What Is Whole Wheat Bread

Whole wheat bread is not the same as whole grain bread. According to the Government of Canada, whole wheat flour is milled with some of the fibrous bran and most of the nutritious germ removed to help reduce rancidity and prolong the shelf life. In order to be deemed whole grain, we need to have the entire original kernel intact. In some cases, the bread will say 100% whole wheat to indicate that no other grains are mixed with wheat. Nevertheless, whole wheat bread is still higher in fibre, protein and several vitamins and minerals than white bread.

How Do You Eat Sprouted Bread

The moist environment can promote bacterial growth. For that reason, Secinaro recommends that you dont eat raw sprouted grains. Instead, mash them into a paste for use in baked goods, or cook the raw sprouts before adding them to a meal. Cooking or baking the sprouts should be enough to kill any bacteria.

Is Any Ezekiel Bread Gluten Free

There are a variety of gluten free breads available on the market, and Ezekiel bread is one of them. This bread is made from sprouted grains, and does not contain any gluten. It is a healthy option for those who are celiac or have a gluten intolerance.

Gluten cannot be fully absorbed by humans. Can a person be gluten sensitive and still be a gluten free person? It simply means that gluten protein is too large and difficult to digest for humans to consume fully. The study, which was published in the journal Clinical Gastroenterology and Hepatology in 2011, was carried out by the University of Delaware. Despite the fact that wheat flour is found in some breads, scientists created a bread that would not upset celiac patients. Group 1 was fed regular bread containing more than 80,000 ppm of gluten, while Group 2 was fed gluten-free bread with two participants. In Group 3, five people had access to hydrolyzed bread, which contained only 8 ppm of gluten.

It will be confirmed once the follow-up labs have completed the work. It can be determined through a proper lab test, but not everyone can afford to do so. Ezekiel Sprouted Grain Bread products are ideal for those who suffer from gluten sensitivity or are gluten intolerant.

What Is Sprouted Wheat

To make wheat flour , a manufacturer will harvest the seeds from a mature wheat, barley or oat plant, for example. The seeds are harvested before they have germinated or sprouted into a full-fledged plant. Manufacturers then grind these seeds to make flour.

The Whole Grains Council says a grain is sprouted when the seed cracks open and a baby root sprouts from the grain. These sprouted grains are then ground up and used in baked goods.

Because the grains are sprouted, they cannot technically be turned into a flour. This enables manufacturers to label foods made with sprouted wheat and grains as flourless.

Testing Food For Life Gluten

Healthy Delicious Whole Grain Life Bread | Vegan | Gluten Free | Easy

As mentioned, Food For Life makes gluten-free labeled English muffins made from organic brown rice flour, tapioca flour, potato starch, flax seeds, chia seeds, sesame seeds and more. This product is clearly labeled gluten free, but also includes this warning, Good manufacturing practices are used to segregate ingredients and products in a facility that also processes wheat, soy and tree nuts.

A reader asked me to test Food For Life Gluten-Free English Muffins for hidden gluten with my Nima Sensor, a portable gluten-detecting device. She suspected they contained gluten after she felt sick eating them. Since then, she invested in a Nima Sensor of her own and her Nima Sensor found gluten. My Nima Sensor found gluten too.

But before you write off these products as unsafe, things are about to get really interesting.

I sent an email to Food For Life to share my test results and to see if they had any comment on why my Nima Sensor may have found gluten.

Within 24 hours of sending my inquiry, I received a phone call from Adolfo Suarez, a quality control supervisor at Food For Life. He looked up the specific lot number of the English muffins I tested, and told me that his testing didnt find any gluten.

Why, then, did my Nima Sensor, and the Nima Sensor of one of my readers, find gluten? Could these be false positives? Does Nima struggle to accurately test sprouted ingredients? Or did these English muffins contain gluten after all?

What Is White Bread

White bread typically refers to wheat breads with the outer bran and germ removed during milling process leaving the starchy endosperm. Without natural oils present in the whole grain, white bread has a longer shelf-life and lighter texture. However, according to the Whole Grains Council, without the bran and germ, about 25% of a grains protein is lost along with much of the fibre and important vitamins and minerals.

According to the Government of Canada, some white breads are enriched with certain vitamins and minerals that were removed during milling. In Canada, manufacturers are also required to fortify white flour with folic acid. However, white flour still lacks some nutrients found in whole grain .

Ezekiel and sprouted wheat breads are taking off in the ancestral diet department but does this work on a gluten free diet? Spoiler alert: Sprouted grains, while containing less or different gluten from modern wheat, are not gluten-free. And even old land-race or ancestral strains of sprouted, organic, fermented wheat may be poorly tolerated in a modern-day injured gut. We have different wheat nowadays, and different guts!

In the case of wheat, grinding and refining non-sprouted seeds retains a lot of gluten great for that doughy elasticity we so enjoy in stuff like dinner rolls or doughnuts, but bad for gluten-sensitive people.

How Much Gluten Is In Sprouted Wheat

While sprouted wheat is not safe for people on the gluten-free diet, people who eat gluten can tolerate bread made from sprouted wheat more easily than wheat flour. This is because sprouted wheat contains less gluten than non-sprouted wheat.

One study showed that the sprouting process can decrease the amount of gluten in wheat by up to 47 percent. However, sprouted wheat still contains a significant amount of gluten.

Product: Food For Life Sprouted For Life Gluten Free Flax Bread $5.99+

A little while ago, I was introduced to a couple of new breads on the market. While the brand name has been producing gluten-free breads for awhile now, it wasnt a brand that I actively sought out. Yes, I saw it all the time in the freezer section of Whole Foods and other natural food stores, but I had grown accustomed to snagging Rudis or Udis or the Aldi liveGfree brand or Canyon Bakehouse. Food For Life was thereI just always overlooked it.

And why?

Who knows? As an active athlete, its important to properly fuel my body and eat wholesome foods. Most products on the market for the gluten-free diet happen to be junk food. It drives me nuts. I hit that gluten-free section of a store and I can find a vast array of cookies, crackers, chips, pretzels, and the like. It is one of the biggest pet peeves of the grocery store. Yes, a lot of people with Celiac and gluten intolerance do miss out on some of the finer treats like Oreos and the like, but the shelves are literally overrun with products that arent going to feed your body right and healthy.

Food For Life stepped up and decided to start a line with four varieties of completely gluten-free breads that were specifically created with the health of consumers in mind. Not only are they gluten free, but they are also vegan and made from nutrition packed ingredients that have been sprouted to maximize nutrition and digestibility.
