Does Angel Food Cake Contain Gluten

Gluten Free Angel Food Cake – Everyday Food with Sarah Carey

Because angel food cake is produced from egg whites, it is simple to convert it to a gluten-free version because it has the same structure. The taste and height of this fruit are both excellent qualities. It has a wet and light feel to it. The cake has a somewhat more distinctive flavor than a typical box cake, which is one of the reasons I enjoy it.

Tips For Making Gluten

  • The pictures above show what firm and glossy egg whites look like. To be sure they whip, use room temperature eggs and make sure your bowl is completely clean. No speck of egg yolk should enter the bowl either.
  • You must use super-fine sugar and since I dont ever hand this on hand, I made my own by putting into my blender and whizzing until it was very fine, like sand. They do sell super-fine sugar, but I havent ever found an organic one. By making my own, I could use organic evaporated cane sugar, and save a tripe to the store.
  • You must sift your dry ingredients .
  • To keep a smooth consistency, you add the flour mixture literally 2 tablespoons at a time, folding by hand to mix, not stirring. It is the step that takes the longest, but it is essential.
  • Youll let your berries sit in a bit more of the superfine sugar as the cakes bake and cool, or even better, do this step the night before. This is where the juiciness comes from, macerating so that they create their own simple syrup. The best.

I cant quite describe how wonderful it was to have angel food cake again, just as I had remembered when Mom made it.

They have just the right amount of toasty crunch on the outside, and cloud-like fluffiness on the inside. Topped with homemade whipped cream, a divine dessert.

Key Ingredients For Angel Food Cake:

    Eggs whites:

Angel food cake rises without the need for leavening agents. The air whipped into the egg whites is responsible for the rise hence, this step is crucial. Make sure you use fresh egg whites free from any form of egg yolk. Any yolk remaining in the whites can interfere with their ability to whip correctly.

    Cornstarch:

When combined with flour, cornstarch is believed to “soften” the flour’s harsh proteins, resulting in a more delicate baked good. If you use too much it can make your cake dry and crumbly so be careful when measuring!

    White rice flour:

White rice flour’s unique gelatinous quality helps improve the texture of gluten-free baked items.

    Tapioca flour:

Tapioca flour enhances the texture of baked items and helps bind gluten-free recipes. The tapioca flour aids in the crispy texture of crusts and the chewiness of baked items.

    Potato starch:

In baking, potato starch adds structure, softness, and binding power. Potato starch works similarly to cornstarch, resulting in a more delicate texture. Like cornstarch, if you use too much it can make your cake dry and crumbly so be careful when measuring!

    Sugar:

Sugar increases the temperature when the egg protein thickens, allowing the cake to rise further before setting.

    Cream of tartar:

Cream of tartar is an acid that helps stabilize whipped egg whites. Because the egg whites provide the majority of the cake’s volume and structure, you cannot swap out this ingredient.

    Why This Recipe Works

Growing up, my mom would make us angel food cake for every birthday. She would top it with a slathering of Cool Whip and crushed up Heath toffee bars.

Good news! Ive created a gluten-free angel food cake recipe that tastes just like the gluten-filled traditional angel food cake. Light, fluffy, heavenly. In every bite! With just a few simple ingredients, you can have a light dessert that is perfect for any occasion Mothers Day, Easter, birthdays, and more!

Top a big slice of this angel food cake with some homemade whipped cream and fresh berries, a drizzle of strawberry coulis, or some chocolate sauce. No matter which way you top it, this cake is sure to be a crowd pleaser.

Ingredients In Gluten Free Angel Food Cake

    Gluten

Egg whites – Egg whites are the main ingredient therefor I don’t have an egg-free version at this time.

    Powdered Sugar – Adds sweetness.

Granulate Sugar – Adds sweetness and moisture and helps to stabilize the egg whites.

Gluten Free Flour – I used Bob’s Red Mill 1-to-1 Gluten Free Baking Flour. I don’t recommend Bob’s Red Mill All-Purpose Gluten Free Flour or Namaste in this recipe.

Cream of Tartar – Cream of tartar is used to add volume and stabilize and whiten whipped egg whites.

Vanilla Extract – Use pure vanilla extract.

Almond Extract – Adds flavor. Don’t worry if you don’t’ have any on hand. You can leave it out.

    Salt – Flavor enhancer.

Sift The Flours Into The Meringue

Because this is a super-delicate cake, it requires super-light flour. Although for most gluten free baking, I tend to simply shake the flour blend together to mix, this is one sponge that absolutely requires the sifting of flour. Use a fine-mesh sieve to get it as light as possible.

And be sure to weigh the flours carefully and accurately. The flour blend that I have given for a gluten free Angel Food Cake is carefully balanced.

What Is The Best Type Of Cake Pan To Make Angel Food Cake In

Angel food cake needs to be baked in a tube pan so the cake can rise up the side of a smooth surface. I highly recommend getting an angel food cake pan that has a removable center and has three attached feet along the rim to elevate the cake after you invert it to cool. I bake with a 10-inch Wilton Angel Food Tube Cake Pan.

I have not tried baking angel food cake in a bundt pan because without the right type of pan the cake will fall.

How To Make Angel Food Cake Even Better: Go Gluten

    • Email

Of all the things gluten does well, tender, light, and fluffy angel food cake belongs nowhere on the list. Thanks to the sheer volume of water found in egg whites, angel food cake toughens up like shoe leather in the presence of gluten. So much so that the single most important ingredient in the recipe’s evolution is chlorinated cake flour : an ultra-low-protein alternative whose gluten-forming potential is further hampered through a process that fundamentally changes how its starches and proteins behave.

While I’ve got no gripe with the process , some folks prefer to avoid bleached cake flour, and others live in parts of the world where it’s unavailable. The obvious choice would seem to be unbleached cake flour, but I have no interest in adapting my recipe to combat its strength.

I mean, why fight gluten when you can avoid it altogether?

Some recipes throw a fit when you try to take away the wheat flour, but not angel food. It’s always chafed under the tyranny of gluten, and it’s glad to see it go. Besides, angel food cake is so high in protein from egg whites, it has enough strength to stand on its ownjust like the firm, sliceable meringue atop your favorite custard pie. With that kind of underlying structure, all angel food cake really needs is enough starch to keep its moisture in check, ensuring that it bakes up airy and light rather than eggy and dense.

Gluten Free Angel Food Cake 101

The best part of a good angel food cake is the versatility of this sweet and light dessert. A few things to know about angel food cake:

How is gluten free angel food cake different? Angel food cake is unique from other cakes because of the lack of butter used. It it popular as a light and fluffy texture.

What kind of pan should I use for angel food cake? We opted for a 10 inch round tube pan for this cake. We should note that even though angel food doesnt use butter, we found it was important to grease the pan very lightly so the cake will come out properly. Traditionally this is not recommended, but if you find your cake is being stubborn in your pan, this may just do the trick. Its also important to allow the cake to cool completely before removing.

How should I store my cake? The best way to keep your gluten free angel food cake fresh is to place in an airtight container in the refrigerator. It will keep for up to a week.

Can I freeze angel food cake? Yes, you can. Wrap your cake in plastic wrap and place in a freezer bag. This will keep for a considerably long time in the freezer, provided the temperature stays consistent.

    How To Make Gluten

    • Move the oven rack to the lowest position. Preheat the oven to 350°F.
    • Mix the cornstarch and gluten-free flour together in a small bowl and set aside.
    • In a large bowl, using a stand-up mixer or hand mixer beat the egg whites and cream of tartar together on medium speed until foamy.
    • Beat in the granulated sugar and powdered sugar on high speed, adding the pure vanilla and almond extract and salt. Continue beating until soft peaks form and the meringue looks glossy.
    • Sprinkle the cornstarch and gluten-free flour mixture, ¼ cup at a time, over the meringue and beat on medium speed until all the flour mixture is fully combined.
    • Pour the cake batter into an ungreased 10-inch x 4-inch angel food cake pan . Use a spatula to smooth the top of the batter. Cut gently through the cake batter in a circular motion with a butter knife .

    • Immediately turn pan upside down onto a heatproof funnel or bottle. If you have a tube pan with legs, turn the pan upside down on a heatproof cutting board. Let the cake cool for 2 hours upside down.
    • Once the cake has cooled, turn the cake right-side-up and run a knife inside the rim of the cake pan. Invert cake onto a serving platter to remove the cake from the pan. Cut the cake into slices using a serrated knife to avoid smashing it .
