  • Always use room temperature ingredients! Yeast thrives in a warm environment.
  • You can bring your egg whites to room temperature by pacing the whole large eggs in a bowl of really warm water and let them sit for 5 minutes.
  • Always use gluten-free non-stick cooking spray to grease your pan and the plastic wrap. I like either coconut oil or olive oil cooking spray.
  • Bake the bread on the middle rack.
  • I also like to bake my bread horizontally for even baking.
  • Remove the loaf from the baking pan and place it on a cooling rack. If the bread cools in the pan, the steam can get trapped and the loaf can get soggy, especially on the bottom.
  • Use a serrated knife to slice the bread. Using a smooth-blade knife can squish the bread.

  • For helping dough rise > Place rising dough in oven with light on . After it has risen, preheat oven and bake.
  • Tip for handling sticky dough Skip the kneading by hand. Knead in the stand mixer with dough hook, then place the dough straight into the pan. Cover and let is rise in warm place. Then bake!
  • A Gluten Free All Purpose flour without thickeners works best! You will be adding in a thickener to help with give the bread texture and softness. If you add in too much xanthan gum or guar gum, the bread will be too hard.

What Goes Into Gluten

To make bread, you only need flour and water. At least, that is how weve been making the nutritious food for centuries everything else is just a fancy add-on. This means that making bread without eggs isnt all that hard.We must figure out the gluten part, though, since most bread flours contain the stuff. Luckily, there are many ways to go around this. For starters, you can use coconut or almond flour, but they make crumbly bread thats a bit compact for my taste. On the other hand, now there are many gluten-free flours available, made with a whole bunch of different flours and starches that together act much like all-purpose wheat flour. For this recipe, lets go easy on ourselves and use gluten-free flour. Youll also need instant yeast, a small bowl of warm water and a pinch of salt. This is good-old white bread. Nothing more, nothing less.

Gluten Free Bread Tips

1. Don’t let the salt touch the yeast or the bread won’t rise. Put the salt in the water at the bottom and yeast on top of the flour so this can’t happen. I always put all of the wet ingredients in the bowl first, followed by salt, flour and other dry ingredients, seeds or nuts if I’m using them and lastly the yeast

2. The small amount of apple cider vinegar will help the bread rise better without affecting the taste

3. Gluten free bread does not need to be kneaded. You can mix it in a Thermomix, with an electric mixer or even just by hand in a bowl which is handy when travelling

4. Gluten free bread only needs to rise once, so when it’s mixed place dough in your loaf tin to rise

5. A good quality bread tin from a bread shop gives better results. These should not be washed I found out when I bought a new one recently! The lady in the bread shop was not at all happy when she saw the condition of my tin that was about 7 years old. I thought it was good – it’s done a lot of work ) I recommend if you’re also baking bread with wheat and you have a child with food allergies or coeliacs disease that you have a separate tin used only for gluten free bread

6. Gluten free bread takes a bit longer to rise. It will need about 45 minutes to an hour. In summer I do this outside and cover loosely with greased alfoil. In cooler months I rise in the oven, also covered, on 50ºC

While not totally necessary, Im a big fan of baking bread in a Dutch oven with a heavy lid. I love the way a Dutch oven produces a high and steady heat. The heavy lid keeps the moisture inside during the first 20 minutes of the bake, allowing the bread to spring up or rise further while cooking.

If you do not have a Dutch oven, no worries? You can make beautiful bread in a large cast iron skillet with another skillet underneath with water to create the steam needed. Do not use glass as it can shatter at high temperatures.

Do You Use Crazy Ingredients

I live in a small town in Idaho, so I dont have access to an Aldi, Trader Joes or Whole Foods. Most of the ingredients I get are from Walmart. And, a few I have to get from my local Natural Grocer. I try to not do crazy, specialty ingredients and instead stick to simple ingredients because those are easier to find and are usually less expensive. Every once in awhile, you will have to get some dairy-free sour cream or dairy-free cream cheese . But, againif I can find them in IdahoI hope you wont have a problem either. I also try to ALWAYS link to any different type ingredients in the recipe cards to Amazon, in case youd rather shop online, or even to see what they look like to help you spot them at the grocery store.

What Is The Best Type Of Yeast To Use In This Gluten

This recipe uses instant yeast or rapid rise yeast. I use Fleshmans Rapid Rise Yeast. It is important to use the rapid yeast and to make sure it is at room temperature.

Rapid rise yeast does not need to be proofed and can be added directly to the flour. It is still important to use warm water because yeast is a live organism and thrives in a warm environment.

Heat the water just until it feels warm to the touch. Or use a thermometer to check the waters temperature. The ideal temperature for instant yeast is 100°110°F. If the water is any hotter than that, it could kill the yeast and your bread will not rise.

If you want to make sure that your instant yeast is still active, you can proof the yeast before adding it to the flour mixture. Add the honey to the warm water and stir until it dissolves.

Then add the yeast to the water mixture and allow to sit for 5 minutes until bubbly. This is not a necessary step. This is only needed if your yeast is not new or fresh.

I have not tried active dried yeast in this recipe. Active dried yeast requires a proofing step. Active dried yeast also requires a longer rising time.
