How Corn Tortillas Are Made

The Best Gluten-Free Tortillas (No Corn Or Wheat & So Easy!)

Corn tortillas are traditionally made using nixtamalization. During this process, dried corn kernels are cooked and then soaked in an alkaline solution, which is commonly made from water and calcium hydroxide, or food-grade lime. This alkaline solution removes the indigestible part of the corn kernel and makes calcium and Vitamin B3 available. Then, the maize is drained and rinsed so the outer kernel cover, known as the pericarp, comes off. The maize is then milled to make it into a dough, which then becomes the base for making tortillas.

For commercially manufactured corn tortillas, after the corn is harvested and removed from the cob, one truck will bring millions of these kernels to the factory. They are put into big, steel cooking vats and are immersed in water. They are then steamed with powdered limestone, which helps the pericarp loosened. The corn soaks for 8 hours. Once the pericarp is removed, the corn is then grinded, and water and preservatives are added. This is then made into a corn mash, which is then sent through an extruder, and made into masa.

The corn dough is then made into a sheet where it is then cut into paper-thin round tortilla shapes. This process makes 84,000 tortillas per hour. The tortillas are then cooked, gradually baking each one in just 21 seconds. Then the tortillas are cooled and ready for packaging.

Is Masa Harina Always Gluten Free

Like oats, you need to source a certified gluten free variety of masa harina. Bob’s Red Mill at least used to make certified gluten free masa harina corn flour that is available in most larger grocery stores and is of perfectly good quality, but I don’t think they continue to sell their gluten free variety.

Instead, I often order certified gluten free masa harina from Nuts.com. Maseca brand masa harina is actually certified gluten free in the U.S., but it often seems to be stored on grocery store shelves with conventional gluten-containing flours, so be careful about cross-contamination right at the store.

Either way, stock up when you find a brand you trust. Once you start making your own gluten free corn tortillas, it’s hard to go back to the store-bought ones. And once you’re comfortable working with masa harina, I really recommend trying your hand at pupusas.

Why Are My Gluten

One of the most common questions we get is why our gluten-free corn tortillas are falling apart. There are several possible reasons why this might happen.

  • The masa was not kneaded enough and is too crumbly.
  • The masa was not hydrated properly and is too dry.
  • The tortillas were not cooked long enough and are too soft.

What Isn’t Included In This List

Unlike when I reviewed the best packaged gluten free flour tortillas, none of the brands of corn tortillas that I tried in preparation of this best-of list were truly awful. Corn tortillas have been around for a long, long time, and have been perfected by many major brands. Many of those brands were likely always gluten free, and are just now advertising their product as gluten free to capture our attention.

One glaring omission from this list is Vista Hermosa brand corn tortillas. I have heard how great they are but had the hardest time locating them.

The Vista Hermosa website isn’t very helpful in locating individual products as opposed to stores that simply carry their brand . I finally contacted them through their website after searching at the two Whole Foods stores within driving distance.

Vista Hermosa was able to explain that their corn tortilla wrap products at Whole Foods are usually displayed separately, next to the avocados in the produce section. They even emailed me a photo of the display, so I know they’re there. If I purchase and try them, I will update this post with my review.

Form The Tortilla Dough:

  • In a bowl take the sourdough starter from the fridge, measure 3/4 cup and put the rest back. If yours is on the thinner side, add a bit of more flour , to thicken up. To that, add psyllium husk and the sweet potato mixture, mix well and let it rest covered for 10 minutes, to absorb the moisture.
  • Stick with gluten free sourdough starter for great flavor and texture. But if you dont have a starter, the second best options is mixing brown rice flour with warm water or plant based milk . The consistency will be similar to the starter.
  • When ready to cook, add the arrowroot starch , and baking powder your dough should look like a cookie dough. Be careful not to add too much flour or youll have a dough thats harder to roll and end up with dry tortillas.
  • Pre-heat your skillet on medium heat for 5-7 minutes.

Which Gluten Free Flour Blend Is Best For Gf Flour Tortillas

I highly recommend using Better Batter all purpose gluten free flour blend in this recipe, or our mock Better Batter DIY blend if you cant or dont want to buy Better Batter itself. That is the blend that has the best moisture balance and protein content to make these tortillas.

Assuming that you use an all purpose gluten free flour blend in this recipe thats dairy free and gluten free, this recipe makes tortillas that are vegan and gluten free. If you use Cup4Cup gluten free flour, a high starch blend, you will probably need more water or your dough will be crumbly.
