  • First, you’ll prep your wet ingredients by melting your vegan butter and adding in the sugars, vanilla, and salt.
  • Mix until everything is melted together.
  • Then add the vegan cream cheese to the hot mixture.
  • Mix until you have a thick wet batter with no lumps.
  • Pour your wet mixture into a large bowl with your flour and baking soda.
  • Gently mix until smooth.
  • Add your choice of chocolate chips and fold them into the cookie batter.
  • Freeze the cookie batter for 15-20 minutes while you preheat the oven.
  • Make 2 tablespoon-sized cookie dough mounds with the frozen dough.
  • Bake the cookies in the preheated oven for 14 minutes. Take them out of the oven and add a few more chips to the hot cookies as they cool.

    Dont worry, these are still much healthier than Cinnabon and yet completely satisfy even the most fervent cinnamon roll cravings.

    Making these gluten free vegan choc chip cookies honestly couldn’t be any easier.

    I feel a lot of vegan baking recipes can be over-complicated but these cookies just use basic ingredients with no fancy steps.

    All you need to do is combine all of the ingredients and mix them together to form a cookie dough.

    The most important step is to scoop the dough into balls and then chill – do not skip this step.

    If you do, your cookies will most likely spread and morph into one giant cookie monster.

    A great tasting cookie monster nonetheless – but still, not quite what we are aiming for!

    Tips To Make The Best Cookies:

    Only bake them for the time written down:

    • The cookies will have a light brown / golden edge and will be soft in the middle. This will create that gooey and soft middle when you bite into the cookie.

    Tap the tray on the work top when theyre out of the oven:

    • When the cookies are first out of the oven, they will have risen ever so slightly. To get rid of the excess air, tap the tray on the worktop a few times. Youll see the cookies deflate and become like bakery style cookies, yum!

    Use a ice-cream scoop to form the cookie dough balls:

    • Using an ice creams scoop will help you make perfectly even cookies. You will also avoid getting your hands greasy will the sticky dough.

    Weight out the cookie dough before baking:

    • Make sure to weigh each cookie dough to 40g before placing on the baking try. This will ensure the entire batch of cookies are the same size and will bake even.

    Top the cookies with chocolate chips before and after baking:

    To ensure the maximum chocolateyness of these cookies, top the cookie dough with more chocolate chops before baking. If you want to go all out, as soon as the cookies come out of the oven, top them with chocolate chips. This will help them be gooey on top, and will simply create a more chocolate filled cookie. It also makes them look even more delicious too!

    How To Make Them

    The first step is to mix together the dry ingredients and set it aside.

    Next, using an electric hand mixer, beat the butter and sugar together until it’s light and fluffy, this will take about 3 minutes.

    After that, gradually add the flour mixture to the butter mixture and mix. I usually switch over to mixing by hand at this point.

    Continue mixing until everything has combined and you’re able to form a ball with the dough.

    The dough will be very soft and sticky, and you may think that something is wrong with it, this is how it’s supposed to be, so no need to worry!

    Flatten the dough into a disk, wrap tightly in plastic wrap, and place in the refrigerator for at least three hours and up to three days.

    Once the chilling time has passed, remove it from the refrigerator, unwrap and place the dough on a large piece of parchment paper. Place another piece of parchment paper on top and using a rolling pin, roll until the dough is ¼ of an inch thick.

    Cut into shapes, getting your shapes as close as possible to each other. Once done, use a spatula to transfer them to your baking sheet, then gather up the dough scraps, form them into a ball and repeat the rolling and cutting process.

    If the dough gets too warm at any point and it’s starting to stick to the parchment paper, refrigerate it for about 15 minutes so it gets a little chilled again.

    If you don’t plan on decorating them with icing, then now is the time to sprinkle them with sanding sugar.

    Roll 1 to 2 tablespoons worth of dough in your hands at a time to form the cookie dough balls. Place them on the prepared baking pans, then bake until the cookie edges are just starting to brown. Itâs ok if they feel too soft at first! Theyâll firm up as they cool.

    Sprinkle with coarse sea salt, if desired. Leave the cookies to cool completely on a wire rack, then dig in and enjoy!

    Sometimes online stores will offer a lower price. If nothing else, you can always chop up a chocolate bar to make your own chocolate chips!

    The one bowl recipe is easy to make using basic ingredients, with no almond flour or applesauce, and no coconut oil required.

    For the flour: Try the cookies with spelt flour, oat flour, or regular white all purpose flour. I have not tried using whole wheat flour so cant vouch for that substitution. Be sure to leave a comment with results if you do try.

    The fat source: Options that work include sunflower, coconut, or vegetable oil. Or sub a full fat vegan butter spread such as Melt Organic, Miyokos, or Earth Balance.

    For the sweetener: Feel free to experiment with different types of sugar or sugar free alternatives such as xylitol or granulated erythritol.

    You can also just use all of one type of sugar instead of two. The resulting cookies might be crunchy or spread more, or they might need more or less time in the oven, but edible baking experiments are the best kind of experiments!

    Freezing Unbaked Cookie Dough

    Luckily, this recipe already uses frozen dough from the start! All you have to do is mix up your dough, freeze the dough, make your 1 to 2 tablespoon-sized cookie scoops on a baking sheet lined with parchment. Freeze the unbaked mounds on the baking sheet until hard again, before transferring them to a Ziplock bag with the air squeezed out. When ready to bake, simply follow the normal baking instructions, give or take a minute or two of baking time.

    Frozen cookies and frozen chocolate chip cookie dough are best used within 3-4 months.

    You can prep the dough 2-3 days before baking and store it covered in the fridge. You can freeze unbaked cookie dough balls for up to 3 months in the freeze. Bring them to room temperature before rolling them in sugar and baking. To freeze baked cookies, allow them to freeze solid on a baking sheet before transferring them into a freezer bag or airtight container for up to 6 months. Thaw in the fridge overnight before bringing them to room temperature or warm them up in the microwave to make them soft and chewy again or pop them in the oven at 250° to warm.

    How To Make Vegan Lemon Cookies

    First, you will need to gather these 8 ingredients :

    • superfine blanched almond flour
    • fresh lemon juice and zest
    • vanilla extract

    To a large bowl, add the oat flour, almond flour, tapioca starch, salt, baking powder and coconut sugar. Whisk very well to ensure there are no lumps.

    Add the syrup, lemon juice and vanilla and stir well for 1-2 minutes until it becomes thick and sticky.

    Place the batter in the fridge to chill for about an hour. This is necessary so that the batter fluffs up and creates soft, cloud-like cookies, as you see in the photos.

    After the batter has chilled, preheat an oven to 350°F and line a sheet pan with parchment paper. Using a 1 1/2 inch cookie scooper, drop 12 cookie scoops onto the pan. They should hold their shape as shown above. Do not flatten the cookies.

The best flour to use is Great Value Gluten-Free All-Purpose Flour! Yes, Walmart’s own brand is actually one of the best certified gluten-free flours for baking cookies. It’s not heavy and doesn’t contain legumes like Bob’s Red Mill, nor does it contain any nuts. This flour is light and rice-based, containing brown rice flour, rice flour, sweet rice flour, tapioca starch, sorghum flour, cornstarch, potato starch, and xanthan gum.

    These cookies do not contain almond flour or coconut flour. So you don’t have to worry about nuts, grittiness, or any off-putting tastes. These cookies are also oat-free so you don’t have to worry about finding certified gluten-free oats!
