Gluten Free Cream of Chicken Soup

Its hard to believe Thanksgiving and Christmas are just around the corner. The change of weather is a bummer, but damn it, Im a sucker for some good hand-cut turkey craft, and I have the most darling copper bells garland that I cant wait to hang on the- above our stockings when the time is right.

In the meantime, I make soups. Thick, creamy, canned cream of chicken and mushroom soups that are not only gluten-free but easy to prepare dairy-free, and made from 100% refrigerator and pantry staples. The holidays are filled with reasons to create casseroles the Green Bean Casserole and Party Potatoes Deluxe immediately spring to mind which usually call for store-bought canned creamy soups. A few issues though:

  • Store-bought condensed creamy soups are generally not gluten-free, and gluten-free soups can be hard to find / expensive.
  • They are PACKAGED with sodium. Ben needs to watch his sodium intake, and canned stuff is a tough no for him. There is 36% of your Daily Value of sodium in 1/2 cup of leading brand of cream of mushroom soup!
  • Even store-bought creamy condensed gluten-free soups have dairy in them, which is off limits for my Lincoln type allergic to dairy.
  • We are a mess.

    So were going to make it homemade because not only is making these popular creamy soups at home a breeze, its so much healthier and incredibly delicious. It was the first of dozens of dozens of spoonfuls of homemade cream of mushroom soup that I ate straight from the pot. You will rock.

    How Do You Make Easy Gluten

    Making this soup could not be more simple. You start by melting the butter in the chicken stock over medium heat.

    Next, you mix up your milk and cornstarch with a whisk. Add in the herbs and salts here as well. Pro Tip:Be sure to mix the cornstarch entirely into the milk so there are no clumps. I like to do a good scrape on the bottom to make sure none got stuck there. Then, once the broth and butter are boiling, you will slowly pour in the milk, cornstarch and herb mixture to thicken the soup and add flavor.

    Pro Tip:Dont forget to constantly whisk the soup as you pour in the milk and cornstarch mixture to avoid clumps.

    Can I Freeze Cream Of Chicken Soup

    You can absolutely freeze cream of chicken soup.

    In fact, you can make a double or triple batch and freeze it for later, which is a huge time saver.

    To freeze cream of chicken soup, pour the cooled gluten free chicken soup into freezer bags and squeeze out all the air.

    Lay flat and freeze until solid, and then you can position your frozen cream of chicken soup wherever youd like in the freezer.

    • Cook the pasta and broccoli. Bring a large pot of salted water to boil. Cook pasta until underdone by about 3 minutes it will continue to cook with the sauce later in the recipe. Two minutes before draining the pasta add the broccoli florets.
    • Cook chicken sausage.Heat olive oil in a large skillet. Add sliced chicken sausages in a single layer and cook until nicely caramelized. Flip and cook on the other side.

    Chicken Soup Seasoning And Flavors

    Regardless of which broth, stock or bone broth you use, the soup will be simmered with fresh herbs. The best herbs for a savory, wintery, comforting soup are parsley, thyme, sage and bay leaves.

    Great Value Cream of Chicken Soup is certified gluten free by the Beyond Celiac and is a good option if you don’t want to make your own soup and you happen to shop at Walmart for groceries.

    Mom’s Place Gluten Free Cream of Chicken Soup Mix is a powdered soup mix that you add milk to to create a soup.

    I suggest making your own homemade gluten free cream of chicken soup to use in recipes. The flavor will be much better and it only takes about 20 minutes to make from scratch.
