These gluten free English muffins are light and fluffy, toast up with crisp edges, and have tons of nooks and crannies.

Once these muffins are cooled and fork-split, they freeze perfectly. And you can even finish them in a toaster oven instead of a traditional oven so your kitchen stays cool. Clearly, theyre a breakfast home run.

I started out thinking I was making gluten free English crumpetsthose cousins of gluten free English muffins that remind me of sturdier pancakes that are cooked on one side only, until bubbles break through the surface.

I started with the recipe for gluten free English Muffins from page 118 of Gluten Free on a Shoestring Bakes Bread , and went from there.

The difference between the dough for crumpets and the dough for English muffins is mostly one of hydration percentages. Crumpet dough is more like pancake batter than any bread dough.

English muffin dough seems kind of like how pre-gluten-free-bread-revolutiongluten free bread doughvery, very wet .

So whats the difference between the English muffins from GFOAS Bakes Breadand these super fluffy English muffins? A few things, but its also mostly a matter of hydration.

I wont bore you with more of the details. I hear the devil is in there anyway.

How To Make Gluten Free English Muffins

You really wont believe how incredibly easy it is to make these English muffins! Theres no kneading of the dough after initial mixing, and theres no second rise. Take the dough straight from the fridge and scoop it into your skillet . In less than 20 minutes youll have freshly baked English muffins!

Mix the dough in a stand mixer OR with a handheld mixer. This is such a loose high-hydration dough that it can even be mixed with a spoon by hand . Let the dough rise in a warm-draft free area for two hours or until doubled in size. It will be very puffy and filled with holes. Refrigerate the dough for at least 4 hours.

Heat an electric skillet to 250 degrees F . Melt a couple tablespoons of butter in skillet and place pre-greased muffin rings in skillet. Sprinkle bottoms with gluten free cornmeal and spoon dough into molds. Sprinkle tops with cornmeal. Cover with lid of electric skillet or tight-fitting lid and bake for about 7-8 minutes.

Remove cover, carefully flip rings and muffins over and bake for another 7-8 minutes. You can divide and add the other 1 tablespoon of butter over the tops of the muffins before you flip them if youd like, but its not necessary.

Remove the cover and carefully remove the rings from the muffins using tongs. They should slide right out if you sprayed them with cooking spray before baking. Replace lid and continue to bake for another couple of minutes.

Theyre ridiculously easy. Just mix up the dough , set it to rise for about 30 minutes.

Youll need English muffin rings to pour the dough into. One-inch rings cut from empty aluminum cans work just fine, if you dont have a set of actual made-for-English-muffins rings.

Mix in the salt and baking powder right before filling English muffin rings and letting them cook. Finish them in the oven or the toaster oven and let them cool.

How I Reformulated This Recipe

This bread is different than the original recipe in that it does require two rises. Dont worry, though. The second one takes no time at all because its jump started by adding the baking soda at that time. Instead of adding the baking soda at the beginning of the recipe, its added at the end. After the first rise, dissolve it in a very small amount of water and beat it into the risen dough. This will knock all of the air back out of the dough, but dont worry. Thats only temporary and the baking soda will activate from here, creating all those nooks and crannies.

Cover the dough again and let it rise once more. This rise, however, will take minutes instead of hours so watch it carefully. Depending on the warmth of your rising area, it could take as little as 20 minutes! Have your oven preheated because we want to get it into the oven as quickly as possible. While this is an extra step from my original recipe, its so minimal that youll be done from start to finish in under 3 hours!

Ingredients:

3 Tbsp sugar11 cups all-purpose flour

*Note: Instant yeast is sometimes called rapid rise or quick rise yeast, but its all the same thing. You can use regular active yeast instead, but if you do, you will need to let the dough rise twice

Directions:

Add the water, yeast, salt, sugar, and flour to a large bowl and stir just until combined.

As I mentioned previously, a Danish dough whisk works perfectly for this, because it incorporate ingredients more effectively in fewer strokes than other utensils.

Divide the dough evenly into four well-greased loaf pans, then let the dough rise until its slightly above the top.

Bake at 350°F for 35-45 minutes, or until the tops are a light golden brown color.

Right after you take the loaves out of the oven, turn them out of the pans, place them on a cooling rack, and brush butter onto the top of each one. Allow the bread to cool completely before slicing.

When youre ready to eat, good luck trying to decide what to put on it! -) I like mine toasted with lots of butter and jam , paired with a mug of creamy hot chocolate. Yum!
