Ive heard that theory too Tars, I dont know the science behind it but heres my thoughts: if European wheat was gluten free there wouldnt be any celiacs in Europe right? Because it would be safe for them to eat and they wouldnt be getting sick.I hate to be a cynic but it seems like the food industry is grasping at straws to try and keep us eating gluten since its a very lucrative part of their business.Ive had family members tell me if I just bought some sort of fancy wheat that was grown in Israel Id be fine.
