How To Make Gluten Free Bread
Making homemade gluten free bread is kind of like making a muffin batter. As in, the consistency will be different from the traditional white flour bread dough, so no kneading is required, wahoo!
- Pour yeast into the bowl of an electric stand mixer, along with sugar and warm water. Whisk to dissolve yeast, then let rest 5 10 minutes to proof yeast.
- Add in remaining granulated sugar, the milk, canola oil, butter, eggs and lemon juice. Fit mixer with paddle attachment and whip on low speed to combine.
- Add in all remaining ingredients and mix on low speed to combine, then increase to medium speed and mix 5 minutes.
- Pour bread dough into a buttered 9-by-5-inch baking dish and spread to both ends with a rubber spatula. Smooth top with wet hands, while slightly doming loaf.
- Transfer to a warm place free from draft to rise for 1 hour to 1 hr 15 minutes. Preheat oven to 375 degrees during last 10 minutes of rising.
- Bake bread in preheated oven for 20 minutes, then reduce oven temperature to 350, tent loaf with foil and bake 20 minutes longer, or until loaf is done .
- Cool in loaf pan several minutes, then invert onto a wire rack to cool completely.

Why Isnt My Gluten Free Bread Rising
Honestly, there are several reasons why you may run into this issue. First and foremost, I implore you to follow my bread recipe exactly as written to avoid this type of problem. This includes using the same ingredients, especially the flour blend.
One reason you bread may not be rising is that youre simply not allowing it enough time to proof. Ideally, itll rise in 30 to 45 minutes, but depending on local conditions, it may simply take longer.
Dont try to speed up the proofing process by sticking your dough in a hot oven thats a quick way to kill your yeast, and then your bread will never rise.
Make sure to use instant yeast. If you only have active dry yeast on hand, follow my instructions above to make the substitution.
Tips For Baking Gluten
- Make sure you have fresh yeast .
- Always use room temperature ingredients! Yeast thrives in a warm environment.
- You can bring your egg whites to room temperature by pacing the whole large eggs in a bowl of really warm water and let them sit for 5 minutes.
- Always use gluten-free non-stick cooking spray to grease your pan and the plastic wrap. I like either coconut oil or olive oil cooking spray.
- Bake the bread on the middle rack.
- I also like to bake my bread horizontally for even baking.
- Remove the loaf from the baking pan and place it on a cooling rack. If the bread cools in the pan, the steam can get trapped and the loaf can get soggy, especially on the bottom.
- Use a serrated knife to slice the bread. Using a smooth-blade knife can squish the bread.

Gluten Free Dairy Free Bread
That ones easy. Just replace the butter with vegan butter. Melt and Miyokos Kitchen brands are my favorite.
You can even use Earth Balance Buttery Sticks and reduce the salt to 1 teaspoon.
Use any nondairy milk you like, just be sure its not nonfat and is unsweetened. I really like unsweetened almond milk here.

I had always wanted to try making it in a Pullman loaf pan. That was the only way to see if I could get those perfect, no-dome slices that are truly made for sandwiches.
Baking in a Pullman pan also tends to make softer bread. The moisture in the bread is trapped inside the pan during baking, and the bread absorbs it as it bakes.
The photo below is a loaf baked in a 2 pound Pullman loaf pan. The photo above is the bread rising in a 1-pound Pullman loaf pan.
You can make a 1-pound Pullman loaf, or a 2-pound Pullman loaf. The baking time is nearly the same, as the pans are much longer but also considerably more narrow.
What Is This Gluten Free Bread Dough Like
f you have any experience baking conventional yeast bread, this gluten free bread dough will seem completely unfamiliar to you.
This batter-style gluten free yeast bread dough is more like a loose cookie dough than it is conventional bread dough.
You need a mixer paddle attachment to mix it, most definitely not a dough hook!
The one drawback of this bread is that Ive never made it with total success with a bowl and spoon. Mixing all of the ingredients until theyre truly smooth and fully incorporated is just really hard without a stand mixer.
Its a bit fragile once its risen, so handle with care. If youd like to add seeds to the bread, do it after the dough has risen. Just brush the top lightly with melted butter and sprinkle with seeds.

Storage Tips & Suggestions
My #1 tip for gluten-free bread is to soften it in the microwave for 5-10 seconds! Most breads are kept frozen anyway, but they all tend to harden over time. Do yourself a favor and pop it in the microwave for a few seconds, as it makes a big difference. Also, I usually keep gluten-free bread in the freezer or refrigerator to maintain freshness as long as possible.

Gluten And Dairy Free Bread
This next recipe is for those that are not allowed gluten and dairy in their diet. To make a medium sized gluten and dairy free bread, you will need:
- 1 ½ cups of warm water, it should be about 105-110°F
- 2 tsp of active dry yeast
- 2 tsp of sugar
- 1 ½ tbsp. of apple cider vinegar
- 4 ½ tbsp. of olive or grapeseed oil
- 420 grams of gluten-free flour
To start your bread, pour the warm water in a measuring cup then add in the yeast and the sugar. Stir it then set aside until you can see foam forming on the mixture. That would take about 8 to 10 minutes.
Next, beat the eggs and egg white together and then add to the pan of the machine. Remember to take the pan out of the machine before you pour your liquid ingredients into it. This is so you dont get your machine wet in case of spillage.
Next, add the vinegar and the oil to the pan.
Then, add the yeast mixture to the pan.
Lastly, you can add the gluten-free flour to the liquid ingredients in the pan.
Place the pan back in the machine and set it to its gluten-free bread setting. Then you can start the mixing cycle.
After the mixing cycles, open the lid to scrape remaining flour on the sides of the pan. Again, use a spatula. At this time, the mixing paddle can also be removed so it will not be stuck in the bread after it is cooked.
Proceed with the rising and the baking cycle.
