For the past decade or so we have been adding and combining gums, starches, and other non-gluten containing flours to try and get an edible end product, but its not enough for your bread to just taste half-way decent, it has to also be good for your body. Simply being gluten free is not good enough we can do better, and we need to demand that gluten free bread brands also improve on the nutritionally quality of the food they produce.

When it comes to choosing a whole grain gluten free flour there are actually a lot of options to choose from, and that have been used for centuries before wheat became a staple flour around the world.

    The other great thing about this recipe is that its a little bit healthier than your normal banana breadits refined sugar free!

    Of course, if you dont love coconut sugar, you can go ahead and use regular sugar or a blend of regular sugar and brown sugar. You could also add chocolate chips if you wish. If you arent gluten free, this recipe should work just fine with regular flour or spelt flour. This recipe will not work with coconut flour.

    Just mix this batter in a bowl with a spoon no electric mixer required!

    Spoon the chocolate batter into your prepared loaf pan, and bake. Less than an hour later, youll have a delicious loaf of chocolate banana bread!

    This gluten free chocolate banana bread is great for breakfast, a snack, or a healthier dessert. If for some reason you have a lot of leftovers, I think that it would freeze very well.

If youre making a quickbread in a loaf pan , youre really best off using a recipe that was developed for the purpose. If its too wet, it will burn before it bakes all the way through. If its too dry, well, itll be dry. But good news! This gluten free honey bread is made to be baked as a loaf.* Its soft and tender, and lightly sweet. The perfect tea cake for an afternoon snack, if you ask me.

    *Another favorite quickbread of mine is this Gluten Free Cranberry Bread. Try that one, too, if you havent already. Oh so good.

    It might seem strange to drizzle it with honey. I mean, its honey bread, right? But its just so nice. If you can, use a lighter-colored honey. I used wildflower honey, but I dont know enough about honey to know if thats consistently lighter in color or if I just got lucky.

    It bakes up nice and tall , with the most gorgeous golden brown color.

    Slice it thick, now. Be generous.

    And dont forget that extra drizzle. P.S. Its even better if you spread some warm butter on top and then drizzle the honey.

    Honey has a tendency to burn, so you really want the proportions to be right in this bread. Measure by weight, not volume!

    Will This Banana Bread Recipe Work With Almond Flour Or Oat Flour

    If youd like to add almond flour, you can use up to ¾ cup almond flour and another one cup gluten free flour blend. Almond flour may make this loaf a little bit heavier.

    If youd like to use oat flour, you can use up to ½ cup, with another 1 ¼ cup gluten free flour blend. Using more oat flour than that may result in a loaf thats crumbly and falling apart.

    Gluten Free Does Not Always Mean Healthy

    Let me make something clear, just because something is gluten-free does not mean it is “healthy”. While a gluten-free, or a limited gluten-containing diet may indeed be healthier for some people that does not mean that all gluten-free products are healthy for us.

    Gluten free bread is a perfect example of this, with most commercially produced gluten free bread brands being nutritionally poor, and filled with a variety of gums and starches that are far from healthy.     Create An Ideal Rising And Baking Environment

    An easy way to create a good environment for gluten-free bread to rise is to turn your oven to 200 F when it reaches this temperature, turn off the oven and place a shallow baking pan partially filled with hot water on one of the shelves. Lightly cover the loaf pan with a damp towel and place in the oven for 20 to 30 minutes or until the dough rises to the top of the loaf pan. This method really does speed up the time it takes for gluten-free bread to rise. Just be sure to carefully watch the process so that your bread does not rise over the top of the pan before baking.

    You can also try baking gluten-free bread in a lidded Pullman, also called pan de mie loaf pans. These pans have a lid that slides on the top of the pan. The closed baking environment encourages loaves to bake evenly, with excellent shape, texture, and moisture retention.

    How To Make Gluten

    Without gluten to hold everything together, gluten-free bread dough looks very different from traditional bread dough. Instead of forming a smooth dough ball, it looks like a thick, sticky cake batter.

    The easiest way to mix this thick dough is with a stand mixer. I use a KitchenAid mixer fitted with a flat paddle attachment. With gluten-free bread, you want to ditch the dough hook. It doesnt mix gluten-free bread well. The paddle attachment, in contrast, does a great job chugging through our dough. Mix on medium-high speed for about three minutes.

    If you dont own a stand mixer, worry not! You can use a handheld mixer for the job. Again, I like my KitchenAid hand mixer for this job. Ive found other mixers cant handle the dough. If fact, over the years, Ive had several readers tell me that they burnt out the motors of their handheld mixers while making gluten-free dough. Yikes!

    Mix the dough until its smooth. You dont want any dry flour hanging around the bottom of the bowl. Use a flexible spatula to clear around the little bump at the bottom of the KitchenAid mixer.

    If you dont want to invest in new pans, thats fine! Just know that when this bread is baked in a 9×5 inch pan, it wont rise as high because the pan is larger than the Chicago Metallic pan.

    No matter what pan you use, be sure to spray the pan with non-stick cooking spray before adding the dough.
