How To Make Gluten Free Zucchini Bread
- Grate the zucchinis on a box grater , avoiding the seeds if using large zucchinis. Spread the grated zucchini on paper towels to drain, then squeeze it gently to remove excess moisture.
- In a medium bowl, whisk together the dry ingredients.
- In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients. Add the shredded zucchini and fold to combine. If youd like, stir in nuts or chocolate chips.
- Transfer the batter to oiled loaf pans .

Bobs Red Mill All Purpose Gluten Free Flour is a staple in our pantry. I have used it for years and I havent found a gum-free, high-protein, legume-based, gluten-free flour like it that lends great structure to egg-free baked goods.
Many of the recipes on this site call for Bobs Red Mill All Purpose Gluten Free Flour and a number of readers have asked for a 1:1 substitute. If you live abroad where Bobs Red Mill products arent available, if youve run out, or if you are sensitive to possible cross-contamination with soy and/or tree nuts , then try this nearly identical Bobs Red Mill All Purpose Gluten Free Flour Substitute, cup-for-cup, in place of Bobs Red Mill All Purpose Gluten Free Flour.

When we started dabbling in offering gluten free baked goods, we went with this flour but found that our baked goods were still a bit loose or dense. We found that when working with this gluten free flour, adding a little xanthan gum along with it goes a long way and really helps build that structure to give you more fluffy gluten free baked goods. Ended up long term going with the Bob’s Red Mill 1-to-1 flour where we didn’t need to add the xanthan gum, but whenever that one is out of stock, this is our second choice base on quality it produces. The Bob’s Red Mill brand is a great choice all around!
