Whole Grain Gluten Free Flours

Gluten Free Honey Oat QUICK BREAD (great for sandwiches!) | Homemade Bread Recipe

For the past decade or so we have been adding and combining gums, starches, and other non-gluten containing flours to try and get an edible end product, but its not enough for your bread to just taste half-way decent, it has to also be good for your body. Simply being gluten free is not good enough we can do better, and we need to demand that gluten free bread brands also improve on the nutritionally quality of the food they produce.

When it comes to choosing a whole grain gluten free flour there are actually a lot of options to choose from, and that have been used for centuries before wheat became a staple flour around the world.

  • Oat Flour: Oat flour is naturally gluten free, however it has a high cross contamination rate with wheat flour , which is why it is important to purchase a certified gluten free brand that has been tested for cross contamination.

  • Millet: Packed with nutrition and flavor, millet has a similar structure to wheat and offers a sweet and savory flavor that makes it great for baking.

  • Buckwheat: While the name may be deceptive, buckwheat flour is actually gluten free and is a denser, stronger tasting flour that is great to use in baked goods particularly pancakes, bread, and waffles.

  • Teff Flour: Full of protein, teff is a flavorful gluten free flour that is native to Ethiopia and results in denser breads and baked goods.

In many countries, bee bread and other bee-derived products are implemented in apitherapy to support health in various ways.*

    • A Russian study questioned 150 Russian centenarians in the Caucasus region about their diet, age and occupation and found that most worked as beekeepers and nearly all of them regularly consumed honey enriched with pollen.*
    • Scientific research suggests that due to its nutrient-rich profile, bee bread may act as an antioxidant, antimicrobial and anti-inflammatory.*
    • Moreover, bee bread may support intestinal flora, the digestive and immune systems, liver and prostate health, urinary health, fertility and libido, triglyceride and cholesterol levels within normal ranges, cardiovascular health, concentration and memory, nervous and endocrine system function and healthy energy levels.*
    • Plus, bee bread may support the skin and is associated with increased longevity.*
    • According to the American Apitherapy Society, bee bread has been used by Olympic athletes to support their immune systems, boost performance and improve their crucial recovery time after performance.*
    • Early Egyptians and the ancient Chinese believed bee bread to be a rejuvenator and balm.* Even the ancient Vikings are said to have taken honeycomb and bee bread with them on their long voyages.*

Bee bread is also a naturally-gluten free food and is appropriate for Paleo diets and other dietary protocols that focus on ancestral eating.*

Eggs are natural leaveners that help boost the rise and volume of bread. Eggs also add moisture, flavor, and protein to gluten-free bread recipes. If you select a gluten-free bread recipe that includes eggs, you have a better chance that the resulting bread will have good color, more volume, and softer texture. Eggs also help to extend the shelf-life of gluten-free bread, which can become stale more quickly than wheat bread.

    Use A Digital Thermometer

If you are going to be baking bread often, you probably want to buy one of these priceless, yet inexpensive gadgets. A digital or “instant-read” thermometer will save you lots of frustration because it lets you easily measure the internal temperature of your bread. When the internal temperature is approximately 206 F it’s done. No more gooey or dried out loaves.

You can take most recipes for cake and make them as cupcakes. And vice versa. But theres something about a loaf shape, you know? If youre making a quickbread in a loaf pan , youre really best off using a recipe that was developed for the purpose. If its too wet, it will burn before it bakes all the way through. If its too dry, well, itll be dry. But good news! This gluten free honey bread is made to be baked as a loaf.* Its soft and tender, and lightly sweet. The perfect tea cake for an afternoon snack, if you ask me.

*Another favorite quickbread of mine is this Gluten Free Cranberry Bread. Try that one, too, if you havent already. Oh so good.

It might seem strange to drizzle it with honey. I mean, its honey bread, right? But its just so nice. If you can, use a lighter-colored honey. I used wildflower honey, but I dont know enough about honey to know if thats consistently lighter in color or if I just got lucky.

It bakes up nice and tall , with the most gorgeous golden brown color.

Slice it thick, now. Be generous.

And dont forget that extra drizzle. P.S. Its even better if you spread some warm butter on top and then drizzle the honey.

Honey has a tendency to burn, so you really want the proportions to be right in this bread. Measure by weight, not volume!

The Growing Pains Of Being Gluten Free

    Gluten Free Honey Oat Bread

From nothing to something. Youve heard these timeless stories all too often, and its rare to find one that gives you all the feels worth repeating, however the trials, growing pains, and triumphs of BeeFree, a gluten, dairy, grain, and junk free snack company, is now 8 years in the making and is finally on the cusp of being a nationally recognized brand.

Think back to 2010, to Bieber Fever, Hannah Montana, and the iPhone 4, a young mom was desperately working in the kitchen trying to create something for her son with autism to eat at wits end, and fed up. Meet Jen: mother, wife, advocate, and soon to be entrepreneur.

63,445 batches later, Jen finally had what she thought didnt taste like cardboard, in the form of mac and cheese, chicken nuggets, and cake the ideal diet of a 7-year old. She remembers saying to herself, I think I might really have something here, and with the encouragement from her autism support group, BeeFree Gluten Free was born.

After years of perfecting recipes, enduring the growing pains, and with the sole intention of sharing the success shed found with going gluten free with other moms and families going through the same struggles, Jens products were starting to generate interest from local grocers. In 2012 BeeFree became grocery bound, and now can be found in over 850 stores in almost 30 states from the Midwest to the west coast.

Will This Banana Bread Recipe Work With Almond Flour Or Oat Flour

If youd like to add almond flour, you can use up to ¾ cup almond flour and another one cup gluten free flour blend. Almond flour may make this loaf a little bit heavier.

If youd like to use oat flour, you can use up to ½ cup, with another 1 ¼ cup gluten free flour blend. Using more oat flour than that may result in a loaf thats crumbly and falling apart.

Gluten Free Does Not Always Mean Healthy

Let me make something clear, just because something is gluten-free does not mean it is “healthy”. While a gluten-free, or a limited gluten-containing diet may indeed be healthier for some people that does not mean that all gluten-free products are healthy for us.

Gluten free bread is a perfect example of this, with most commercially produced gluten free bread brands being nutritionally poor, and filled with a variety of gums and starches that are far from healthy. In fact, I would argue that when it comes to things like baked goods, often times the gluten-free products are filled with more additives, and are more processed than the original option they are trying to emulate, and bread is the perfect example.

Is Dried Yeast Same As Instant Yeast

Gluten Free Banana Bread With Chocolate Chunks.

Active dry yeast and instant yeast both help leaven bread and provide an airy, light texture, but they do so in slightly different ways and theres one major difference in how you use them: Active dry yeast needs to be dissolved in water before using, while instant yeast can be mixed right into dry ingredients.

Create An Ideal Rising And Baking Environment

An easy way to create a good environment for gluten-free bread to rise is to turn your oven to 200 F when it reaches this temperature, turn off the oven and place a shallow baking pan partially filled with hot water on one of the shelves. Lightly cover the loaf pan with a damp towel and place in the oven for 20 to 30 minutes or until the dough rises to the top of the loaf pan. This method really does speed up the time it takes for gluten-free bread to rise. Just be sure to carefully watch the process so that your bread does not rise over the top of the pan before baking.

You can also try baking gluten-free bread in a lidded Pullman, also called pan de mie loaf pans. These pans have a lid that slides on the top of the pan. The closed baking environment encourages loaves to bake evenly, with excellent shape, texture, and moisture retention.

    How To Make Gluten

Without gluten to hold everything together, gluten-free bread dough looks very different from traditional bread dough. Instead of forming a smooth dough ball, it looks like a thick, sticky cake batter.

The easiest way to mix this thick dough is with a stand mixer. I use a KitchenAid mixer fitted with a flat paddle attachment. With gluten-free bread, you want to ditch the dough hook. It doesnt mix gluten-free bread well. The paddle attachment, in contrast, does a great job chugging through our dough. Mix on medium-high speed for about three minutes.

If you dont own a stand mixer, worry not! You can use a handheld mixer for the job. Again, I like my KitchenAid hand mixer for this job. Ive found other mixers cant handle the dough. If fact, over the years, Ive had several readers tell me that they burnt out the motors of their handheld mixers while making gluten-free dough. Yikes!

Mix the dough until its smooth. You dont want any dry flour hanging around the bottom of the bowl. Use a flexible spatula to clear around the little bump at the bottom of the KitchenAid mixer.

If you dont want to invest in new pans, thats fine! Just know that when this bread is baked in a 9×5 inch pan, it wont rise as high because the pan is larger than the Chicago Metallic pan.

No matter what pan you use, be sure to spray the pan with non-stick cooking spray before adding the dough.

The Best Whole Grain Gluten Free Bread

Easy Gluten Free Sourdough Bread | Vegan

This homemade gluten free whole grain bread is filled with whole grains, healthy fats, and can be made at home without the help of a bread maker. It is also simple enough to make that a new cook or someone new to gluten free baking I think will be more than capable of handling this recipe.

If you need to follow a gluten free diet then you know that finding a gluten free bread that is as delicious and holds up as well as regular bread is pretty tough to come by. Ever since I found out I had celiac disease and needed to go gluten free I have been on the search for a truly delicious whole grain gluten free oat bread, and until now I have for the most part come up empty-handed.

While it is wonderful that there are so many gluten free options for people who need to be gluten free today, I also think that in many ways we have just replaced processed gluten-containing products, with other even more processed gluten free products that people for some reason think of as being “healthy”.
