Tips For Baking Gluten

  • Make sure you have fresh yeast .
  • Always use room temperature ingredients! Yeast thrives in a warm environment.
  • You can bring your egg whites to room temperature by pacing the whole large eggs in a bowl of really warm water and let them sit for 5 minutes.
  • Always use gluten-free non-stick cooking spray to grease your pan and the plastic wrap. I like either coconut oil or olive oil cooking spray.
  • Bake the bread on the middle rack.
  • I also like to bake my bread horizontally for even baking.
  • Remove the loaf from the baking pan and place it on a cooling rack. If the bread cools in the pan, the steam can get trapped and the loaf can get soggy, especially on the bottom.
  • Use a serrated knife to slice the bread. Using a smooth-blade knife can squish the bread.

Easy Gluten Free Banana Bread

I have been making this recipe since I first went gluten free. If you have my cookbook, Living Freely Gluten Free this recipe is in it. The coloring in the cookbook picture is much darker. The reason being is that the cookbook recipe has 1 tsp. of cinnamon instead of the 1/2 tsp. like this one calls for. I love the way 1 tsp. tasted, but the coloring was much darker than the traditional banana bread.

Why Im Reviewing Packaged Gluten Free Bread

If youre on my email list , I asked you what your favorite brands are, and you poured your gluten-avoiding hearts out! Ive been through many loaves of bread. If it was a total dud , Im not reviewing it here.

My intention in publishing these reviews is not to stir up controversy, harm anyones business or even support anyones business to be honest. When I posted something on my Facebook page about how Udis bread is hard to separate, someone angrily accused me of endangering their business.

Clearly, that isnt my purposebut I also have no obligation to pretend that reality isnt what it is. My intention is simple. I want to help you, the consumer, spend your money wisely.

Packaged gluten free products are more expensive than conventional products, and always will be. The market for these products is smaller, and the ingredients are more expensive .

But weve come a long way since 2004 when my family first went gluten free. Back then, we ordered some bizarre gluten free packaged bread from Canada that not only couldnt be eaten untoasted but lost its toast within minutes. And the cost was insane. Well, weve come a long, long way since then.

Everyone knows that I love baking fresh homemade gluten free bread. My children adore it when they have it for their school lunches, and my husband loves it because its cheaper.

That isnt the stuff really of my dreams, but it is of theirs. But its just not realistic.

Gluten Free Bread Recipe Notes

  • Heres what your bread should look like when you first put the dough into the bread pan:
  • Its time to put the bread in the oven when it looks like this:
  • See how its just slightly creeping up higher than the side of the bread pan? Make sure your oven is up to temperature by the time your loaf looks like this. My loaf only took 50 minutes to rise and it will take even less time if you live in a hot/humid climate.

How To Store Your Newbie Gluten Free Bread For Later

This loaf lasts a couple of days at room temperature. I usually slice up half of the loaf. Wrap each slice in plastic wrap or wax paper. Flash freeze the wrapped slices then place them in a freezer bag. When I need a slice I simply defrost one overnight in the fridge. Frozen slices can be warmed up in the oven or toaster as well.

With a few adaptations you can also make dinner rolls.

Bake At 365 For 44 Minutes

Major caveat. All ovens are different. I’ve found that 365 for 44 minutes on bake is what works for MY oven. Your results may vary. Before baking, I drug a butter knife down the middle of the loaf to help it split and to break up any major bubbles that might have formed. I branched off from the center diagonally a little for a nice pattern. Find whatever gives you a sense of inner peace. I like to cook by zen. The bread is done when it reaches an internal temp of 208 degrees F Just below boiling. I wouldn’t stop at 205 degrees, personally. This might well be the trickiest part of the whole thing. We want enough water to have been absorbed as possible without it drying out by evaporating. Too wet, and the bottom of your bread turns to custard. Too dry, and well….it still makes good toast. You will notice that the finished loaf is lighter in weight than when you put it in. That’s a good sign. If you have to use a convection oven, like if you just HAVE to, then put in a pan of water beside or underneath your loaf. For those of you die hard bakers, you’ll know that elevation and atmospheric conditions can also affect things. I live in central Ohio ), and the recipe was developed in the late fall. That’s all I can tell you. Will this work in Denver? I have no idea. If you try this in the Mile High city, give us a shout.

If you want to make your own flour use My Personal All Purpose Flour Blend for this recipe. It is a fool proof recipe that is easy to make and inexpensive.

If your all purpose flour blend contains xanthan gum, do not add more. Omit it from the recipe.

To scoop your flour there is a preferred method with gluten free baking. Spoon the flour into your measuring cup and level the top with a butter knife. Never scoop the cup into a container of flour. The flour needs that air. This helps to prevent a dense outcome.

Gluten Free Seeded Loaf

You will love this gluten free seeded loaf, with its soft and chewy crumb, deliciously crisp crust, and amazing flavour thanks to the abundance of mixed seeds. This gluten free bread recipe is incredibly easy to make and only requires a single rise.

Hi friends! Your eyes do not deceive you this is indeed a brand new gluten free bread recipe, and one thats been in the works for a while now.

In fact, this is probably one of my favourite gluten free bread recipes Ive made to date. Its incredibly soft and chewy, with a crisp crust and an amazing flavour thanks to the abundance of mixed seeds. On top of that, its also incredibly easy to make, requiring only a single rise rather than the more standard two rounds of rising.

Ive received numerous comments and messages about my Ultimate Gluten Free Bread recipe since I published it back in April. I still cant actually believe just how many of you have made it since then , and it warms my heart to see the photos of all your gorgeous loaves.

There have also been many questions about adapting the recipe, and most of these fell into one of four categories: how to scale up the recipe , how to bake the bread in a loaf tin , whether its possible to skip the first rise, and whether its possible to include seeds.

This recipe is my answer to these questions and requests.

Gluten Free Rice Free Bread

Mar 12, 2012·

This easy gluten-free bread tastes like what I remember wheat bread tasting like before I went gluten-free. Its a hearty loaf, using individual flours and starches to form the perfect flavor and texture. Youll love that this gluten-free rice-free bread is soft and fluffy, making it ideal for everything from sandwiches to toast, to simply enjoying a slice plain with a slather of dairy-free butter.

When I first went gluten-free over 10 years ago, this gluten-free bread recipe was one of my first successful creations where bread was concerned, anyways. I was incredibly thrilled to have soft bread to eat. That sliced nice, lasted a few days at room temperature, and didnt taste like cardboard!
