A thick, cinnamon filled crumb cake that is quick, easy to make, and gluten free!

I love coffee cakes and crumb cakes, but my favorite coffee cake takes a while to make, so I wanted a really quick option for those mornings I just want something to munch on while having a hot beverage.This was such a fun option because not only did it taste great, but because I used a Gluten Free Buttermilk Pancake Mix as my base for this cake, it is also gluten-free! Pretty great.

I had a lot of fun recipe testing for this one. My first version was too dry, and my second had too much cinnamon, but the final version was right on par for what I like. Keep in mind that I enjoy cinnamon, and so I may add more than you will want to if you arent as into cinnamon and cinnamon rolls as I am!

My idea for this crumb cake was to make it small enough that it would be just enough for one morning with my family. And to make it similar to a cinnamon roll in flavor, without the work. I think had I added a cream cheese frosting or glaze it would have been very cinnamon roll-like indeed. But truthfully I loved it as is, and figured my kids would do without the extra sugar!

Blueberry Lemon Coffee Cake

Preheat oven to 350°F. Lightly grease 8x8x2-inch pan.

STEP 2

For Coffee Cake: In medium bowl, blend together Krusteaz Wild Blueberry Muffin Mix, milk or water, eggs and lemon yogurt. Fold in blueberries. Spoon batter into prepared pan.

For Topping: In small bowl, mix together brown sugar and flour. Cut in butter with fork or pastry blender until mixture is crumbly. Sprinkle topping over batter.

  • 1/4 cup Krusteaz Blueberry Pancake Mix
  • 1/4 cup Brown Sugar
  • 2 Tsp. Cinnamon
  • 3 Tbs. Butter

*Note: If you prefer a larger amount of crumble on your coffee cake you may want to double your topping mixture. This set of ingredients only creates a light layer of crumble that just barely covers the top of the cake. Most of it will also “melt” into the batter while it bakes not giving you the true steusel look. I have made it both ways and my family prefers doubling the topping. We love our streusel topping on everything, and coffee cake is no different. Streusel makes everything taste better!

Can I Make This Coffee Cake Dairy

Yes! With a few simple swaps, you can easily make this coffee cake dairy-free. For the batter, you can use a neutral oil like coconut oil or avocado oil in place of the butter. For the crumble, you can use your favorite vegan butter substitute or coconut oil. These substitutes may change the crumble a bit. You are looking for a mixture that easily crumbles when you mix it together, but still has some large clumps.

I have found that the best way to measure all-purpose gluten-free flour is to use the spoon & level method. It is always best to use a dry measuring cup to measure flour, not glass measuring cups used for liquid.

Use a spoon to scoop the flour out of the bag into a measuring cup. After spooning the flour into a measuring cup, use the back of a knife to level the flour off of the measuring cup. I do this over a bowl to catch the flour.

Please do not use a measuring cup to scoop the flour directly out of the bag or you could get more flour than the recipe calls for.

Blueberry Coffee Cake | Sugar-free, Gluten-free, Vegan

Preheat oven to 350°F.

STEP 2

Place full pouch Krusteaz Cinnamon Crumb Cake Mix, 3/4 cup cinnamon topping, egg, sour cream and water in medium bowl. Stir until moistened. Fold in chopped apple. Spoon batter into lightly greased, 9-inch round pan. Sprinkle remaining cinnamon topping over batter. Top with pecans.

STEP 1

Next, you’ll grease a 9×9 pan, or line it with parchment paper, then pour in half the cake batter in and spread it evenly. To get the cinnamon sugar swirl, you’ll simply sprinkle sugar over top the batter, then sprinkle cinnamon on top of the sugar as evenly as possible. Next, pour the remaining cake batter into the pan and spread it evenly over top. Finally, sprinkle the cinnamon crumble on top of the cake in an even layer.

Gluten Free Blueberry Coffee Cake

Heat oven to 350°F. Place muffin liners in your muffin pan.

STEP 2

In a large mixing bowl, combine all ingredients except blueberries and stir until well combined. Stir in blueberries.

STEP 3

Place a spoonful of batter in the bottom of each muffin cup then spread with 1 heaping teaspoon of the cinnamon topping .
