KETO/GLUTEN FREE SPRING ROLLS WITH WRAPPER AND FILLING/low carb EGG ROLLS -NO DAIRY/NO EGGS
  • To pan-fry: Heat a little neutral vegetable/canola oil in a skillet/wok. Then, add a few pancake rolls to the oil and fry, turning often, until golden brown and crispy. Remove from the skillet, then serve.
  • For air fryer spring rolls: I havent tried this method . But I recommend cooking the crispy rolls in batches in your air fryer at 370F/190C for 10-15 minutes, flipping once at 8 minutes. Keep an eye after flipping them until browned and crispy, as I dont know the exact times.
  • Be generous with the oil: When baking vegan egg rolls, they rely on oil for the crispiest results. So dont be too stingy when brushing them with oil before baking.
  • To quickly/easily shred veggies: You can use a mandoline on the julienne setting, handheld vegetable shredder, or food processor disk.
  • Allow the filling to cool before filling the gluten-free spring rolls. Otherwise, the warm filling can cause steam and make the wrappers wet, ruining their ability to crisp up properly. You should also drain or squeeze out excess liquid from the filling before stuffing so that it is drier. Also, make sure not to overfill the rolls.

Pro Tips And Recipe Notes

  • If you prefer a crispier taste, let your spring rolls sit until the wrapping is firm and then fry them in oil for 4-5 minutes and drain on a paper towel. Theyre similar to an egg roll and so good.
  • Our turkey mixture is delicious. Feel free to go with other fillings. In the next picture, you can see our deep-fried gluten free spring rolls made with cubed chicken, onion, kale and tamari sauce. Its up to you.

Leftovers will keep in an airtight container in the fridge for 3-4 days which makes them a great grab-and-go lunch.

How To Make Dumpling Wrappers

I recommend using the metric measurements in grams for exact results.

Step 1: Mix the dough

  • Combine all the dry dough ingredients in a bowl, then add the water , and mix thoroughly with a spoon waiting a few minutes until the dough isnt too hot to handle.
  • Knead the mixture into a smooth dough for around 1-2 minutes with your hands .
  • Add a little more water in the dough isnt pliable and smooth or a little more flour if its too sticky.

Step 2: Divide the dough

  • Wrap the dough in cling film and chill it in the refrigerator for 30 minutes.
  • Then, divide it into four pieces, placing three back in the fridge , and rolling the remaining piece out into a rope shape. Divide the rope into 7-8 pieces.

Step 3: Roll out the dumpling wrappers

  • Dust the counter with a little tapioca flour/cornstarch and flatten each piece with your hand to begin .
  • Roll out the dough with a rolling pin until it about 2 mm thin.

A pasta machine would also work for even dough. Remember, gyoza wrappers are usually thinner than regular Chinese dumpling wrappers so feel free to adjust the thickness.

  • Use a round cutter or glass to cut the dough into round potsticker/gyoza wrappers OR cut out 3 1/4-inch/ 8x8cm squares for wonton wrappers. Dust each with a little cornflour/tapioca starch.

Traditionally, the dough can be weighed out to even pieces and rolled into individual round wrappers without a cutter. However, this isnt a method Ive done enough to do confidently.

    For Homemade Spring Rolls Wrappers From Scratch:

  • Prepare the batter: mix the flours and salt together in a bowl, add the egg white , then add a bit of water and mix with a whisk until you have the right consistency. It should be fairly runny, as in the pictures above.
  • Cover it with cling film and set aside for at least 10 mins or so.
  • Heat up a non-stick frying pan on very low heat and grease it with a tiny bit of olive oil.
  • With a pastry brush, add a thin layer of batter in your pan .
  • Let it cook briefly. When ready, youll notice the sides start to lift off the pan easily with the help of a spatula. Theres no need to cook it on the other side as theyre so thin.
  • Set aside on a plate and cover them with a damp paper towel or cloth to prevent them from drying and cracking while you cook the rest.
  • Roll your spring rolls: add a bit of filling on one end and tuck it in by folding one side over. Keep rolling tightly until youre about half way, then fold both sides over, tucking in the filling in the middle. Brush a bit of the leftover egg yolk on the remaining loose end . Then complete the roll.
  • Set aside on a plate, covered with a damp paper towel or cloth to prevent them from drying.
  • Pre-heat your fryer to 175C . Alternatively you can use a saucepan with a couple of inches of vegetable oil or cooking fat of your choice and use a food thermometer to keep track of the temperature.
  • Fry for 6 to 7 minutes, until crispy and slightly golden. Note: be careful not to overcrowd the fryer or pan, cook them in small batches.
