Following A Pilot Study Run In Five Cities Papa Johns Has Introduced Its Gluten

Papa John’s gluten-free pizza – is it really gluten-free?

Papa Johns is taking its gluten-free crust, which is crafted using such as ingredients sorghum, teff, amaranth, and quinoa, nationwide. The brands Ancient Grains proposition is being promoted with the release of a two-topping pizza now available to consumers in the United States.

The debut is rooted in a pilot testing exercise conducted in Los Angeles, Phoenix, St. Louis, Houston, and Nashville, which found that the availability of a gluten-free option was key in helping people decide on a pizzeria, while highly effective in attracting new customers to the brand.

According to Mintel, gluten-free food sales grew by 178 percent between 2013 and 2016, while the percentage of those eating gluten-free versions of foods that typically contain gluten continues to trend upward. As such, Papa Johns now employs protocols to prevent gluten contact.

Operationally, its crust is prepared in a separate facility before being shipped to stores. However, it is possible for the product to become exposed during the in-store preparation process. The company not recommend its crust for those with Celiac Disease or a serious gluten intolerance.

Last year, the chain removed artificial flavors and synthetic colours from its menu and fully transitioned to chickens fed a vegetarian diet and free of human or animal antibioticsfor its toppings and poppers. In addition to the above, the pizza-maker also went cage-free with its eggs.

How To Make Gluten

  • Preheat your oven to the proofing setting or to 200°F. Once it gets to 100°, turn off your oven.
  • In a large bowl, combine the all-purpose gluten-free flour, instant yeast, gluten-free baking powder, and salt. Stir to combine the ingredients.
  • Warm the water to 110°-115°F. I microwave the water in a large glass measuring cup for 45 seconds. I also use a thermometer to check the temperature. If your water is too hot it will kill the yeast.
  • Add the honey to the warm water and stir until it is dissolved.
  • Pour the warm water and honey mixture into the gluten-free flour mixture and mix with your mixer on low. .
  • Pour the olive oil and apple cider vinegar into the dough mixture and mix on low speed for 1-2 minutes, until the dough starts to form. The dough will be very sticky.
  • Place the pizza dough in a greased ovenproof bowl and cover with plastic wrap. Cover the bowl with a towel and place in your warm oven for 30 minutes to rise.
  • Remove the dough from the oven and preheat the oven to 425° F.

Papa Johns Finally Reveals A Gluten

Bad news for the Papa Johns lovers excited by the new gluten-free pizza. The company has just gone on record saying that those with gluten sensitivities like celiac disease should probably avoid this pizza.

The crust itself is gluten-free. With quinoa, sorghum, teff, amaranth, and a completely separate processing facility, Papa Johns headquarters have tried to ensure that contamination is kept at a minimum. The issue is, when the product gets to the store, there is no way to be certain that employees keep the crust separate from products with gluten.

The company told CNBC: Although Papa Johns Ancient Grains Gluten-Free Crust is gluten-free and Papa Johns employs procedures to prevent contact with gluten, it is possible that a pizza with Papa Johns Ancient Grains Gluten-Free Crust is exposed to gluten during the ordinary preparation process Please use your best judgment in ordering a pizza with Papa Johns Ancient Grains Gluten-Free Crust if you have a sensitivity to gluten.

Like PJs, Pizza Hut and Dominos offer a gluten-free crust, and like PJs, they cant guarantee against cross-contamination. There are currently no major nationwide chains that offer celiac-friendly pizza. But there are smaller chains and independent outlets across the country that do.

For example, zpizza currently has 21 locations in and around California. They offer delivery and pickup, and all of their pizzas are available in a gluten-free large size.

Before popping into our local store, we reviewed their specials to see if they had any deals or coupons for gluten-free pizzas. Based on our area, they were not offering any deals.

We ran a few test orders using their website to check out the prices, and oh boy, their prices were not low. At least, not for the gluten-free pizza.

Finally, we decided to just stick with the classic pepperoni pizza on the GF crust.

And, heres how it all went down.

The Pizza

The freshness of the cheese and pepperoni was the first thing we noticed when we opened the box. The smell of the toppings was pretty potent and in a good way.

But, surprisingly, the overall taste was just okay. Just okay.

The cheese was a bit bland, the pepperoni was on the greasy side, and it was a little too chewy.

The sauce was barely noticeable between the toppings smell and pepperonis grease. It just didnt stand out at all.

As for the crust, it tasted nutty and as it cooled down, it became doughy and a little chewy.

Keep in mind that if your pizza gets cold, Papa Johns has reheating instructions on the box you can follow to help retain the quality and taste.

But, if you listen to us, its best to finish it while its warm.

The Employees & Pizza Preparation

Honestly, we dont have much to share here. Walking into Papa Johns is like walking into any Dominos or Pizza Hut. Not much difference in customer service styles.

What Is Papa Johns Gluten

When Papa Johns launched their gluten-free crust back in August 2017, the gluten-intolerant population rejoiced.

Suddenly they would be able to eat pizza without triggering symptoms of their celiac disease, and finally they would be able to enjoy pizza once more.

Before they added their gluten-free crust to the menu, Papa Johns did not offer a single gluten-free item, other than their drinks, so this was really groundbreaking for the chain.

The gluten-free crust that Papa Johns offers is made using a variety of ancient grains.

From quinoa to amaranth, the recipe is made using grains which are naturally gluten-free, so you do not need to worry about this base impacting your gluten-intolerance.

But, the fact that this base is gluten-free isnt the only benefit of this base.

As well as being naturally free of gluten, this base is also high in fiber and protein, making it a healthier alternative to the bases which include gluten.

But, there is one small issue with the gluten-free pizza crust that Papa Johns offers, and that is that it is not designed for those with celiac disease.

This is because there is a chance that the bases could be cross-contaminated.

Due to this, Papa Johns advertises their gluten-free base for those who are gluten aware, rather than those who suffer with celiac disease or severe gluten allergies.

So now that we know what it is, lets dive in and review this pizza base.

Franchises Outside The Us

Europe

Papa Johns has operated in the United Kingdom since 1999. In July 2015, the company had 300 shops in the UK, although in 2010 it had plans for the number rising to between 400 and 500 within the next five years.

Papa Johns operates throughout Ireland, with its head office at Ballybrit, County Galway. The company has over 50 locations and operates mobile units around the country. The franchises are often located adjacent to Supermacs fast food outlets, whose parent company owns the exclusive franchise rights for the chain in Ireland.

Spain is the second most important European market for Papa Johns. The chain has been operating in Spain since 2016, and had 42 restaurants by late 2017. In particular, the restaurants achieved a significant presence in the Madrid province with more than half of the Spanish restaurants being located there. Papa Johns expects to open at least 100 restaurants just in the province of Madrid, as well as expanding to other regions across Spain.

Papa Johns also operates in Russia and Belarus with plans to expand to several other European and Central Asian countries.

Papa Johns restaurants in Portugal have closed or no longer operate under the brand name. Some of these locations still serve pizza, though the master-franchise Rest-Smart filed for bankruptcy.

In Poland, Papa Johns opened their first location in 2017.

Because I couldnt find their gluten free pizza on their websites menu, I called the San Jose Papa Johns. The gentleman that I spoke to said that because their gluten free thin crust pizza only came in small, perhaps that is why it is difficult to find on their websites menu.

He went on to explain that a small cheese, thin crust pizza sells for $11.99 and he believes each additional topping is $1.00 extra.
