Combine The Dry Ingredients

Oat or Buckwheat flour: You can use either 100 grams of gluten-free oat flour or buckwheat flour for this recipe. If you use oat flour, make sure the product is labeled gluten free as not all oats are gluten free. Buckwheat flour does not contain wheat despite the fact that it has wheat in its name. Buckwheat is neither a grain or grass rather, its a plant closely related to rhubarb. Both flours will add earthy tones and fiber to your bread.

Sugar: Youll need just 30 grams sugar, which is about 2 tbsp. The sugar will feed the yeast and aid in helping your bread rise, but you will not taste its sweetness in the final bread.

Salt: Use about 1 tsp of Kosher salt as a flavor enhancer. You wont taste the salt in the final bread either.

Who Needs To Eat Gluten

Gluten-free bread is the better option if you have celiac disease or a wheat allergy or intolerance. If you dont fall into any of these categories, then there is no reason you should avoid gluten.

If you notice any digestive problems after consuming wheat products or gluten-containing foods, speak to your doctor and they can test you for celiac disease. If the result comes back negative, I recommend being referred to a dietitian to see if it could be an intolerance.

There is a group of carbohydrates in wheat products called fructans that can sometimes cause gastrointestinal discomfort, especially when consumed in large quantities.

Its possible you are intolerant to this carbohydrate, and if this is the case, its probably best to avoid wheat and opt for gluten-free products.

What Gluten Free Bread Options Aren’t Included

There will always be a special place in my heart for Udi’s Gluten Free Bread since it was one of the very first. And their larger loaves of bread are still the king of a properly sized piece of bread that isn’t more melba toast than sandwich bread.

But they changed their formula, and although my children love the taste, I’m going mad trying to separate the slices of some of the loaves. I think that the real difficulty occurs when the loaf has been frozen, defrosted and then frozen again before purchase.

There’s some sort of fusing that goes on and you simply can’t separate the slices whether you try it defrosted or frozen. So Udi’s is just not on this list. You also won’t find some of the more obscure brands that don’t seem to be intended for mass market distribution.

Specialty types of bread like cinnamon raisin and shaped loaves, baguettes, and pizzas also aren’t included. This is a post about sliced sandwich breads.

What Gluten Free Bread Options Arent Included

And aside from gluten, there are some other not-so-healthy ingredients youll want to avoid. Steer clear of refined, processed, and artificial ingredients, as well as excess sugar or sodium. The healthiest breads have a short, simple ingredient list with whole food ingredients. Ideally, youll want to choose gluten-free breads that use natural sweeteners , and healthy grain alternatives .

This brand tops our list with an average rank of 3.3 out of 9 breads and an average star rating of 3.4. The best and worst of this bread is the flavor. It tended to work in its favor more than against it, and the texture was soft but well structured.

While it ranked 5th on our list for bread size, the slices are pretty small, which is a consideration. Other flavors from the same brand are quite a bit larger. Id use this bread for sandwiches, french toast, and other sweet applications. But it would work well for toast as well.

Preheat Oven And Dutch Oven

Once the dough has poofed up and nearly doubled in size, youre ready to bake that beautiful gluten-free artisan bread.

Add your Dutch oven to your oven and set the oven temperature to 425º F. Allow the Dutch oven to warm up along with the oven. Do NOT add an empty Dutch oven to a hot oven. Allow the Dutch oven to come to temperature slowly with the oven as it preheats.

Please note that many Dutch oven manufacturers advise against heating an empty Dutch oven as it may crack. This is especially true of enameled Dutch ovens, which are at higher risk of cracking. I recognize the risk, and my Dutch oven hasnt cracked when I preheat it slowly with my oven.

Why I’m Reviewing Packaged Gluten Free Bread

If you’re on my email list, I asked you what your favorite brands are, and you poured your gluten-avoiding hearts out! I’ve been through many loaves of bread. If it was a total dud , I’m not reviewing it here.

My intention in publishing these reviews is not to stir up controversy, harm anyone’s business or even support anyone’s business to be honest. When I posted something on my Facebook page about how Udi’s bread is hard to separate, someone angrily accused me of endangering their business.

Clearly, that isn’t my purposebut I also have no obligation to pretend that reality isn’t what it is. My intention is simple. I want to help you, the consumer, spend your money wisely.

Packaged gluten free products are more expensive than conventional products, and always will be. The market for these products is smaller, and the ingredients are more expensive .

But we’ve come a long way since 2004 when my family first went gluten free. Back then, we ordered some bizarre gluten free packaged bread from Canada that not only couldn’t be eaten untoasted but lost its toast within minutes. And the cost was insane. Well, we’ve come a long, long way since then.

Everyone knows that I love baking fresh homemade gluten free bread. My children adore it when they have it for their school lunches, and my husband loves it because it’s cheaper.

That isn’t the stuff really of my dreams, but it is of theirs. But it’s just not realistic.

Allow The Dough To Rise

Scoop up the dough with your hands and gently form it into a nice round shape before placing it in a bowl to rise. You can do this by tucking the sides of the dough down and forming a rounded boule-shape by hand. Youll notice the dough stays together well, and even has some stretch to it, which is the exact texture were looking for.

Add some rice flour to your bowl to prevent the dough from sticking, then place the dough inside the bowl.

Cover the bowl with a clean dish towel and place it in a warm spot in your house to rise. I use a seedling warming mat to ensure my yeast breads and pastries rise well. I also use it to keep my homemade kombucha at a warm temperature as my house tends to get very cold. I highly recommend investing in one. You could alternatively proof the bread in your oven or just find a warm spot and hope for the best. You can also use the proofing setting on your oven to ensure a warm rise environment.

If the conditions are just right, your bread is ready to bake in about two hours. You want it to rise and poof up, and it may even nearly double in size. Youll notice little bubbles throughout the dough, a good sign of a perfect rise.

Troubleshooting the Rise: If the bread doesnt rise, or rises very little, two issues could be at play.

First, your house could be too cold and the yeast wont rise as quickly in a cold house. Give the bread an additional 2-4 hours to rise.
