How To Freeze Or Refrigerate Gluten

Vegan Dumplings with Easy Gluten-Free Wonton Wrappers

You can store your gluten-free dumpling wrappers in the fridge or freezer to pleat into potstickers or gyoza later. To store them for later, lightly dust each wrapper with tapioca starch before stacking them up.

Wrap the stack tightly in plastic wrap and store in a freezer-safe bag or airtight container. Lisa warns that you must wrap the stack in plastic wrap before putting in a bag or container or condensation will form and your wrappers will stick. Trust her.

Refrigerate for up to 2 days or freeze for up to a month. When you’re ready to use the dumpling wrappers, you must defrost and bring them to room temperature before folding or pleating them or they’ll crack. To speed up this process, I placed 4 to 6 wrappers on the surface to warm up for a couple minutes, replacing one each time I used one.

How To Use These Wrappers In Delicious Gluten Free Wonton Soup

I made a dead simple filling for my wontons in this soup .

Then, place about 1 teaspoon of filling in the center of each skin, moisten all 4 edges of each wonton skin with an egg wash , and close by joining two opposite corners of the skin, pressing out any air and sealing tightly.

Brush the top with more egg wash, and bring together both tips on the long side of the resulting triangle, overlapping them slightly and brushing with more egg wash to seal.

To make the soup, boil the wontons about 10 at a time in 4 cups boiling chicken stock, seasoned with soy sauce and chopped scallions, for about 4 minutes per batch . Remove the wontons with a strainer, divide among bowls, and wilt baby bok choy in the stock. Divide the soup among the bowls, and serve piping hot.

How To Fold Wonton Dumplings:

  • Brush off any excess flour from your work surface and lay one wonton wrapper on it.
  • At this point, your wrapper should be very thin and floppy. If if feels a bit too thick/stiff, give it another quick roll. If the wrapper is too thick, it might break while you fold it.
  • Then have a little pot of water ready on the side. Dip your finger in and wet the wrapper all around the edges. This will help everything stick together like glue.
  • Add a teaspoon of filling in the centre.
  • Fold in half, in a triangular shape, tucking the filling in .
  • Dip your fingers in water again and wet both edges.
  • Now fold both sides up along the filling .
  • Wet the two little tails slightly and cross them over, pinching them closed.
  • Set your wonton dumpling aside on a plate. Note: wrap the plate with cling film or place a slightly damp cloth/paper towel over them while you fold the rest .
  • NOTE: this is just one of the many ways you can fold them / how they are typically folded in wonton soup. Feel free to fold however you want.

    Step 1: Making the dumpling dough

    Start by whisking together flour and salt in a bowl. Then slowly pour in the hot water and stir with chopsticks or a fork until the liquid has been absorbed by the flour. Then knead all the dough pieces together with your hands and transfer the dough to a working surface.

    Now knead the dough for about 3-5 minutes until it is smooth and soft. Then form the dumpling dough into a ball, wrap it tightly in cling film and place it in the refrigerator for 30 minutes. However, you can also prepare the dough in advance and then leave it in the fridge overnight.

    Step 2: Roll out the Dumpling Dough

    After the chill time, divide the dough into two pieces, as this makes it easier to work with. Wrap one piece of dough with the foil again and put it back in the refrigerator to prevent it from drying out. Roll out the other piece of dough on a lightly floured working surface to be about 2 mm thin.

    Step 3: Cut out squares or rounds

    To make wonton wrappers, cut out squares , using a pizza cutter. To make gyoza wrapper, cut out round circles, using a glass or cookie cutter . Use any leftover dough to cut out more squares or circles. Then remove the second dough portion from the refrigerator and continue this process.

    Yes, these wrappers can be frozen, but you must work quickly and carefully.

    We want to avoid letting the wonton wrappers dry out, and we want to ensure that they do not stick together.

    So to freeze these, you should cut the dough into squares, and immediately layer each square between pieces of waxed paper, creating a stack of alternating wonton wrappers and squares of paper.

    Place the stack into a freezer bag or an airtight container, and freeze for up to 2 months.

    To use frozen gluten-free wonton wrappers, let them defrost in the refrigerator overnight in the same container so that no moisture is lost.

    How To Make Dumpling Wrappers

    I recommend using the metric measurements in grams for exact results.

    Step 1: Mix the dough

    • Combine all the dry dough ingredients in a bowl, then add the water , and mix thoroughly with a spoon waiting a few minutes until the dough isnt too hot to handle.
    • Knead the mixture into a smooth dough for around 1-2 minutes with your hands .
    • Add a little more water in the dough isnt pliable and smooth or a little more flour if its too sticky.

    Step 2: Divide the dough

    • Wrap the dough in cling film and chill it in the refrigerator for 30 minutes.
    • Then, divide it into four pieces, placing three back in the fridge , and rolling the remaining piece out into a rope shape. Divide the rope into 7-8 pieces.

    Step 3: Roll out the dumpling wrappers

    • Dust the counter with a little tapioca flour/cornstarch and flatten each piece with your hand to begin .
    • Roll out the dough with a rolling pin until it about 2 mm thin.

    A pasta machine would also work for even dough. Remember, gyoza wrappers are usually thinner than regular Chinese dumpling wrappers so feel free to adjust the thickness.

    • Use a round cutter or glass to cut the dough into round potsticker/gyoza wrappers OR cut out 3 1/4-inch/ 8x8cm squares for wonton wrappers. Dust each with a little cornflour/tapioca starch.

    Traditionally, the dough can be weighed out to even pieces and rolled into individual round wrappers without a cutter. However, this isnt a method Ive done enough to do confidently.

    The Ingredients In Gluten

    Gluten-Free Flour – Use an all-purpose flour that includes Xanthan gum. We suggest our gluten-free flour blend, but these should work with any blend that is rice flour based.

    Eggs – Let your eggs come to room temperature before making this wonton wrapper dough. Trust me, this little trick makes it so much easier to get a smooth gluten-free dough.

    Sea Salt – Just a bit to give the wrappers some flavor.

    Warm Water – This is what will moisten the flour and starches and bring everything together.

    Divide the dough into four, put aside three pieces and cover them with plastic wrap, misting lightly with water to keep moist.

    Before rolling out the wrappers, heat your oven, toaster oven or warming drawer to the keep warm setting . If you have an oven thermometer, use this to determine the temperature of your oven, If it gets above 225F turn it off, the residual heat of the oven should be sufficient.

    Knead or roll the first piece of dough on a surface sprinkled with tapioca starch to form as smooth a ball as possible. Carefully roll out the ball into a long rectangular shape, keeping the surface lightly floured to prevent sticking. Rolling out between two sheets of plastic wrap helps. The thinner its rolled without breaking or tearing, the better the wonton. Lift or turn the rolled out rectangle to ensure that it is not sticking to the surface, dust with more tapioca starch if needed. Cut the rectangle into squares about 3 ½ square.

    • 2 cups Cup4Cup Multipurpose flour – gluten free
    • ½ teaspoon Bob’s Red Mill Xanthan Gum – gluten free
    • ½ teaspoon salt
    • ¼ cup Bob’s Red Mill Potato Strach – gluten free
    • 2 large eggs, beaten
    • 10 to 12 tablespoons warm water
    • more flour for dusting
  • Combine the flour, xanthan gum, salt and potato starch in a large bowl. Make a well in the middle and add the eggs. Mix with a fork then add 1 tablespoon of water at a time until a sticky dough forms.
  • Flour a working surface and knead the dough then cut in half. Roll the dough using a rolling pin, making very thin sheets and dusting more flour if necessary. If the dough gets dry, sprinkle a little water. Use a 3½ inch cookie cutter. Sprinkle more flour to prevent them from sticking. If you are not using immediately, stack them in between parchment paper and place them in a ziploc bag. Refrigerate or freeze until ready to use. Makes about 25 to 30 wrappers.
