Packaged gluten free products are more expensive than conventional products, and always will be. The market for these products is smaller, and the ingredients are more expensive .
But weve come a long way since 2004 when my family first went gluten free. Back then, we ordered some bizarre gluten free packaged bread from Canada that not only couldnt be eaten untoasted but lost its toast within minutes. And the cost was insane. Well, weve come a long, long way since then.
Everyone knows that I love baking fresh homemade gluten free bread. My children adore it when they have it for their school lunches, and my husband loves it because its cheaper.
That isnt the stuff really of my dreams, but it is of theirs. But its just not realistic.

Making gluten free bread is no easy feat. Gluten gives bread its light, airy structure and enables it to hold together as it rises. Trying to mimic that is downright hard. Once you dive into the world of gluten free bread baking you will soon discover recipes with ingredients as long as a thesis!

Yes, you can! Even though I developed this gluten-free bread recipe to be an oven-baked recipe, I also tested it in my bread machine. Just swap out these ingredients for the ingredients in my gluten-free bread machine recipe and follow the recipes directions. I always recommend using a bread machine that has a gluten-free setting.

- See how its just slightly creeping up higher than the side of the bread pan? Make sure your oven is up to temperature by the time your loaf looks like this. My loaf only took 50 minutes to rise and it will take even less time if you live in a hot/humid climate.

How To Store Your Newbie Gluten Free Bread For Later
This loaf lasts a couple of days at room temperature. I usually slice up half of the loaf. Wrap each slice in plastic wrap or wax paper. Flash freeze the wrapped slices then place them in a freezer bag. When I need a slice I simply defrost one overnight in the fridge. Frozen slices can be warmed up in the oven or toaster as well.
With a few adaptations you can also make dinner rolls.

Bake At 365 For 44 Minutes
Major caveat. All ovens are different. I’ve found that 365 for 44 minutes on bake is what works for MY oven. Your results may vary. Before baking, I drug a butter knife down the middle of the loaf to help it split and to break up any major bubbles that might have formed. I branched off from the center diagonally a little for a nice pattern. Find whatever gives you a sense of inner peace. I like to cook by zen. The bread is done when it reaches an internal temp of 208 degrees F Just below boiling. I wouldn’t stop at 205 degrees, personally. This might well be the trickiest part of the whole thing. We want enough water to have been absorbed as possible without it drying out by evaporating. Too wet, and the bottom of your bread turns to custard. Too dry, and well….it still makes good toast. You will notice that the finished loaf is lighter in weight than when you put it in. That’s a good sign. If you have to use a convection oven, like if you just HAVE to, then put in a pan of water beside or underneath your loaf. For those of you die hard bakers, you’ll know that elevation and atmospheric conditions can also affect things. I live in central Ohio ), and the recipe was developed in the late fall. That’s all I can tell you. Will this work in Denver? I have no idea. If you try this in the Mile High city, give us a shout.
How Do You Make Gluten Free Banana Bread From Scratch
- Preheat oven to 350 degrees.
- With your stand mixer cream: Eggs, Sugar, Vanilla, Applesauce andBananas. Beat well on medium for 2 minutes.
- Add in the coconut oil and allow it blend in.
- Add cinnamon, nutmeg, salt and then turn off to pour in GF AllPurpose Flour. Turn back onto the stir setting and add xanthan gum and bakingsoda.
- Beat on medium 2-3 minutes scraping down the sides halfway through.
- Bake about 50 minutes or until toothpick comes out clean.

If you want to make your own flour use My Personal All Purpose Flour Blend for this recipe. It is a fool proof recipe that is easy to make and inexpensive.
If your all purpose flour blend contains xanthan gum, do not add more. Omit it from the recipe.
To scoop your flour there is a preferred method with gluten free baking. Spoon the flour into your measuring cup and level the top with a butter knife. Never scoop the cup into a container of flour. The flour needs that air. This helps to prevent a dense outcome.
