How to make a gluten-free Roman-style thin-crust pizza

Firstly, its supposed to be a little sticky as a formed dough in the bowl. As long as youre able to bring it together into a ball, when you start rolling it out on a floured surface, the extra flour should make sure it doesnt stick to your surface, hands or rolling pin.

Theres only two main ingredients here so measuring them out correctly is really important. Itll stop you from adding in too much yoghurt in the first place and making the dough too wet!

But of course, if you have added too much yoghurt by accident, you can always just add a little extra flour until its the correct consistency.

Can You Freeze Gluten

You can absolutely freeze gluten-free pizza crust dough! I recommend letting it rise and rolling it out then freezing on a baking sheet before transferring it to a freezer bag or wrapping it well in plastic wrap for longer storage. When you’re ready to bake it, you can par-bake it straight from the freezer, adding 3 minutes to the bake time.

Tips For The Best Gluten

  • One thing Ive noticed at a lot of restaurants that serve gluten-free pizza is that the pizza never gets crispy on the bottom. Gluten-free things generally need to be baked longer than regular baked goods.
  • With this recipe I parbake the crust for 15-20 minute before adding the toppings. Then bake it for another 10-15 minute with the toppings on and youll have perfectly crispy, chewy pizza!
  • I bake the pizza on these pans, then transfer it to a wooden cutting board to slice up. Any cookie sheet will work but I recommend greasing the sheet with shortening so it doesnt stick.
  • Another great thing about this crust recipe is that it works with basically any gluten-free flour blend. It turns out wonderfully with King Arthur Flour and Bobs Red Mill gluten-free flours. You can use what you have on hand.

Gluten Free Pizza Dough

This is the BEST gluten free pizza dough recipe! Its so easy to make, perfectly chewy and requires no kneading. Plus, this crust can be frozen for easy dinners throughout the week!

My go-to gluten free pizza dough! This crust recipe requires no kneading, is totally freezer friendly and can be made into a thick or thin crust depending on what you like!

It only requires about 15 minutes of prep time, plus an hour to let the dough rise and then youre good to go! Pizza was one of those foods I missed most when I was diagnosed with Celiac, and while I love a cauliflower crust every now and then, sometimes you just need something that more closely replicates the real deal.

This crust is thick and chewy and will definitely become a regular in your meal rotation!

While this recipe is not vegan friendly, you can try my vegan and gluten free pizza crust instead which is just as delicious and made without egg!

The Secret To A Good Dairy Free Pizza:

If you have discovered a vegan cheese that you love then youre probably set! But it seems every time I actually find a vegan cheese that I love then the stores stop carrying them and I cant find them anymore! WAH! So we have found a great way around the whole cheese thing!

The key is to add enough greasy meats to offset the melty cheese you are missing! Typically pepperoni does a really great job of soaking up the pizza crust bread but we experiment with all sorts of things!

Goat cheese is another great creamy option if you can handle it. Ive found we can use goat cheese without any side effects for us.

Here is one of our gluten free pizza recipes where we smothered the top in sauce and put all of the ingredients underneath. It helps to hold all of the meats on the pizza.

Although this is our typical type of pizza. A healthy amount of sauce on the bottom, sprinkled with things like sausage, pepperoni, onions, peppers, goat cheese, mushrooms, or anything else you want to add on top.

Can I Make This Recipe Using Other Gluten Free Flours Like Buckwheat Flour Or Coconut Flour

Theres a big difference between gluten free self-raising flour and a *singular* type gluten free flour. When I say gluten free self-raising flour in a recipe, I mean a BLEND of gluten free flours, not just one, singular flour.

Most gluten free flour you buy in the supermarket typically contains a blend of rice flour, potato flour, maize flour, tapioca flour AND buckwheat flour. Thats a lot of different flours!

So to replace it with just one specific type of flour thats not going to cut it at all. Definitely go for a gluten free flour blend.

How to Make Gluten-Free Pizza at Home

Unfortunately, no. This pizza crust batter is very liquid-y and sticky prior to baking and only works in baking pans with high edges that act as a sort of pizza mold. On the plus side, this makes this a very easy gluten-free pizza crust to make! It might not be what youre used to working with, but trust me, it turns out beautifully once baked! Making Your Home Oven Behave Like A Pizza Oven

I used to make pizzas quite often from scratch before I became gluten free. So I always tried to recreate the effects a pizza oven would give for the best possible outcome. Ive found a pizza steel to be the best option. Ive had other pizza steels that were cheaper, but they were never as good as this one so look at it as you get what you pay for. Theyre great for mimicking the effects of a pizza oven because they conduct heat 20 times better than a stone would. Id also be lost without my pizza peel for launching the pizza into the oven.

Put your pizza steel on the middle rack of your oven and preheat it to 500 degrees F. Allow it to preheat for at least 30 minutes. When you slide the pizza onto the steel, the crust will bake first at 500 degrees, for about 6-7 minutes. Then youll switch to broil to melt the toppings until bubbly, creating the best gluten free pizza youll ever have!!

Making And Baking The Real

Making the actual pizza dough is as easy as anything. Well mix together the lukewarm water, olive oil, sugar and yeast, and then add it to a mixture of gluten free flour, xanthan gum, salt and baking powder. Then well mix mix mix. The resulting dough is sticky and thats okay. Gluten free doughs require more moisture, both in order to rise and to prevent drying out too much during baking.

I usually transfer the sticky dough onto a flat surface and do this weird thing with the bench scraper where I essentially spread the dough onto the surface, scrape it off, and repeat for about 2 minutes. Theres two reasons for this: its a dough and therefore in my mind it needs kneading, no matter how unnecessary that is with a gluten free dough, but more importantly it ensures that the dough is super smooth.

The proofing time depends on how warm your kitchen is 2 hours if warm and cozy, 3 hours if its miserable and cold. The dough wont double in volume, so dont waste time waiting for it to happen. It will increase a bit, but nowhere near as much as a wheat-containing dough. Thats alright. Dont stress. Mmkay?

Then comes the fun bit. Shaping the pizza and ALL THE TOPPINGS!!! I went simple with my pizza but you can go as crazy as you want.

Also, theres no need to pre-bake the crust or any silly things like that. Basically, treat this gluten free pizza dough as you would any ol pizza dough. Its cool like that.

What Yoghurt Should I Use For This Recipe

I would recommend only using Greek yoghurt for the dough thats what I always use. Its lovely and thick and using a runnier natural yoghurt for example, will likely mean youll need to add more flour.

Make sure its Greek Yoghurt and not just a Greek-style yoghurt which isnt nearly as thick.

If you want to keep this vegan and dairy free simply use Koko dairy free plain yoghurt.

Ive also used a portable pizza oven when I offer samples at gluten free shows. My favorite so far is the Presto Pizazz® Pizza Oven. This handy gadget is fun to watch in action and takes any guess-work out of rising and baking a pizza.

Another option is to simply cover a baking sheet with parchment paper sprayed with cooking oil and bake the pizza in a round or rectangular shape on that. Whichever pan or method, this recipe can make a thin or thick crust and will make your whole family happy.

Particularly when using a regular baking sheet though, dont make the center of the crust too thick or use a very watery pizza sauce, as it will be harder to get that part of the pizza nice and crispy on the bottom.

What Is Detroit Style Pizza

Most people think of pizza as round with a thin crust or deep dish. But here in Michigan we have a different take on pizza: Square, thick, inside out, and ten-thousand percent delicious!!

Made in square baking pans and seasoned with olive oil, the crust becomes crispy on the outside with the most amazing chew on the inside. The toppings are placed inside out on the crust, to maximize flavor into the crust – perfect for gluten free! Cheese is piled high on the outside edges of the crust to make a cheese crown . Finally, the sauce goes on top.

How To Make Detroit Style Gluten Free Pizza Crust

Begin with making your dough. This dough is slightly different from other gluten free pizza crusts out there in that it is a wetter dough, almost batter like in consistency. Dont panic! We want it to be that way.

Start by proofing your yeast and sugar in warm water, somewhere between 100-110F. Let it rest for 10 minutes to activate.

Now add the rest of the water, olive oil, and the egg. Give it a gentle mix.

Pour the gluten free flour directly into the middle of the bowl and dont mix. Add the baking powder to one corner of your flour mountain, the salt to another corner, and the apple cider vinegar to the third corner. We dont want these ingredients to directly come in contact with the yeast mixture as it is too powerful. By using the flour as a medium, everyone is gently incorporated.

Mix all the ingredients together well and dont be afraid if it looks too wet! Cover with a towel and set aside in a warm spot of your house for about an hour.

After an hour, the dough should have risen to double in size.

Preheat your oven to 425F.

Prepare your square or rectangle 8×10 or 9×13 pan with a generous amount of olive oil. Dont forget to go all the way up the sides of the pan.

Place your dough in the prepared pan and gently press to the edges.

Now you begin to top your pizza, remembering to go inside out for authentic Detroit Style Pizza!

Pop it back in the oven for another 12-15 minutes to let the cheese melt.

Remove from the oven and cut into 8 large square slices and enjoy!

Can I Make This Recipe Gluten Free Is It Suitable For Coeliacs

It is gluten free, though nobody would know just by tasting it trust me!

Bear in mind that minimising cross-contamination is hugely important if youre Coeliac or making this for someone who is. Heres some tips from Coeliac UK on minimising the risk of cross contamination.

Also, make sure that all ingredients used dont have any gluten-containing ingredients. Then make that that they also dont have a may contain warning for gluten, wheat, rye, barley, oats , spelt and khorasan wheat .

Can I Freeze Your Gluten Free Stuffed Crust Pizza

Perfect Gluten Free Pizza Crust Recipe | (Bake It)

You can keep it in the freezer in an airtight container for up to 2-3 months with or without toppings.

When you want to eat it, you can cook it straight from frozen by placing it into the oven on a baking tray at 200C for 10-12 minutes. Again, when its got back its crisp exterior, its ready to eat!

Is Your Gluten Free Stuffed Crust Pizza Recipe Low Fodmap

Yes! You can easily make this low FODMAP by using lactose free plain or greek yoghurt that way, its suitable for the elimination phase of the FODMAP diet and all other phases too.

Ensure you use lactose-free cheese, or stick to the recommended serving size of regular mozzarella/cheddar cheese according to Monash 40g.

Of course, ensure all toppings used are low FODMAP. We use this no onion/garlic pepperoni from Sainsburys.
