What Makes This All Purpose Gluten Free Flour Blend The Best

When youre first starting out baking gluten-free, sometimes there are tears. Okay when I first started out baking gluten-free, there were a few tears. Okay, fine. Lots of tears. A great all-purpose gluten-free flour blend is salve for our psychic wounds.

Ive done extensive testing of various all purpose gluten free flour blends, and one of my two favorites is Cup4Cup. I did not care for the price, so I hacked it and created a D.I.Y. version of Cup4Cup.

I know many of you really enjoy that blend, and Im so glad. I just didnt find myself turning to it that often, though.

Then I realized that, if Im making the blend myself, Im the Boss of the Blend. And I think Cup4Cup is a bit too starchy.

It tends to make overly fluffy baked goods, and they sometimes dont brown as well as I would like. So guess what? I fixed it. And now I really love it. I think you will, too. Just be sure to use superfine rice flours.

What Flours Are In Homemade Gluten Free All Purpose Flour

In this case, there are three ingredients. And even though I never do this, Im telling you that theres one ingredient you have to haveno swapping in some junky gritty rice flour. Thats Authentic Foods Superfine Brown Rice Flour.

About $14 for a 3 pound bag, youll be able to mix several batches of flour with it and make enough cakes, biscuits and bread to leave you in a carb coma. Youll get your moneys worth out of it.

The other ingredients are potato starch and tapioca flour which you dont necessarily need to order. You should be able to find those in a health food store or in the gluten free aisle of your local grocery store. They are more affordable than the rice flour.

Then its just a matter of measuring and mixing them together and storing the concoction in an airtight container. Store your leftover gluten free all purpose flour ingredients in your freezer so theyll be fresh when you want to mix another batch.

How To Use A Gluten Free All Purpose Flour Blend

Unfortunately, the amounts of regular wheat flour and gluten free flours cant be swapped equally with reliable results. People do it, sure, but what comes out is sometimes a little sad. When you work with gluten free flours, you often have to adjust the amount of liquids in the recipe.

And with so many gluten free blends on the market , theres only one thing I can say for certain: youll get a different result with all of them.

This particular blend has been very reliable for me and Ive used it in some of my favorite traditional recipes with great success.

Do I Need Xanthan Gum In This Recipe

Depending on the recipe youre using, yes you may need it. Xanthan gum is a thickener used to help gluten free breads hold their shape. I do often add a bit of xanthan gum to my recipe if it calls for it.

If you are using a new recipe from someone other than me, check to see if they are recommending an all purpose flour blend that already has xanthan gum in it .
