  • Ive heard that theory too Tars, I dont know the science behind it but heres my thoughts: if European wheat was gluten free there wouldnt be any celiacs in Europe right? Not enough to make a difference for celiacs, but American bread has been selective bred to add more gluten since it makes it easier to bake the soft breads were used to over here .
