Remember to cover your gluten-free bread with foil half-way through baking so it doesn’t over-brown.

You might read that a loaf is done baking once it hits around 200 degrees F. Please bake this loaf 60-65 minutes even if your thermometer says otherwise.

Tips For Measuring Gluten

The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup.

Friends, please do not scoop the flour out of the bag with your measuring cup. If you do you may get more flour than the recipe calls for.

Also, measure flour using nested measuring cups. Do not measure dry ingredients in a liquid measuring cup.

What Is A Bread Machine

Okay, you most likely already know what a bread machine is if you’re here: a bread machine is a machine that makes bread. Duh. But what you may not know is technically how it works, and what processes it simulates to help you create better easier breads and doughs. It will have a built-in pan that will be your only available bread or dough size, and some sort of electronic dial to operate it. The other most important part is that your machine will probably have a removable paddle that you can attach to the pan this paddle serves to actually stir up the ingredients and create your dough for you. So these are the basic parts that make up a bread machine, now let us explore how to actually use it!

How To Make Bread In A Bread Machine

All bread maker varieties will be slightly different, and how you use it will be up to the particular instructions in your machine. There are some common steps that you will probably take no matter which bread machine you have, but always read your instruction manual for specifics. The first step, of course, will be mixing in all the different ingredients. When you are making bread by hand, you mix ingredients very carefully and in a specific order–this does not change when making bread with a bread machine. Each machine will have a different order of ingredients listed, but most will be compiled of the following basic ingredients.

You will probably just mix them all together, but putting them in in the correct order is important to activate the yeast at the exact right time. My Two Favorite Bob’s Red Mill Flours Are

Both of these flours are great for baking cookies and breads. The 1 to 1 Baking Flour contains xanthan gum so you won’t need to add any extra. I keep both of these in my pantry for when the baking bug strikes.

I used coconut sugar but you can easily replace that with regular sugar or even honey if you prefer. I like the flavor of coconut sugar but I don’t believe it’s better for you or has a lower glycemic load. It has a wonderful maple flavor that goes so well in quick breads like this Gluten Free Zucchini Bread.

Gluten Free Yeast Bread Recipe

The most important part of this recipe is being sure your yeast is good. Because yeast is alive, its important to check the expiration date, and if for some reason when you activate your yeast it doesnt bubble and puff up its no good! Opt for trying to activate your yeast again or head to the store and grab some new yeast.

Tips For Making Gluten

Gluten Free French Bread ~ Using Bob’s Red Mill Flours

Here are my tips that work with this gluten-free bread recipe. See blow for my gluten free bread machine recipe.

Don’t substitute anything unless I specified above that I’ve tested it. This is important. If you substitute something I can’t guarantee anything and I can’t help you troubleshoot if something doesn’t work in your gluten-free bread.

Ingredients at room temperature work best. You can always run your eggs under warm water for a couple minutes to bring the temperature up.

Read the recipe instruction and get all ingredients out before you start.

Use dry active yeast or quick yeast.

If your bread sinks in the middle before it is done baking you most likely let the yeast proof sit too long before using it or you let your bread rise too long. You want put your gluten-free bread in the oven when it rises just above the top of the loaf pan, no longer.

Make sure your water is between 95-110 degrees before adding the yeast. If you don’t have a thermometer I suggest you get one.

Line the loaf pan with parchment paper and then spray it with oil, this will help you remove the loaf from the pan.

Pan size matters. If you use a wider pan your loaf will be wider, and shorter. If you use a narrower pan your loaf baking time might change.

Why Was My Gluten Free Bread Dense

For your bread machine, does it have a gluten free setting? This setting is important because it only does one mix cycle, not two mix cycles like you get with other settings.

If you don’t have the gluten free setting option, use a quick program that features one mixing cycle, rather than two. Mixing it twice will always cause the bread to be denser.

Are you scooping your measuring cup into the flour? Or spooning the flours into the cups then leveling? You should always spoon then level.

Otherwise you’ll end up with more flour then you want which causes the bread to be dense.

Are you storing your flours in the freezer or refrigerator? If flours are stored that way they loose moisture and when they are mixed with other ingredients they tend to absorb more of the moisture and the bread is denser.

We briefly mentioned that there are other ways to use a bread machine, some of which aren’t even for bread! Many bakers simply use the paddle feature to mix their dough. You can do this, and then bake the bread in your oven the typical way, or you can save the mixed dough in the freezer to have on hand for emergencies. Another way bakers love to use bread machines is to make other types of dough, like pizza dough or pasta dough, for instance. Some models can even be set to make other things, like jam or mochi, as well, in case bread is not quite your jam . . . get it? Jam? Oh well . . .

How To Make Gluten

  • Chop the cranberries. You can do this by hand using a large knife and a cutting board or you can use a food processor. Either way, you want the cranberries to be coarsely chopped.
  • Make the batter. Whisk together the dry ingredients in a large bowl and then add the wet ingredients. Stir until the batter is smooth.
  • Add a little batter to the pan. To prevent the cranberries from sinking to the bottom of the pan, spread a little batter, about 1/2 cup into a greased baking pan. This step is totally optional. If you dont care if some cranberries sink, skip it.
  • Stir in the cranberries. Gently stir the chopped cranberries into the batter. Look for them to be evenly spread throughout the batter but stop before the batter turns bright pink.
  • Bake. Spread the batter into the pan and bake until set. Like most gluten-free quick breads, this cranberry bread takes almost an hour to bake.
  • Take the temperature. The best way to ensure the loaf is done is to take its temperature. Use an instant-read thermometer to check that its reached 205 degrees F.
  • Cool and slice. I know its hard but you want to make sure the loaf cools before you slice it. This gives the bread time to set up. If you slice it too soon, it will appear gummy even though the loaf is fully baked.
