Equipment You’ll Need To Make Gluten Free Pizza New York Style

MY WIFES FAVORITE PIZZA RECIPE (Homemade Thin Crust Gluten Free Pizza)

You don’t need a lot of ingredients for this New York-style pizza crust recipe, and you don’t need a lot of equipment either.

  • Stand-up mixer with paddle attachment or food processor I prefer my stand mixer since it’s always on the counter, but you can prepare this New York thin crust pizza dough recipe with a food processor just make sure it’s large enough to accommodate all the ingredients and don’t overprocess the mixture or it may turn to almost a liquid.
  • Rolling pin A rolling pin can help you roll out your New York-style pizza dough though, I find that using my hands is super helpful
  • Pizza stone or baking sheet A hot pizza stone will give you the best pizza crust, but if you don’t have one, you can just flip over a baking sheet and use that.

Proofing The Dough In The Oven

If you have your gluten-free pizza dough ready at a perfect consistency, the next step would be to let it rise aka let the yeast work its magic.

If my kitchen is not warm enough which is usually the case here is what I do. I place the dough covered with a kitchen towel in the oven and proof it there for approx. 30 minutes at 120-140 Fahrenheit . Anything higher than that will kill the yeast. The dough is ready to be rolled if you see the following:

  • The batter is very soft to the touch.
  • If you draw a line with your spoon, you see a bubbly, fluffy texture beneath.

Freezing Uncooked Gluten Free Pizza Crusts

Cut 8 parchment circles 2 inches larger than trays. Lightly oil trays so parchment sticks, put parchment circles on trays, then oil parchment. Set aside.

Working with only 4 crusts at a time, mix together 4 crusts according to the package directions. Divide pizza crust between 4 prepared trays. Drizzle a bit of olive oil over each crust. With well oiled hands, pat out pizza crusts, leaving a ridge at the edge to contain toppings.

Spread pizza sauce onto each crust. Add toppings.

Wrap each pizza well, label and freeze. Repeat with remaining pizza crusts and toppings.

To bake: unwrap pizzas and remove from trays. Place pizza on your favorite pizza baking pan, pizza stone or directly on the baking rack of the cold oven. Close oven door. Set oven to bake at 400 degrees F. Check pizza after 25 minutes. Depending on toppings, bake for another 15 to 20 minutes until crust is baked through and toppings and bubbly and cheese is melted. Can I Use A Gluten Free Flour Blend In Pizza

In this recipe you can. I have tested this recipe with both Bobs Red Mill 1-to-1 Gluten Free Blend and King Arthurs Measure for Measure Gluten Free Blend. Both work fine.

The brand of blend does make a difference. I have shared my thoughts before on using a gluten free flour in place of regular flour in a recipe.

For this pizza recipe my family preferred the King Arthur Measure for Measure slightly better. The dough was a little easier to work with than it was with the Bobs Red Mill 1-to-1 blend. However, both work just fine.

Choosing A Gluten Free Flour Blend

I try to develop recipes that can be relatively agnostic about which of my recommended all purpose gluten free flour blends you choose, since I know not everyone has access to the same ingredients. But this recipe is designed to create an especially specific texture.

For that reason, I highly recommend using either Better Batter or my mock Better Batter in this otherwise very simple recipe. It’s a sturdy flour that is best for creating a chewy crust that doesn’t puff up too much like a blend like Cup4Cup would.

Using the proper flour blend here also helps us avoid using any other enrichments or stabilizers, like Expandex modified tapioca starch or eggs.

Tips For The Best Gluten

  • One thing Ive noticed at a lot of restaurants that serve gluten-free pizza is that the pizza never gets crispy on the bottom. Gluten-free things generally need to be baked longer than regular baked goods.
  • With this recipe I parbake the crust for 15-20 minute before adding the toppings. Then bake it for another 10-15 minute with the toppings on and youll have perfectly crispy, chewy pizza!
  • I bake the pizza on these pans, then transfer it to a wooden cutting board to slice up. Any cookie sheet will work but I recommend greasing the sheet with shortening so it doesnt stick. You can also use parchment paper if you prefer.
  • Another great thing about this crust recipe is that it works with basically any gluten-free flour blend. It turns out wonderfully with King Arthur Flour and Bobs Red Mill gluten-free flours. You can use what you have on hand.

Well, for a start this version uses a lot less flour. It yields 2 large pizza with 150g instead of 250g of flour. That makes it a bit healthier/less carby and as a bonus, its a good way to ration flour during this pandemic. But if youre reading this from the future and have access to bread flour/as much flour as you want and couldnt care less about carbs, then feel free to try my authentic restaurant-style Italian thin crust pizza.

The yoghurt also gives the crust a great texture, not to mention it adds a bit of extra nutrition. Its also high in protein which can be really helpful if you dont have access to bread flour .

Pizza Oven Or Conventional Oven

Two Ingredient Thin Crust Pizza (Gluten Free/Plant-Based/Oil Free/Nut Free)

I first developed this recipe using my wood-burning tabletop pizza oven, but I’ve now made it just as many times in the conventional oven. It works great in either!

In a wood-burning pizza oven, the gluten-free pizza crust turns out more browned on top with slightly larger air bubbles. The wood also helps flavor the crust. I’ve written the instructions for a conventional oven because that’s probably what most people have. To use a pizza oven, reduce the baking time according to the manufacturer’s instructions.

In a conventional oven, I recommend using a pizza stone for the best results, but if you dont have a pizza stone, you can use a large cast-iron skillet or dark baking sheet. Your crust may be a bit less crispy using the baking sheet. Whatever you use, have it in the oven while preheating.

A Better Way To Save A Little Time

I get it even though it doesn’t take a ton of time to make this gluten free pizza dough from scratch, if you can find a way to shave off even a few minutes, you’re going to take it.

What I recommend you do instead is create your own New York-style pizza crust mix by mixing all the dry ingredients in this recipe except for the yeast. Once you’ve got those ingredients tossed together, store the mix in a zip-top bag, mason jar, or other airtight container.

When you’re ready for pizza, all you have to do is add the yeast and wet ingredients, and continue with the recipe.

Why Is My Nyc Pizza Dough So Sticky

To give this New-York style pizza crust that chewy, foldable texture we crave, the dough has to be wet. And unfortunately, a wet dough is going to be a sticky dough.

Resist the urge to add more gluten free flour when preparing this recipe. Instead, coat your hands in oil to make it easier to work the pizza. I promise, the effort will be worth it.

How To Make The Best Gluten

You see, I wanted to make a pizza crust that is not only gluten-free but super easy to make. I wanted it to be no-knead and easy to roll too. My primary goal was to make sure beginners will be able to make it without a hitch. I hate recipes when they say just substitute it with a gluten-free flour mix. That is a disaster waiting to be happening more than not.

Dont worry. I give you pointers every step of the way. Do you have a bowl and a spoon? If yes, lets get started.

  • Add 1oz fresh yeast in ½ cup lukewarm water . Stir to get it dissolved. Place it on the kitchen counter. It is ready and activated if there is a thin white foam on the top.
  • Measure ¾ cup of rice flour , ½ cup of buckwheat flour , 1 cup of corn starch with a cup or a scale. Try to measure it as precisely as you can as that will influence the result and your success. When ready, mix them thoroughly and add ½ tsp salt.
  • Take a spoon. Add the activated yeast and an additional ¼ cup of lukewarm water to the bowl of flour and stir well. You may see lumps at the beginning, but keep going. Stir hard until everything is smooth. It will take a minute or so to reach the consistency shown in the below picture. The dough or rather a batter is perfect if it is like a slow-flowing paste. Draw a line with your spoon through it, it should flow back slowly. If you wait a couple of seconds, you will see a bit of bubble which means the yeast has started working.   • Other Ways To Cook Gluten Free Pizza

    Another option is to simply cover a baking sheet with parchment paper sprayed with cooking oil and bake the pizza in a round or rectangular shape on that. Whichever pan or method, this recipe can make a thin or thick crust and will make your whole family happy.

    Particularly when using a regular baking sheet though, dont make the center of the crust too thick or use a very watery pizza sauce, as it will be harder to get that part of the pizza nice and crispy on the bottom.

    What Makes This Gluten Free New York

    How to make a gluten-free Roman-style thin-crust pizza

    This pizza crust is NY style because it has a thin, chewy crust that folds in half on the horizontal when you grab a slice. It’s only slightly crispy on the very, very outside, like in darker spots underneath the pie and on the edges.

    Almost no matter how thin you make it, you’re not going to have a cracker-like crust. A super crispy crust is not a bad thing. But it’s just not the texture we’re going for here.

    How To Handle The Raw Gluten Free Pizza Dough

    To get this pizza crust to be chewy and foldable, you need what’s called a high hydration ratio. That just means how the amount of water compares to the amount of flour. Here, the hydration ratio is nearly 85%.

    In our most lovely basic gluten free pizza dough recipe, the hydration ratio is only 60%. That’s actually low for a conventional pizza recipe, but I think we know by now that gluten free baking is just different in so many ways.

    An 85% hydration ratio means that this is a wet dough, and we need to keep it that way if we want a chewy, foldable crust. When you’re handling the dough, you don’t add any more flour at all. You shape it with wet or oiled hands. It’s not fun, but it works.

    You’ll notice that, even after shaping, the raw gluten free pizza dough isn’t smooth. It’s kind of dimply.

    Try not to judge it like I am. I’m judging it pretty hard, since I’ve been avoiding this sort of sad-looking gluten free bread dough for years, but here, it works like no other.
