this recipe work. Gluten free recipes are super picky so I recommend sticking to the recipe for this one.

    This recipe makes a one pound loaf. I would not recommend doubling it.

    Where Do I Find Easy

    You can find easy-bake yeast down the muggle baking aisle. Please ensure its gluten-free! Heres the one I use.

    Easy-bake yeast is perfect for breadmakers as it doesnt need to be activated before using.

    Dried active yeast will NOT work unless activated first, which isnt ideal for breadmakers. So no, definitely dont use dried active for this recipe.

    Tips For Choosing The Right Program

    How to make gluten

    Obviously, and as we have already commented, the selected program is very important. Some bakeries have special programs for gluten-free bread, but not all, so it is essential to keep in mind that:

    • The gluten-free bread does not require long programs since they do not knead too much.
    • It is a good idea to help with a silicone spatula while kneading the corners so that the process is complete.
    • The long fermentation time improves the final texture obtained.
    • You can cancel the kneading phase after the baking of the bakery, since the gluten-free bread does not accept this phase well, so it is good to remove it or reduce it in time to the maximum.
    • Prolonged baking is a good idea as well since it is a wet bread and requires long cooking.

    Storing Gluten Free Sandwich Bread

    This easy gluten free bread recipe produces incredibly tender bread that stores easily on the kitchen counter. Just keep it sealed in an airtight container, and it will last for at least 2 days.

    I also recommend that you dont pre-slice the bread before use. Doing so may cause it to dry out prematurely, so leave the loaf whole and slice as needed.

    There isnt really a universal GF bread recipe that can be made in a bread machine. Each bread machine that comes with a gluten-free bread maker cycle will also include at least 2 reviews for their machine.

    Thus, the first thing you should do is experiment with the recipes included by the machine cookbook.

    After that, once you get completely comfortable with your machine, you can search online for many other GF bread machine recipes. Or you can buy a cookbook, like The Gluten-Free Bread Machine Cookbook by Jane Bonacci.

    A cookbook like that will teach you everything you need to know not only about how bread makers can be used for successful baking but also about GF flours, starches, gums and emulsifiers, flour blends, etc.

    Their recipes also cover everything you might want to bake: basic sandwich breads, shaped breads, rolls, specialty breads, sourdough breads, pizza, focaccia, and flatbread, fruits breads, sweet breads, and things to make with GF breads.

    There recipes dont include only the GF cycle but also the dough cycle for recipes that are finished in the oven. They also address how you should use a machine that doesnt have a dedicated cycle for GF. Its all great.

    How To Make Gluten

    The bread machine with a gluten-free setting is super easy to use.

    • The first step is to put all of your wet ingredients into the pan.
    • The second step is to add all of the dry ingredients, except for the yeast.
    • The final step is to make a little hole in the flour with your finger and then pour the yeast into the center.

    Making gluten-free homemade bread in a bread machine is as easy as that! Just make sure your bread machine is set to the gluten-free mode.

    I have not tried to make bread by hand because honestly, I dont have time for all of that. I just add all the ingredients into my bread machine and walk away until its done.

    Other Ways To Use A Bread Machine

    We briefly mentioned that there are other ways to use a bread machine, some of which arent even for bread! Many bakers simply use the paddle feature to mix their dough. You can do this, and then bake the bread in your oven the typical way, or you can save the mixed dough in the freezer to have on hand for emergencies. Another way bakers love to use bread machines is to make other types of dough, like pizza dough or pasta dough, for instance. Some models can even be set to make other things, like jam or mochi, as well, in case bread is not quite your jam . . . get it? Jam? Oh well . . .

    Tips For Making Gluten

    Here are my tips that work with this gluten-free bread recipe. See below for my gluten free bread machine recipe.

    Don’t substitute anything in this gluten free bread recipe unless I specified above that I’ve tested it. This is important. If you substitute something I can’t guarantee anything and I can’t help you troubleshoot if something doesn’t work in your gluten-free bread.

    Ingredients at room temperature work best. You can always run your eggs under warm water for a couple of minutes to bring the temperature up.

    Read the recipe instruction and get all ingredients out before you start.

    Use dry active yeast or quick yeast. I use Fleischmann’s yeast: it’s labeled gluten-free. I’ve also used Red Star yeast.

    If your bread sinks in the middle before it is done baking you most likely let the yeast proof sit too long before using it or you let your bread rise too long. You want to put your gluten-free bread in the oven when it rises just above the top of the loaf pan, no longer.

    Make sure your water is between 95-110 degrees before adding the yeast. If you don’t have a thermometer I suggest you get one.

    Line the loaf pan with parchment paper and then spray it with oil, this will help you remove the loaf from the pan.

    Pan size matters. If you use a wider pan your loaf will be wider, and shorter. If you use a narrower pan your loaf baking time might change.

    Can I Make It Dairy Free And Vegan

    You can absolutely make this recipe Dairy Free with a simple sub of dairy free milk or milk powder. I have tried making it with both coconut milk powder and also KoKo Unsweetened Coconut Milk with perfect results. I would try and avoid sweetened milk products however.
