High Protein Gluten Free Bread
Every morning, I usually have two slices of toast for breakfast one slathered with some sort of nut butter and one slathered in coconut oil, truvia, and cinnamon. Because Ive been making my own greek yogurt lately, I havent needed to go to the grocery store nearly as often, which also means I run out of bread long before I go to the store again. This means Ive been making my own bread a lot more often. I started with whole wheat, but I wanted to try my hand at a higher protein bread with almond flour. Im all about healthier choices!
This bread is lovely. Its surprisingly light for being made with almond flour . It has a nutty flavor that reminds me of the whole grain breads I usually use, probably from the flax in there. The coconut oil lends it this sweetness that you cant place if you dont know theres coconut oil in it. The nutrition for this bread is outstanding, as well. There are good fats of several varieties, primarily lauric acid , alpha linolenic acid , and monounsaturated fats . Its also high in protein and fiber. All three will work together in keeping you satisfied longer in my case, it lasts long enough to get me through 2 hours of class and then an hour long insanity workout. I am loving it!

How To Make Lentil Protein Bread
There are only a few steps to preparing this yeast-free bread, including:
- First, add the lentils to a large bowl with plenty of water . Then soak for at least 2 hours . Then drain the water.
- Preheat the oven to 400 °F/205 °C and line a large loaf pan with parchment paper.
- Then, blend the lentils with 320 ml fresh water until puréed.
It can help to use a tamper, if you have one, to ensure theyre evenly puréed. Otherwise, pause the machine and give it a mix as needed.
- Then, transfer the puréed lentils to the same large bowl as before with all the remaining ingredients and mix well with a spatula.
- Pour the healthy bread batter into the prepared pan, using a spatula to smooth the top if necessary.
I also sprinkled two additional tablespoons of pumpkin seeds over the batter before baking.

4. Preheat the oven to 400°F. Let the dough stand for 15 minutes while the oven preheats.
5. Bake in the preheated oven for 55 to 65 minutes until the bread is dry to the touch, browned, and sounds hollow when tapped.
6. Cool bread in pan for 15 minutes and then use parchment paper to remove bread to a cooling rack. Cool completely before cutting into slices.

My dilemma this time around was that I wanted a gluten-free bread that was lower in starch than my normal recipes, but also higher in protein. After a little research, it turns out, protein actually helps give gluten-free bread some of its structure, so we were in luck.
Really, it makes sense if you think about it. Gluten is a protein itself and is found in regular flour and forms when flour and water are combined. What Makes This Banana Bread High Protein
- Protein powder Vanilla plant-based protein powder isnt all created equal though so my suggestion is to stick with a powder that is either brown rice based, soy based, or pea based for this recipe. You can also use vanilla whey protein powder if dairy is not an issue.
- Egg whites Egg whites are a great, affordable source of protein that really add to this recipe.
- Yogurt If you are A-ok with dairy, you can opt for fat-free plain Greek yogurt, which also adds an additional boost of protein. If not, no problem you can simply substitute it with coconut yogurt, though you will lose a few grams of protein and the bread will turn out a bit more dense and fudge-y with this option.
- Protein icing Feeling a little extra? While the cashew cream cheese icing is optional, it brings up the protein a bit more as it contains both vanilla protein powder and cashew nuts.
The wonderful thing about protein packed banana bread is that it helps keep blood sugar levels stable which can in turn prevent sugar cravings. When I used to work with nutrition clients I would always assess their daily protein intake and it was amazing how often cravings and mindless snacking would disappear when protein intake wasnt lacking.

Selmo and Salas-Mellado reported that optimal levels to be used are above 1.5% but less than 2.2%. The simultaneous addition of proteins and hydroxypropyl methylcellulose improves the porosity of gluten-free bread, being similar to that of wheat bread . According to Manik and Nur , HPMC and xanthan gum are considered the most suitable hydrocolloids for a gluten-free bread with the first being more effective in increasing the volume of the bread and producing a softer crumb.
