A Guide To The Numbers

Flours are measured in terms of their protein and ash content. Understanding what these numbers mean will help you to determine which flour is best for your uses.


Protein indicates the amount of gluten available in the flour. Gluten is the substance that develops when the protein, which occurs naturally in wheat flour, is combined with liquid. Because gluten is able to stretch elastically, it is desirable to have a higher gluten flour for yeast-raised products, which have doughs that are stretched extensively, including pizza, most breads, and bagels. For pie crusts, cookies, and pastry to be short and crumbly, a lower protein flour is better. Protein levels range from 7% in pastry and cake flours to as high as 15% in high-gluten bread flour.


Ash measures the amount of mineral content that remains in the flour after milling. A whole wheat flour which contains all of the wheat berry or kernel will have a high ash of 1.50 or so. When the wheat kernel is milled, the heart of the kernel, or endosperm, makes up the majority of a white flour. The further away the miller mills from the endosperm, the higher the ash content. Generally speaking, a lower ash content is preferable, since it means that the flour is the purest and closer to the heart of the wheat kernel. King Arthur Flour has been our flour of choice ever since we first started baking. Its a reliable product of consistently high-quality, and definitely cant be blamed for any of our baking flops! We are so happy to see the company come out with a line of gluten-free flours and mixes so more people can benefit from their excellent products!

King Arthurs new gluten-free multi-purpose flour is the one product that has us the most intrigued and excited. Its a blend of white rice flour, brown rice flour, tapioca starch, and potato starch. The product description says that it can be used in place of the flours called for in any gluten-free recipe and most regular baking recipes . Having this pre-mixed multi-purpose flour would take a lot of the guess work out of doing it ourselves and add a level of consistency to our gluten-free baking.

Theyre also offering seven flour mixes, including ones for chocolate cake, brownies, muffins, pancakes, cookies, pizza crust, and bread. Recipes for using these mixes in a whole variety of baked goods are available through their website.

How To Use It

Pizza Dough New York Style Recipe

Giusto, King Arthur Sir Lancelot, Gold Medal All Trumps

  • About 4 cups Warm Water

    About 2.5 tablespoons 40gr Sugar

    About 1 tablespoon 10gr Oil

01 – Put the Hot Water in a pan.

02 – Add Yeast and stir gently and let sit for 5 to 10 minutes, or until the yeast activates by turning into a foam on top of the water.

03 – Now, add the Salt, the Sugar and Oil.

04 – Gradually add in the Flour as you stir the mixture simultaneously. You know you have added enough Flour when the mixture becomes too thick to stir.

05 – Knead the dough.

06 – Take the Dough out of the bowl and put it on a clean and well-floured surface .

07 – Gather the Dough into a pile and begin pressing it together. Press the heels of your hands firmly into the Dough, pushing forward slightly.

08 – Fold the far edge of the Dough upwards, towards you, and press it into the middle of the ball. Rotate it slightly, too. Repeat this press-fold-turn sequence for the duration of the kneading process.

09 – Let the Dough rise up for 3 hour at room temperature or 8 hours in the refrigerator.

10 – Place on a floured counter and flour the top of the Dough.

11 – Flatten the Dough with your hand until about 1.5cm / 0.5in thick and 40~50cm / 15~20in in diameter.

12 – Pick up the disk of Dough, and pinch the dough about 1.5cm / 0.5in from the edge. Try and stretch as you pinch, repeat this all around the edge. When the disk of Dough has been stretched enough to start to be floppy, proceed to tossing.

Chocolate Chip Oatmeal Cookies

Recipe Instructions:
  • Preheat the oven to 325°F. Line several cookie sheets with parchment paper, or lightly grease with non-stick vegetable oil spray.
  • Beat together the butter and sugars until smooth. Once smooth, beat in the egg, egg yolk, and vanilla.
  • Whisk together the flour, oats, baking powder, baking soda, and salt, and add to the butter mixture in the bowl.
  • Mix until everything is thoroughly incorporated. Scrape the bottom and sides of the bowl, and mix briefly.
  • Stir in the chocolate chips.
  • Scoop the dough, using a ¼ cup measuring scoop, onto the prepared baking sheets, leaving about 1 1/2″ to 2″ between cookies.
  • Bake the cookies for 12 to 17 minutes, until they’re a light golden brown, with slightly darker edges. Their middles may still look a tiny bit shiny that’s OK, they’ll continue to bake as they cool on the pan.
  • Remove the cookies from the oven, and as soon as they’re set enough to handle, transfer them to racks to cool.

    • 1 cup unsalted butter, at room temperature
    • 1 cup light brown sugar + 1/2 cup granulated sugar
    • 1 large egg + 1 large egg yolk, at room temperature
    • 1 tablespoon vanilla extract

    • 1 cup quick-cooking or old-fashioned oats
    • 1 teaspoon each of baking powder, baking soda, and kosher salt
    • 3 cups semisweet chocolate chips
