This Cake Truly Is Keto

Kinnikinnick Angel Food Cake Mix Free from Gluten, Soy, nuts, and Dairy

When I was doing research on how to make angel food cake, I came across a number of cakes that called themselves keto. I have to admit, was aghast that they all took either arrowroot starch or tapioca starch. And not just a little, either. One recipe took a full cup of starch. I knew it had to be possible to make it without any starch whatsoever. And turns out I was right!

Key Ingredients For Angel Food Cake:

Eggs whites:

Angel food cake rises without the need for leavening agents. The air whipped into the egg whites is responsible for the rise hence, this step is crucial. Make sure you use fresh egg whites free from any form of egg yolk. Any yolk remaining in the whites can interfere with their ability to whip correctly.

When combined with flour, cornstarch is believed to soften the flours harsh proteins, resulting in a more delicate baked good. If you use too much it can make your cake dry and crumbly so be careful when measuring!

White rice flour:

White rice flours unique gelatinous quality helps improve the texture of gluten-free baked items.

Tapioca flour:

Tapioca flour enhances the texture of baked items and helps bind gluten-free recipes. The tapioca flour aids in the crispy texture of crusts and the chewiness of baked items.

Potato starch:

In baking, potato starch adds structure, softness, and binding power. Potato starch works similarly to cornstarch, resulting in a more delicate texture. Like cornstarch, if you use too much it can make your cake dry and crumbly so be careful when measuring!

Sugar increases the temperature when the egg protein thickens, allowing the cake to rise further before setting.

Cream of tartar:

Cream of tartar is an acid that helps stabilize whipped egg whites. Because the egg whites provide the majority of the cakes volume and structure, you cannot swap out this ingredient.

Aldi Livegfree Stuffed Sandwiches

I was so excited to see these hot pocket lookalikes in the freezer. Not only are stuffed sandwiches like this impossible to find in the gluten-free world, but these sandwiches have a millet-based crust. As a fan of alternative grains, this sounded great to me. Of all of the products I tried, though, this is the one I wouldnt buy again. The crust was on the dry side, and the southwestern style black beans and veggies were missing oomph. Other gluten-free friends have raved about the pepperoni version of the stuffed sandwiches, so perhaps consider trying those instead. All are sold in a box of two and priced at a reasonable $2.69. Update: we tried these again and they were much better the second time around. We noticed a spicier filling and a much better crust texture, both of which we loved. These stuffed sandwiches will be available at all Aldi locations starting in August 2014.

Tips For Making Gluten

  • The pictures above show what firm and glossy egg whites look like. To be sure they whip, use room temperature eggs and make sure your bowl is completely clean. No speck of egg yolk should enter the bowl either.
  • You must use super-fine sugar and since I dont ever hand this on hand, I made my own by putting into my blender and whizzing until it was very fine, like sand. They do sell super-fine sugar, but I havent ever found an organic one. By making my own, I could use organic evaporated cane sugar, and save a tripe to the store.
  • You must sift your dry ingredients .
  • To keep a smooth consistency, you add the flour mixture literally 2 tablespoons at a time, folding by hand to mix, not stirring. It is the step that takes the longest, but it is essential.
  • Youll let your berries sit in a bit more of the superfine sugar as the cakes bake and cool, or even better, do this step the night before. This is where the juiciness comes from, macerating so that they create their own simple syrup. The best.

I cant quite describe how wonderful it was to have angel food cake again, just as I had remembered when Mom made it.

They have just the right amount of toasty crunch on the outside, and cloud-like fluffiness on the inside. Topped with homemade whipped cream, a divine dessert.

Angel Food Cake In 913 Pan

If you dont have an angel food tube cake pan, and youre wondering if theres any other way to bake this cake, I found a site that shows you how to hack an angel food cake pan.

But the good news is you can also bake this angel food cake in a 9×13 cake pan. Whenever we wanted to cut the cake into cubes for trifles, we baked it in a 9×13. It was easier to cut it into square cubes.

Do not grease the pan, but for easier removal, you can cut a piece of parchment paper to place into the bottom only. Bake for about 35 40 minutes, until the top appears dry and slightly cracked. Cool the cake upside down by resting the four corners on something of equal heights. Once cool, cut around the edges to loosen the cake and gently tap on the bottom to release it.
