Gluten Free Cheez Its Recipe Tips

Gluten Free Flour I use King Arthur Gluten Free Measure for Measure Flour in the recipe which already contains xanthan gum. If your blend doesnt contain xanthan gum try it without adding it to your mix or add just a pinch of it.

Use a Sharp Cheese A sharp cheese will make a more flavorful cracker. Yellow or White Cheddar area both great options.

Shred the Cheese Pre-shredded cheese contains anti caking agents. For best results, shred your own cheese.

Use a Pastry Mat A silicone pasty mat works great for rolling the dough out. It helps keep the dough from sticking to the mat.

Use A Pizza Cutter A pizza cutter makes quick work of cutting out the crackers.

Chill The Dough Chilling the dough makes it easier to work with. If the dough starts warming up and becomes difficult to work with at any point of the process, pop it back in the fridge for a few minutes.

Work with Half the Dough Split the dough in half and work with a portion of the dough while leaving the other half in the fridge until youre ready to roll it out.

Roll Them Thin The crackers will bake crisper the thinner they are rolled out. Aim for less than thickness.

Bake Them Thoroughly All oven temps are slightly different. Bake the crackers until they are golden brown. They crisp up as they cool. You are better off baking them a minute or two longer so they stay crisp longer after baking.

can you use a non-nut free flour for these? i know it may make it un-paleo but am wondering about the consistency and ability to stick together. looking for a school safe snack! tks.

I haven’t made these cheese crackers by substituting the almond flour with a non-nut GF flour so I can not promise that the substitution will work perfectly.

However, the crackers should be fine with a replacement flour. You will likely need to add less of the replacement non-nut GF flour. If you add the full cup the dough will likely be very dry and crumbly. This is because almond flour has a high fat content, and does not absorb as much liquid as traditional flours.

I would start out with less of the GF, probably 1/4 c or 1/2 c and slowly increase the amount added until the correct texture is obtained.

I took the same Goldfish recipe and just tweaked the ingredients and baking process ever-so slightly. These yummy protein-packed squares are still made grain-free with chickpea flour, but the nutritional yeast is increased , and the paprika and black pepper become essential to round out the more intense cheddar flavor.

How To Make Gluten Free Cheez Its:

Step 1: Add all of your ingredients to a food processor. You want the cheese to get cut up into fine pieces so mixing by hand is not going to have the same effect.

Step 2: Mix on medium speed for 30 seconds. This is what your dough will look like. If your dough isn’t easy to work with, it is possible your gluten free flour blend is starchier than what I used. If that is the case a tiny bit more water will help.

Step 3: Preheat your oven to 375º F. Place your cheese cracker dough onto a piece of parchment paper. Dust your rolling pin with some gluten free flour to prevent sticking.

Step 4: Roll the dough out as thinly as you can where you can still move the cut pieces of cracker. Use a pizza cutting wheel or pasta cutter to make cracker shapes.

Step 5: After you cut the crackers out, use the pizza wheel to gently move each cracker so there is distance between them all. This will prevent them from sticking together as they bake.

Step 6: Use a chopstick to poke a hole into each unbaked cracker. Sprinkle the crackers with coarse salt. If you are trying to be low sodium, you can skip this step.

Don’t forget, you can use a mini cookie cutter if you prefer to make shapes like stars and goldfish.

Step 7: Bake the crackers for 15 minutes, or until golden.
