Best Flour For Making Pizza Dough

Flour for making bread or pizza is calibrated in different categories: 2, 1, 0, and 00. Each of these categories differs primarily in grinding and the quality of the flour itself.

The coarsest, hardest flour is 2, and the airiest, lightest as snow is 00. If we choose a lusher Chicago pizza, lush bread, or biscuit, then we need to choose flour 00. Pizza will turn out to be as airy as possible.

Many chefs and pizza makers mix different types of flour in order to get the best possible result. The fact is that even in large grindings there is a peculiarity: they are more taste-forming and they contain more gluten, which gives the dough and the dish a more elastic character. With such flour, pizza will not be crispy but will be softer and more viscous.

The smaller the grinding of flour, the crumblier, airy and soft the dough will be. If we use large grindings , it is better to use them in a certain proportion with flour 00 or 0. Because otherwise the dough will turn out slightly dark and will have a huge amount of gluten, which can ruin the taste of our dish.

Flours are measured in terms of their protein and ash content. Understanding what these numbers mean will help you to determine which flour is best for your uses.

Protein

Protein indicates the amount of gluten available in the flour. Gluten is the substance that develops when the protein, which occurs naturally in wheat flour, is combined with liquid. Because gluten is able to stretch elastically, it is desirable to have a higher gluten flour for yeast-raised products, which have doughs that are stretched extensively, including pizza, most breads, and bagels. For pie crusts, cookies, and pastry to be short and crumbly, a lower protein flour is better. Protein levels range from 7% in pastry and cake flours to as high as 15% in high-gluten bread flour.

Ash

Ash measures the amount of mineral content that remains in the flour after milling. A whole wheat flour which contains all of the wheat berry or kernel will have a high ash of 1.50 or so. When the wheat kernel is milled, the heart of the kernel, or endosperm, makes up the majority of a white flour. The further away the miller mills from the endosperm, the higher the ash content. Generally speaking, a lower ash content is preferable, since it means that the flour is the purest and closer to the heart of the wheat kernel. Ingredients

  • 2 cups pizza flour
  • 1/2 tablespoon dry yeast
  • 1/2 tablespoon salt
  • 1/2 tablespoon sugar
  • 2 tablespoons of olive oil
  • 2/3 cup of warm water

Sauce:

  • 2 tablespoons of olive oil
  • 1 minced garlic clove
  • 2 tomatoes. Dice them into small cubes
  • 1/2 tablespoon dried oregano
  • 1 tablespoon with a slice of tomato paste

Topping :

Grated mozzarella cheese, fresh mozzarella balls, basil, chopped mushrooms, spinach, olives, corn, onion rings, strips of zucchini or sweet potato.

Cooking method:

  • Dough: Mix all ingredients except water in a mixer bowl at low speed for a minute. Add all the water at once and mix until a dough ball is obtained. Knead an additional 5 minutes at medium speed.
  • Cover the bowl with cling film, cover with a towel , and let rise for about an hour and a half until the volume doubles.
  • Sauce: heat olive oil with garlic, add tomatoes, spices, and tomato paste and cook for 15 minutes until the sauce thickens.
  • Heat the oven to 240 degrees . Cover the pan with baking paper.
  • Take the pizza. Divide the dough in half and roll to the desired thickness. Distribute the sauce, sprinkle with cheese, and lay out the filling. Bake for 12-15 minutes until the edges are fried and the cheese begins to bubble.

  • Pour water into a large bowl , add yeast and sugar. This helps the yeast begin to work and mix. Pour three-quarters of the whole flour, mix so that the flour absorbs water.
  • Knead the dough. And only now we add salt, not earlier: salt shouldnt directly contact the yeast, it is not friendly with them and prevents their reproduction. Add olive oil and start kneading the dough, adding the remaining flour. Depending on which flour you take, you may need more or less. Feel your dough!     • About 4 cups Warm Water

      About 2.5 tablespoons 40gr Sugar

      About 1 tablespoon 10gr Oil

    01 Put the Hot Water in a pan.

    02 Add Yeast and stir gently and let sit for 5 to 10 minutes, or until the yeast activates by turning into a foam on top of the water.

    03 Now, add the Salt, the Sugar and Oil.

    04 Gradually add in the Flour as you stir the mixture simultaneously. You know you have added enough Flour when the mixture becomes too thick to stir.

    05 Knead the dough.

    06 Take the Dough out of the bowl and put it on a clean and well-floured surface .

    07 Gather the Dough into a pile and begin pressing it together. Press the heels of your hands firmly into the Dough, pushing forward slightly.

    12 Pick up the disk of Dough, and pinch the dough about 1.5cm / 0.5in from the edge. Try and stretch as you pinch, repeat this all around the edge. When the disk of Dough has been stretched enough to start to be floppy, proceed to tossing.
