MORRISVILLE, N.C. The Whole Foods Market Gluten-Free Bakehouse, which provides gluten-free baked foods for Whole Foods southern region market, is scheduled to close on March 8, according to a Worker Adjustment and Retraining Notification filed with the North Carolina Department of Commerce.

The plant closing is expected to impact 102 workers.

Whole Foods Market was the first grocer to respond to the growing customer demand for gluten-free products when we opened our North Carolina Bakehouse nearly 20 years ago, Whole Foods Market said. As the number of certified gluten-free suppliers has rapidly expanded over the years, our reliance on the Bakehouse has diminished. We are working closely with all impacted team members and hope to place them in our nearby locations or in other roles within the company.

The Gluten-Free Bakehouse opened in 2004 after Lee Tobin, a Whole Foods Market employee with celiac disease, began experimenting with gluten-free baking on his own time, developing recipes. The facility opened after Mr. Tobin could no longer keep up with customer demand in the little dedicated bakery kitchen he initially established.

The Gluten-Free Bakehouse has an onsite testing lab, with every lot number of incoming ingredients and a sample of each finished product tested for the absence of gluten. The facilitys products are only available at Whole Foods Market stores in the United States and Canada. The products are shipped to the stores frozen.

Whole Foods Market Goes Gluten

More than 27 different gluten-free baked goods, including breads, cookies, pizzas and pies will be made at the renovated 8,000 square-foot bakehouse near Morrisville, North Carolina.

The move takes gluten-free goods a step closer to mainstream shopping aisles in the US, where many existing gluten-free products are only available on mail order, making it hard for consumers to access them easily.

“The new Whole Foods Market Gluten-Free Bakehouse will allow our stores to provide the widest selection of fresh gluten-free bakery items on the East Coast,” said Ken Mayer, regional president for Whole Foods Market.

The idea behind the separate bakehouse is to prevent cross-contamination between gluten-free grains and ordinary varieties, a policy already followed by other gluten-free specialists such as Canada-based Glutino.

A gluten-free diet is medically necessary for people with coeliac disease, a hereditary illness which is essentially an intolerance to the gluten protein chains found in common grains such as wheat, rye and barley.

Awareness of coeliac disease, also known as nontropical sprue and gluten intolerant enteropathy, has increased in recent years as research has shown more people may be affected than previously thought – something which is likely to see a growth in the market for gluten-free products.

The only problem, as Jones admits, is that gluten-free products “tend to be a little pricier because you use non-commodity ingredients to make them”.

Whole Foods Gluten Free Bakery Closing

The Whole Foods gluten free bakery in North Carolina is closing. This is sad news for those of us that love their salted caramel mousse cake, cheddar and chive biscuits, or have ever enjoyed their gluten free pies.

Whole Foods says its because third party gluten free bake houses have diminished the need for their own bakehouse. What was special about the Whole Foods bakehouse was that they tested every ingredient coming into the facility and tested every finished product to ensure the product was truly gluten free.

The reason this is sad is that the Whole Foods baked goods were unique in the gluten free world. They may have contained other allergens, like peanuts, tree nuts, or eggs. A lot of other baked goods in the gluten free world try to eliminate all allergens hoping to appeal to a wider market. I get it. It is smart marketing. Removing all 8 of the top allergens just doesnt always satisfy the palate the way leaving something only gluten free would.

We were recently at Disney and I asked about dessert at Be Our Guest. They have French food there, so the chef that was talking to me about the allergy menu told me that they had plant based creme brulee.

I can see how the niche market of gluten free bakery product buyers might not be that profitable. Expanding to include all 8 allergens might be a great business decision. It just makes me sad that a perfectly good gluten free bakery has to go by the wayside.
