Because angel food cake is produced from egg whites, it is simple to convert it to a gluten-free version because it has the same structure. The taste and height of this fruit are both excellent qualities. It has a wet and light feel to it. The cake has a somewhat more distinctive flavor than a typical box cake, which is one of the reasons I enjoy it.

    I cant quite describe how wonderful it was to have angel food cake again, just as I had remembered when Mom made it.

    Tapioca flour:

    Tapioca flour enhances the texture of baked items and helps bind gluten-free recipes. The tapioca flour aids in the crispy texture of crusts and the chewiness of baked items.

    Potato starch:

    In baking, potato starch adds structure, softness, and binding power. Potato starch works similarly to cornstarch, resulting in a more delicate texture. Like cornstarch, if you use too much it can make your cake dry and crumbly so be careful when measuring!

    Sugar:

    Sugar increases the temperature when the egg protein thickens, allowing the cake to rise further before setting.

    Cream of tartar:

    Cream of tartar is an acid that helps stabilize whipped egg whites. Because the egg whites provide the majority of the cake’s volume and structure, you cannot swap out this ingredient.

    Growing up, my mom would make us angel food cake for every birthday. She would top it with a slathering of Cool Whip and crushed up Heath toffee bars.

    Ingredients In Gluten Free Angel Food Cake

    Gluten

    Egg whites – Egg whites are the main ingredient therefor I don’t have an egg-free version at this time.

    Powdered Sugar – Adds sweetness.

    Granulate Sugar – Adds sweetness and moisture and helps to stabilize the egg whites.

    Gluten Free Flour – I used Bob’s Red Mill 1-to-1 Gluten Free Baking Flour. I don’t recommend Bob’s Red Mill All-Purpose Gluten Free Flour or Namaste in this recipe.

    Cream of Tartar – Cream of tartar is used to add volume and stabilize and whiten whipped egg whites.

    Vanilla Extract – Use pure vanilla extract.

    Almond Extract – Adds flavor. Don’t worry if you don’t’ have any on hand. You can leave it out.

    Salt – Flavor enhancer.

    Sift The Flours Into The Meringue

    Because this is a super-delicate cake, it requires super-light flour. Although for most gluten free baking, I tend to simply shake the flour blend together to mix, this is one sponge that absolutely requires the sifting of flour. Use a fine-mesh sieve to get it as light as possible.

    And be sure to weigh the flours carefully and accurately. The flour blend that I have given for a gluten free Angel Food Cake is carefully balanced.

    What Is The Best Type Of Cake Pan To Make Angel Food Cake In

    Angel food cake needs to be baked in a tube pan so the cake can rise up the side of a smooth surface. I highly recommend getting an angel food cake pan that has a removable center and has three attached feet along the rim to elevate the cake after you invert it to cool. I bake with a 10-inch Wilton Angel Food Tube Cake Pan.

    I have not tried baking angel food cake in a bundt pan because without the right type of pan the cake will fall.

    How To Make Angel Food Cake Even Better: Go Gluten

    Of all the things gluten does well, tender, light, and fluffy angel food cake belongs nowhere on the list.     Can I freeze angel food cake? Yes, you can. Wrap your cake in plastic wrap and place in a freezer bag. This will keep for a considerably long time in the freezer, provided the temperature stays consistent.

    How To Make Gluten

    • Move the oven rack to the lowest position. Preheat the oven to 350°F.
    • Mix the cornstarch and gluten-free flour together in a small bowl and set aside.
    • In a large bowl, using a stand-up mixer or hand mixer beat the egg whites and cream of tartar together on medium speed until foamy.
    • Beat in the granulated sugar and powdered sugar on high speed, adding the pure vanilla and almond extract and salt. Continue beating until soft peaks form and the meringue looks glossy.
    • Sprinkle the cornstarch and gluten-free flour mixture, ¼ cup at a time, over the meringue and beat on medium speed until all the flour mixture is fully combined.
    • Pour the cake batter into an ungreased 10-inch x 4-inch angel food cake pan . Use a spatula to smooth the top of the batter. Cut gently through the cake batter in a circular motion with a butter knife .
    • Bake for 30-35 minutes or until golden brown and the top springs back when touched lightly.
    • Immediately turn pan upside down onto a heatproof funnel or bottle. If you have a tube pan with legs, turn the pan upside down on a heatproof cutting board. Let the cake cool for 2 hours upside down.
    • Once the cake has cooled, turn the cake right-side-up and run a knife inside the rim of the cake pan. Invert cake onto a serving platter to remove the cake from the pan. Cut the cake into slices using a serrated knife to avoid smashing it .
    • Store leftovers in an air-tight container.

    Ive only been able to find one brand of gluten-free angel food cake mix and that is from the Kinnikinnick brand. This cake mix contains sugar, potato starch, white rice flour, cream of tartar, and salt.

    Luckily, this brand tests for gluten, dairy, tree nuts, peanuts, and soy, so its a good option for you on a gluten-free diet, and also great if you avoid dairy.
