Starches are essential in gluten free baking to air-up the harder flours, resulting in a more tender and airy crumb. They each bring a little something to the table, so try to have at least two in your gluten free flour mix.

Potato starchand tapioca are our essential picks.

Potato starch, tapioca, and arrowroot are root and tuber starches, that will gelatinize at relatively low temperatures. So when used as thickening agents, they are ideal when added at the end of cooking.

Cornstarch meanwhile, is a grain starch just like wheat flour . It will however, require a higher temperature to gelatinize, so it is best used in dishes such as stews, which require thickening to start from the beginning.

How To Make Gluten

*Make sure your water is the proper temperature. Too cold, and your yeast wont be effective, too hot and it can kill your yeast.

*Make sure your yeast is good. If your yeast doesnt foam, using the method I listed, then you need new yeast. I keep my yeast in the refrigerator so that it lasts a long time. Note that most bread machine instructions will tell you to add the yeast dry, and add it on top of all the other ingredients. That did NOT work well for me for this recipe. I recommend proofing the yeast first!

*Use room temperature eggs. If they are cold, your bread will not rise as much.

*If your bread machine beeps after all mixing, before it starts rising, then at that beep, use a spatula to mix in any remaining flour. You can also pull out the blade from the baking pan so it wont be stuck in there during baking if you prefer.

*I do not recommend you use the time delay feature.

Update: I have had many requests for a scaled down version of this recipe. Unfortunately, its not quite as easy as just halving everything. I am determined to try to get this to you in 2020, as well as provide a homemade flour alternative to use in it!

  • Lastly and to make absolutely sure all ingredients end up in the final mix, I use a spatula-spoon to properly scrape the mixing bowl.

The Story Behind My Gluten

In the comment section of my pie crust post, reader John asked if I had any info about the gluten-free flours that I use. Ive been meaning to post something on this topic for awhile nowand Id like to thank John for reminding me.

I was diagnosed as being gluten intolerant right after my daughter was born, in 2000. Up until that time, I was an avid wheat baker. And I had no plan on stopping. But, gluten-free baking seemed to be a whole different world from wheat baking. And everything tasted awful. I actually spent days crying over the fact that the thing that gave me the most joy in the world, baking, was taken away from me. I obsessed over the fact that I wouldnt be able to teach my daughter how to knead bread when she got older. It was a dark night of the soul period for me.

My goals for baking dont fall into this category. I am a classic baker. I like to think of myself as falling into more into the Julia Child category of bakers. I dont bake brownies, for example, because theyre healthy. I bake them because I love to bake, I like the craft of baking, I want a treat, and brownies are yummy. So, unless Im going for a certain taste/texture, like I do with my gf baguettes or graham crackers, I usually do not use the heavier and more strong-tasting flours like sorghum, teff, amaranth, and quinoa. I include this caveat here to explain why I use the flours I use.

1) A Bread Machine with a gluten-free setting and that bakes up to 2lb loaves.

Gluten-free yeast breads do not handle two rises well at all. They need extra mixing time, and only one rise cycle. You need to make sure to get a bread machine with a gluten-free setting as it is programmed for this method. I know of three bread machines brands that have models with a gluten-free setting.

Some have commented that this bread overflowed in their bread machine. This recipe is scaled for a bread machine that accomodates 2 lb. loaves. If youre is smaller, with room for 1 lb. loaves only, then this will overflow.

The older bread machine that I have and have used for years in making this bread is . I have had mine for many years now, and for over a year I used it weekly. It has worked perfectly for me. Another, very similar model is available with free shipping with Amazon Prime, Cuisinart CBK-100 2-Pound Programmable Breadmaker.

There are, Im sure, other models available, but hopefully this gives you a starting place. Just remember to make sure to get one that says it does 2 lb. loaves and has good reviews in regards to mixing well and not burning.

Will This Banana Bread Recipe Work With Almond Flour Or Oat Flour

If youd like to add almond flour, you can use up to ¾ cup almond flour and another one cup gluten free flour blend. Almond flour may make this loaf a little bit heavier.

If youd like to use oat flour, you can use up to ½ cup, with another 1 ¼ cup gluten free flour blend. Using more oat flour than that may result in a loaf thats crumbly and falling apart.

I dont care what anyone says, including the founder of Better Batteror the makers of Cup4Cup gluten free flour. There is no such thing as a cup for cup gluten free replacement for conventional flour in conventional recipes.

Gluten free baking calls for gluten free recipes. Theyre different, they need different ratios of wet to dry ingredients, different binders, and different methods.
