Others use wheat gluten or wheat protein. Nuts and legumes, like ground almonds or chickpeas, are also great sources of protein that are added to many protein breads.

Protein bread is simply bread that has been enhanced with high-protein ingredients. The health and fitness crowd is obsessed with protein because it offers a variety of benefits. It helps build muscle, boosts energy and metabolism, reduces cravings, and supports a healthy immune system.

Manufacturers have jumped on the protein bandwagon. Its now added to everything from powders and water to snack foods and breakfast cereals. Of course, protein is already found naturally in whole foods like nuts, seeds, legumes, whole grains, eggs, dairy, meat, and fish.

High Protein Gluten Free Bread

Every morning, I usually have two slices of toast for breakfast one slathered with some sort of nut butter and one slathered in coconut oil, truvia, and cinnamon. Because Ive been making my own greek yogurt lately, I havent needed to go to the grocery store nearly as often, which also means I run out of bread long before I go to the store again. This means Ive been making my own bread a lot more often. I started with whole wheat, but I wanted to try my hand at a higher protein bread with almond flour. Im all about healthier choices!

This bread is lovely. Its surprisingly light for being made with almond flour . It has a nutty flavor that reminds me of the whole grain breads I usually use, probably from the flax in there. The coconut oil lends it this sweetness that you cant place if you dont know theres coconut oil in it. The nutrition for this bread is outstanding, as well. There are good fats of several varieties, primarily lauric acid , alpha linolenic acid , and monounsaturated fats . Its also high in protein and fiber. All three will work together in keeping you satisfied longer in my case, it lasts long enough to get me through 2 hours of class and then an hour long insanity workout. I am loving it!

The Loaf Is Too Dense

High Protein Gluten Free Bread

Sometimes a dense loaf of bread is great, but other times you want more of an airy loose texture. If your loaves are too dense then you might want to add a little more leavener to the mix.

Baking soda, baking powder, and gluten-free yeast are all good options. Yeast especially can add a little more flavor to your bread, too.

Colour Measurements Of Bread

The colour change of the bread crumb as a result of the addition of pea protein was assessed using a colorimeter CR30-16 . The measurement was based on the CIE L*a*b* system where L* defines lightness from 0100 , a* denotes red/greenvalue, and b* the blue /yellow coordinate. Three replicates of each bread sample were analyzed.

Your Bread Has A Mushy Center Or A Dense Bottom

This problem is common in almost all bread baking. Mushy centers and dense bottoms are a sign that your bread is underbaked. It can also sometimes mean that you dont have enough leavener, especially if baking longer leads to an overly dense texture or a hard bread.

Start by lowering your oven temperature and extending the cooking time slightly. Try reducing the temperature by 50 degrees and baking for another 20-30 minutes. Make sure to check the bread a couple of times to make sure it isnt finished baking early.

How To Make Lentil Protein Bread

There are only a few steps to preparing this yeast-free bread, including:

  • First, add the lentils to a large bowl with plenty of water . Then soak for at least 2 hours . Then drain the water.
  • Preheat the oven to 400 °F/205 °C and line a large loaf pan with parchment paper.
  • Then, blend the lentils with 320 ml fresh water until puréed.

It can help to use a tamper, if you have one, to ensure theyre evenly puréed. Otherwise, pause the machine and give it a mix as needed.

  • Then, transfer the puréed lentils to the same large bowl as before with all the remaining ingredients and mix well with a spatula.
  • Pour the healthy bread batter into the prepared pan, using a spatula to smooth the top if necessary.

I also sprinkled two additional tablespoons of pumpkin seeds over the batter before baking.

  • Bake the bread on the center rack in the oven for 45 minutes. Then, allow it to cool completely on a cooling rack before slicing. Enjoy!

What Is Gluten Free Bread Made Of

My dilemma this time around was that I wanted a gluten-free bread that was lower in starch than my normal recipes, but also higher in protein. After a little research, it turns out, protein actually helps give gluten-free bread some of its structure, so we were in luck.

Really, it makes sense if you think about it. Gluten is a protein itself and is found in regular flour and forms when flour and water are combined. It turns into this stretchy, elastic thing that helps us make things like pasta, kneadable bread dough, and pizza dough that you can flip over your head. Basically, gluten helps give structure to the dough, especially in yeast bread, as they rely heavily on the formation of gluten.

What Makes This Banana Bread High Protein

  • Protein powder Vanilla plant-based protein powder isnt all created equal though so my suggestion is to stick with a powder that is either brown rice based, soy based, or pea based for this recipe. You can also use vanilla whey protein powder if dairy is not an issue.
  • Egg whites Egg whites are a great, affordable source of protein that really add to this recipe.
  • Yogurt If you are A-ok with dairy, you can opt for fat-free plain Greek yogurt, which also adds an additional boost of protein. If not, no problem you can simply substitute it with coconut yogurt, though you will lose a few grams of protein and the bread will turn out a bit more dense and fudge-y with this option.
  • Protein icing Feeling a little extra? While the cashew cream cheese icing is optional, it brings up the protein a bit more as it contains both vanilla protein powder and cashew nuts.

The wonderful thing about protein packed banana bread is that it helps keep blood sugar levels stable which can in turn prevent sugar cravings. When I used to work with nutrition clients I would always assess their daily protein intake and it was amazing how often cravings and mindless snacking would disappear when protein intake wasnt lacking.

The frosting is totally optional for this recipe as it makes the loaf more indulgent and a touch messy .

What Kind Of Protein Powder To Use

Buckwheat, Almond & Chia Bread – Gluten free, Vegan & High Protein

When I tested this recipe, I used whey-based protein powder as I do not have a dairy allergy and this is my preferred protein. Make sure to use grass-fed dairy whey protein powder if you want to make this banana bread paleo friendly!

I am sure you could also use a plant-based protein powder IF you are accustomed to the earthy taste of it. I personally am not, so its not something I would recommend. But, if you are, give it a shot and let me know how it goes!

Optimizing The Structure Of Gluten

Besides enzymes, the addition of hydrocolloids was found to be very effective in order to improve the gluten-free bread structure when a rich source of protein is added. Hydrocolloids have the ability to increase the viscosity and water holding ability of the dough system due to high molecular weight and help to create a more stable structure.

Xanthan gum is reported to be used together with rich protein for better results . In these studies, the optimal recommended amounts of xanthan vary from 0.75 to 1.5 to be added no matter what type of protein was used . Moreover, methylcellulose is another hydrocolloid used in gluten-free mixtures together with rich protein sources . Selmo and Salas-Mellado reported that optimal levels to be used are above 1.5% but less than 2.2%. The simultaneous addition of proteins and hydroxypropyl methylcellulose improves the porosity of gluten-free bread, being similar to that of wheat bread . According to Manik and Nur , HPMC and xanthan gum are considered the most suitable hydrocolloids for a gluten-free bread with the first being more effective in increasing the volume of the bread and producing a softer crumb.
