How To Make Gluten
- Preheat the oven to 300F. Place the cubed bread on a rimmed baking sheet and drizzle with the olive oil. Add a pinch of salt and toss to evenly combine.
- Bake, stirring every 10 minutes, for 30-35 minutes until dry and slightly toasted. Let cool.
- Melt butter in a large skillet over low to medium heat. Add the onion, celery, and 1/4 teaspoon salt and cook until completely soft, about 15 minutes. Add the garlic, thyme, sage, pepper, 1/4 teaspoon salt, and gluten-free soy sauce and cook for another 1-2 minutes. Remove from heat and set aside.
- **To make-ahead stop here and store the celery/onion mixture in the fridge until the next day and keep the toasted bread at room temperature.
- Preheat the oven to 375F. Heat the chicken stock in the microwave or in a skillet until just simmering.
- Place the eggs in a bowl and whisk to combine. Slowly add the hot stock to the eggs, starting with just a few tablespoons while whisking constantly. Add the rest of the stock while whisking.
- Place the bread cubes, celery/onion mixture and stock/egg mixture in a large bowl and gently stir to combine.
- Pour into a prepared baking dish and cover tightly with tin foil.
- Bake covered for 30 minutes. Uncover and continue to bake for another 10-15 minutes until golden brown and toasted on top. Serve and enjoy!

Its Time For Some Good Gluten
I really wanted to update this recipe to cover some of the changes we made over the years .
The first time I made the stuffing it was for half the size but weve since doubled it because the leftovers are so good!
In a nutshell, we developed this recipe using a hard crouton mixed with soft croutons. Then coated in egg whites as a binder to make the perfect and fluffy gluten-free stuffing!
More about the update for good gluten-free stuffing at the end of this post.
So I had to give up gluten around Thanksgiving of 2010.
Stuffing was always my favorite side dish, so I tried a lot of the gluten- free stuffing mixes and breads and made my own bread and croutons and it just never worked out well.
Those early attempts at gluten-free stuffing never had the texture of real stuffing. And I really dont like cornbread stuffing or dressing as some may call it, either so I gave up.
Until very recently, because so many new gluten-free products are now available and Ive learned a lot more about cooking since then. I had to give it one more shot! And Im so glad that I did.

I was elated to find this product just days before Thanksgiving. I miss many of the old foods I used to be able to enjoy, so I was not willing to forego my stuffing. I made it according to directions, adding poultry seasoning and it. was. amazing! It was just like the stuffing Ive enjoyed in the past, except gluten free. I could taste no difference and I am very, very picky. I was happy I picked up two boxes on that shopping trip because I get to enjoy it again tonight! This is hands down the best gluten free stuffing Ive ever had! The lack of corn is wonderful and the taste is amazing. This was my first Christmas that I feel like I was able to enter into the meal and feel like I wasnt left out a bit!

Ingredients In Thanksgiving Stuffing Recipe
- Dry Bread – you can make your own dried bread cubes, or buy them in the deli or bakery section of the grocery store. You want them to be about ½ – ¾ in size.
- Butter – you can use salted or unsalted butter for this recipe.
- Onion – white or yellow onions work great.
- Celery – you can use the entire stalk, cutting it into uniform ½ pieces.
- Poultry Seasoning – you should be able to find this in the spices section at the store.
- Thyme and Sage – we prefer fresh herbs, but in a pinch, dried will work, too.
- Salt and Pepper
- Chicken Stock – you can purchase stock in the box from the store, or even make your own. You can also use vegetable stock to make this vegetarian.
- Parsley – fresh chopped parsley is an optional garnish. It adds a nice freshness to your stuffing.
Its All About The Croutons & A Binder
So to make a good gluten-free stuffing I needed a better binder and tougher grains in the bread/croutons.
Egg whites seemed like they would make the perfect binder.
Not too much egg so that it resembled bread pudding but just enough to coat the croutons and help them stick together.
So I beat the egg whites by hand with a whisk for about a minute to make sure the constitency was even and introduced a little air into the egg whites.
I found two types of croutonswith better and stronger grains as ingredients:
- Ians Gluten-Free Savory Homestyle Stuffing
- Olivias Gluten-Free Rosemary & Sage Stuffing
I initially made a simple test run of moms traditional recipe with Earth Balance Spread, which came out greasy, the croutons were hard and the onions and celery were still pretty raw.
So I decided to cook down the onions and celery in olive oil with a little salt and pepper first.
Let it cool then try it with croutons tossed in egg whites and butter or ghee to see what worked best.

Can I Add Sausage To This Gluten
Yes, you can add sausage to this gluten-free stuffing recipe. Every once in a while my family requests that I add sausage to switch things up. If you want to add sausage, simply brown a half pound of sausage and mix it into the stuffing mix before you bake it.
You can use a spicy sausage or keep to the flavors and use a breakfast sausage with sage.
