Cooking The Gluten Free Tortillas
I recommend cooking the gluten free tortillas in a large non-stick frying pan. I dont recommend using a cast iron skillet but more on that below.
Its best to cook the tortillas on medium to medium-high heat and pre-heat your pan a few minutes before you start cooking them. The pan is ready when a drop of water sizzles on its surface.

The Real Coconut: Coconut Flour Tortillas
As I mentioned earlier, some of the Paleo tortillas that I tried were nearly inedible. The Real Coconut brand coconut flour tortillas are excellent. They do taste like coconut, so if you dont care for coconut at all, youll want to avoid these.
But somehow this brand is able to do with a tortilla what Siete havent done: make a flexible, good-tasting wrap out of coconut flour. The price is actually quite good but is likely higher if you buy it at Whole Foods since, well, its Whole Foods.

These flour tortillas are cooked in a hot, dry skillet. The best skillet to use is cast iron, but you can also use a nonstick skillet at a slightly lower temperature.
Make sure the skillet is very hot before you add the first raw, shaped round. If the skillet isnt hot enough, the raw dough will stick to the skillet.

All-purpose gluten free flour blend â for this recipe we used Bobâs Red Mill 1-to-1 Gluten Free Baking Flour or my gluten free flour blend #1
Xanthan gum â Xanthan gum helps to bind the ingredients and hold these gluten free flour tortillas together. If your blend includes it, omit it.
Baking powder â Helps with texture and gives it a little rise. Reduce to Â½ teaspoon if your blend includes baking powder.
Salt â For flavor.

Water â Youâve probably seen mixed messages on the water. Some recipes call for extra cold water, some call for hot water. You can use room temperate water or warm water in this gluten free tortilla recipe.

Thats why my gluten free tortillas contain chickpea flour and tapioca flour.
- Tapioca flour is sometimes also called tapioca starch. You can use arrowroot flour instead. Some readers have also had success with cornstarch .
- Chickpea flour contains plenty of protein and also many minerals and vitamins such as folic acid, copper, manganese, magnesium, phosphorus, vitamin B1 + B6, zinc, and fiber.
Whipping up these homemade wraps couldnt be easier. Many other recipes are more complicated and require that you knead a dough made from wheat flour, oil, and water, let it rest, roll it out and then fry it in the pan.
My recipe is much easier since you only have to mix the few ingredients together and then pour the batter directly into the pan. So simple!

Tips For Making Tortillas
- Use vegetable oil like canola oil.
- Use really warm water. I heat my water up for 20 seconds in the microwave. You dont want it boiling.
- Better Batter gluten-free flour made the best tortillas. They were soft, flexible, and had great flavor. Please see my notes below on the other brands of gluten-free flour I tested with this recipe.
- Cover the dough with a kitchen towel to keep it from drying out while you are rolling out the tortillas.
- Always use parchment paper when rolling out your dough.
- Using parchment paper or plastic wrap to cover the top of the dough when you roll it out will help the dough not stick to the rolling pin. I dont recommend flouring your rolling pin, as the flour tends to get on the tortillas and burns in the pan when you cook them.
- Roll all the tortillas so that they are the same thickness all around. The goal is to roll thin tortillas, so they are more flexible.
- Use a greased cast iron pan. I add a tablespoon of canola oil to the pan and then take a paper towel and rub it around. You dont want too much oil in the pan. You may need to repeat greasing your pan halfway through cooking the tortillas.
- I cooked my tortillas between the 6-7 setting on my stovetop. If you are not using a cast iron pan, you may need to lower your heat setting.
- Stack the tortillas on a plate and cover with a kitchen towel to keep warm while you are cooking them.

Really, I dont need to tell you why flour tortillas are awesome. You either love em or you dont. Me? Im in the love camp. So it thrilled me when this recipe finally came together.
This recipe makes a chewy, flexible wrap. Ready to begin?
In a medium bowl, whisk together the dry ingredients. Be sure to select a bowl with an opening large enough to reach into. This is important.
Add shortening or lard. While this recipe is gluten-free, dairy-free, egg-free, and nut-free, it isnt fat-free. And thats a good thing! The fat adds a pleasant flavor and texture to the wraps. Dont skip it!
Its best to do this recipe by hand. Reach right into the bowl and work the shortening into the flour with your hands. A snapping motion of your fingers accomplishes this task quickly. You dont want any large pieces of shortening to remaining.
Add the water. At first, just half a cup cold water. Stir it into the flour mixture.
The flour mixture will be dry. VERY dry. This is normal.
Add 1/4 cup additional water. Stir. If the dough just begins to hold together, stop adding water! If the dough remains dry, add another tablespoon or two of water.
You want to add the water slowly. If this dough gets too wet, its impossible to work with. Dont let that scare you! Just be cautious when adding the water and the dough will be fine.
Cover the dough with plastic wrap. This prevents a skin from forming.
