Vegan Chicken Nuggets Recipe (with gluten-free option)

For this recipe I actually recommend simmering your vegan chicken nuggets in broth for about a half hour. Theyre less dense than the roasts weve been making, so they dont take as long to cook.

Simmering them in more vegan chicken broth actually adds more flavor. The seitan will puff up to twice its size, but dont worry, it will shrink down again in the air fryer or oven.

So before we make the dough, start a large pot of broth on the stove, at medium heat. Throw a lid on there so it heats faster.

How To Make Vegan Chicken Nuggets: The Dough

Well make the dough the same way we make other seitan dough.

First, blend the beans, spices, and about ¾ cup of the vegan chicken broth in the food processor or blender until it is smooth.

Then add your vital wheat gluten and blend again briefly, until most of it has been incorporated. It may still be a little powdery but thats OK.

Add it to a large bowl and press everything together with your hands. You may want to add a tablespoon of water or two if it looks a bit dry.

DO NOT OVERKNEAD. Seriously, just try to form the dough.

At this point you can do whatever youd like, shape-wise. Make vegan chicken strips or patties using the seitan.

Now tear off ½ to a full tablespoon sized chunks. I found it easier to cut the chunks using kitchen shears.

Then briefly press each one so theyre about a ½ inch thick nugget shape. They dont all have to be perfectly the same size.

When I did a larger tablespoon size nugget, it made about 35 nuggets. I tried doing slightly smaller nuggets a separate time and came up with about 45 nuggets. It may be slightly different for you.

Place the nuggets on a plate until they are all done — we want to add them all together so they cook evenly.

Okay. I put you through all that just to make you wait until here until I announce the winner. You know, wait with baited breath, type of thing! HA!

Again, we were pleasantly surprised with all the brands we were able to find and what that means for the future of those of us that are vegan or living a dairy free lifestyle.

Rounding out the top 5 would be Trader Joes and Nuggs. Andrew did think Boca should have been higher but we didnt agree on where.

Vegan Fried Chicken/vegan Chicken Nuggets

I served these to some non-vegan friends and they seemed to really like them. Based on a recipe from The original called for crushed cornflakes, but when I went to make this, somebody had eaten all my cornflakes so I used Lay’s Baked Potato Chips instead. I like the salty taste of the chips better than the sweet of the cornflakes, but feel free to used crushed anything here and add other seasonings to your heart’s content. You can find vegetarian chicken bouillon at your local health food store.

Provided by Prose

1 tablespoon vegetarian chicken bouillon cube
1/2 cup textured vegetable protein
1/2 cup instant mashed potatoes, dry
2/3 cup crushed baked potato chips


  • Put hot water in a bowl and stir in bouillon. Soak TVP in this liquid for 10 minutes. It will expand.
  • Stir in just enough instant mashed potatoes to make a doughy mixture that can be formed into patties. Mix in salt, pepper, and other seasonings to taste.
  • Dip patties in crushed baked potato chips, covering completely. Fry in oil until crispy, turning occasionally.

  • You will need 3 separate bowls one for flour, one for non-dairy milk, and one for the breadcrumb mixture.
  • Cut the tofu into nugget shapes
  • Dip each nugget into the flour, then milk, then breadcrumbs to coat.
  • Fry with a bit of oil a few minutes on each side to brown.
  • Then bake at 400 degrees Fahrenheit until crispy.
  • Dip in your fave sauce and enjoy your efforts to the fullest!
  • Frying the nuggets in the beginning makes the coating extra crispy, once baked. These can be oil-free nuggets by skipping the frying step and just baking them.

    When baking the nuggets, make sure to use baking paper or a silicone baking sheet so the nuggets dont stick to the pan. I always use a silicone mat, like this one, and it works perfect every time!

    Even though these gluten free vegan chicken nuggets are tasty on their own, they are even better with the perfect sauce. Here is a quick recipe for my favorite vegan dipping sauce for these tofu nuggets:

    • 2 TBSP vegan mayo
    • 1 tsp Sriracha or Buffalo sauce
    • 1/2 tsp maple syrup

    Make The Coating And Bake The Nuggets

    • Preheat the oven to 375° F .
    • Put about 3 tablespoons of neutral-flavored oil on a large cookie sheet so that the bottom is completely covered with oil, and set it aside.
    • Mix together the flour, cornstarch, baking soda, baking powder, salt, and pepper in a shallow dish.
    • Pour 1/2 cup of plant-based milk into another shallow dish for getting the nuggets wet.
    • Pull off small nugget sized pieces of the dough and form it into the desired shape with your hands.
    • Place the nugget in the milk, then, in the flour mixture, then back in the milk, and back in the flour mixture for a 2nd time until it has a layer of the sticky coating on the outside of it.
    • Place the coated nugget on the oiled cookie sheet and repeat until you have used up all of the dough. Leave a little bit of space between the nuggets so they are not touching.
    • Bake the nuggets at 375° F for 15 minutes, then take out of the oven, flip each one, and place them back in the oven for another 15 minutes until they are golden brown.

    Serve these nuggets with kid-friendly vegan meals like vegan mac and cheese, or a side salad with vegan Caesar, or veggies dipped in vegan ranch dressing.

    Firstly, preheat the oven to 180 degrees C and line a baking tray with a sheet of parchment paper.

    Now add the chickpeas, tomato paste, garlic, cumin, turmeric, salt, tahini, and flour to a blender or food processor. Blend it slowly until mostly smooth, but some texture from the chickpeas remains.

    How To Store The Crispy Baked Tofu Nuggets

    The crispy nature is the hallmark of this recipe! Of course, when you store them, you are going to want to ensure that they are crispy when you eat them again!

    You can store the leftover vegan nuggets in an air-tight container in the fridge for 2-4 days.
